Punjena riba (Stuffed fish)

Sastojci: 8 manja komada ribe (saran, stuka, pastrmka, skusa, dorado, zander, sterlet), 2 sargarepe, 200g brokolija, 4 kriske limuna, svež bosiljak i ruzmarin, 6 cena belog luka, 100ml maslinovog ulja, 200g pirinca, 4 paradajza, so, biber.


Priprema:

1. Beli luk oljustiti i sitno iseckati. Paradajz i sargarepu oljustiti i iseci na kockice. Limun iseci na kolutove. Pripremiti brokoli. 

2. Pirinac potopiti u vodu na 30 minuta. Isprati u 4 do pet voda. Ocediti.


3. Pirinač staviti u serpu , dodati vodu, so, biber i list lovora i pustiti da prokljuca. Dodati 30ml maslinovog ulja, smanjiti temperaturu na srednju i kuvati 15 minuta.

4. U serpu dodati vodu toliko da prekrije brokoli i kuvati 10 minuta na srednjoj temperaturi (4). Skloniti sa sporeta i isprati hladnom vodom. Iseci na manje komade.

5. Pomesati pirinac, brokoli, sargarepu, paradajz i beli luk. 

6. Staviti jedno parce ribe i na njega staviti malo fila od pirinca i povrca. Preko staviti limun, bosiljak i ruzmarin i poklopiti drugim parcetom ribe. Preliti sa malo maslinovog ulja. Uviti u papir za pecenje.

7. Ponoviti sa ostalim komadima ribe.

8. Staviti paketice ribe u pleh i peci u prethodno zagrejanoj rerni na 220 C oko 25 do 30 minuta.


Ingredients: 8 small pieces of fish (common carp, pike, trout, mackerel, dorado, zander, sterlet), 2 carrots, 200g of broccoli, 4 slices of lemon, fresh basil and rosemary, 6 cloves of garlic, 100ml of olive oil, 200g of rice, 4 tomatoes, salt, pepper.


Preparation:

1. Peel and finely chop the garlic. Peel the tomatoes and carrots and cut them into cubes. Cut the lemon into rings. Prepare the broccoli.

2. Soak the rice in water for 30 minutes. Rinse with 4 to 5 water. Drain.

3. Put the rice in a pot, add water, salt, pepper and a bay leaf and let it boil. Add 30ml of olive oil, reduce the temperature to medium and cook for 15 minutes.

4. Add enough water to cover the broccoli and cook for 10 minutes at a medium temperature (4). Remove from heat and rinse with cold water. Cut into smaller pieces.

5. Mix rice, broccoli, carrots, tomatoes and garlic.

6. Put one piece of fish and put some rice and vegetable filling on it. Put lemon, basil and rosemary on top and cover with another piece of fish. Drizzle with a little olive oil. Wrap in baking paper.

7. Repeat with other pieces of fish.

8. Put the fish packets in a tray and bake in a preheated oven at 220 C for about 25 to 30 minutes.
