Sastojci: 1 šaka sveže mente (oko 20–30 g listova), 150 ml jake rakije (min. 40%) ili votke.
Priprema:
1. Operi mentu.
2. Potpuno je osuši (vlaga može pokvariti ekstrakt).
3. Listove blago izgnječi prstima ili tučkom da puste aromu.
4. Stavi u staklenu teglu i prelij alkoholom da budu potpuno potopljeni.
5. Zatvori i drži na tamnom mestu 2–4 nedelje.
6. Povremeno protresi*.
7. Procedi kroz gazu ili finu cediljku i sipaj u tamnu bočicu.
Trajnost: 1 godina i duže.
Koristi se po kap ili dve jer je jak.
Napomena za protresanje tegle
Kod alkoholnog ekstrakta mente nije potrebno često protresanje.
Dovoljno je:
- jednom dnevno lagano protresti prvih 7–10 dana
- nakon toga možeš protresati svaka 2–3 dana
Nema potrebe za više puta dnevno. Alkohol već sam izvlači etarska ulja iz listova, a protresanje samo pomaže da se sadržaj ravnomerno potapa i da se oslobodi više arome.
Važno je:
- da su listovi potpuno potopljeni
- da nema vlage u tegli
- da stoji na tamnom i umereno toplom mestu
Ako koristiš domaću rakiju (min. 40%), ekstrakt će imati blažu aromu rakije.
Ako koristiš votku, dobićeš neutralniji ukus — što je često bolje za kolače i bombone.
Saveti za pravljenje alkoholnog ekstrakta mente
(best for cakes and candies)
Ingredients: 1 handful of fresh mint (about 20–30 g of leaves), 150 ml of strong brandy (min. 40%) or vodka.
Preparation:
1. Wash mint leaves.
2. Dry it completely (moisture can spoil the extract).
3. Crush the leaves slightly with your fingers or pestle to release the aroma.
4. Place in a glass jar and cover with alcohol so that they are completely submerged.
5. Close and keep in a dark place for 2-4 weeks.
6. Shake occasionally*.
7. Strain through gauze or a fine strainer and pour into a dark bottle.
Shelf life: 1 year and longer.
Use a drop or two as it is strong.
Note for shaking the jar
Alcoholic mint extract does not require frequent shaking.
It is enough:
- shake gently once a day for the first 7-10 days
- after that you can shake every 2-3 days
- No need for multiple times a day. The alcohol already extracts the essential oils from the leaves on its own, and shaking just helps the contents soak in evenly and release more aroma.
It is important:
- that the leaves are completely submerged
- that there is no moisture in the jar
- to stand in a dark and moderately warm place
If you use homemade brandy (min. 40%), the extract will have a mild brandy aroma.
If you use vodka, you'll get a more neutral flavor — which is often better for cakes and candies.
