Sendvic sa salatom od crnog pasulja (Sandwich with black bean salad)

Rucak

Sastojci: 6 parceta razanog hleba, 3x 55g crnog pasulja + 3x 1/2 sargarepe + 3x komad korena celera, 3x 1/2 korena persuna, 3x 1 kasika vegan manjoneza, 3x 1/2 kasicice mediteranskog zacina, 3x prstohvat soli, 3x 1 kasicica soka od limete ili limuna, 3 paradajza, 3x saka zelene salate (seckane).

Priprema:

1) Pasulj potopiti u vodu i ostaviti preko noci. Ocediti i isprati. Ocediti. Paradajz oljustiti i iseci na kolutove. Salatu oprati i iseckati na trake. Sargarepu, koren celera i koren paskanata oljustiti. Sargarepu i koren persuna iseci na kockice.

2) U serpu staviti pasulj, sipati vodu da predje preko pasulja (otprilike 5 cm) i dodati ocisceno povrce. Kuvati na srednjoj temperaturi (4) 2 sata povremeno dolivajuci vodu. Ocediti od tecnosti. Izvaditi koren celera.

3) Pasulj izgnjeciti viljuskom. Dodati majonez, mediteranski zacin, so i sok limete ili limuna. Promesati. Podeliti na 3 dela i cuvati u posebnim cinijama u frizideru. Takodje, u posebne cinije staviti paradajz i zelenu salatu.

4) Na hleb staviti 1/3 salate, preko poredjati paradajz i listove zelene salate.

Lunch

Ingredients: 6 slices of wholemeal bread, 3x 55g black beans + 3x 1/2 carrots + 3x a piece of celery root, 3x 1/2 parsley root, 3x 1 tablespoon vegan mayonnaise, 3x 1/2 teaspoon mediterranean spice, 3x pinch salt, 3x 1 tablespoon lime or lemon juice, 3 tomatoes, 3x lettuce (chopped).

Preparation:

1) Soak the beans in water and leave overnight. Drain and rinse. Drain. Peel a tomato and cut it into rings. Wash the salad and cut it into strips. Peel carrots, celery and parsley root. Carrots and parsley root cut into cubes.

2) Put the beans in a pot, pour water over the beans (approximately 5 cm) and add the cleaned vegetables. Cook over medium heat (4) for 2 hours, occasionally adding water. Drain the liquid. Remove the celery root.

3) Mash beans with a fork. Add mayonnaise, mediterranean spice, salt and the juice of lime or lemon. Stir. Divide into 3 parts and store in separate bowls in the refrigerator. Also, put tomatoes and lettuce in separate bowls.

4) Put 1/3 of the salad on the bread, arrange the tomatoes and lettuceover it.
