Breakfast for hypothyroidism.
Crunchy toast with creamy cashew spread and sweet roasted peppers is a simple, delicious and completely plant-based meal. The combination of healthy fats, fiber and rich taste makes it a great choice for breakfast, snack or light dinner.
Ingredients: 2 slices of gluten-free bread, 3 tablespoons of cashew cream, 1 roasted red pepper, 1 tablespoon of olive oil, a pinch of salt, a few drops of lemon juice (optional), a pinch of fresh parsley (optional, finely chopped).
Preparation:
1. Peel the roasted pepper if not already and cut it into strips.
2. Toast the gluten-free bread until it becomes crispy.
3. Spread the cashew cream on the toast.
4. Add roasted pepper on top.
5. Drizzle with olive oil and add salt.
6. Add lemon juice and parsley (if using).
Suggestion:
You can add:
- Boiled egg for more protein.
- Tuna or roast chicken if you want a more filling meal and are not vegan.
- Sprinkle with pumpkin or sesame seeds for extra minerals.
Note:
It is only important that you take the medicine for hypothyroidism (if you use it) according to the doctor's recommendation, usually on an empty stomach, and meals with a higher amount of fiber, calcium or iron not immediately after the medicine.

Hrskavi tost sa kremastim namazom od indijskog oraha i slatkom pečenom paprikom predstavlja jednostavan, ukusan i potpuno biljni obrok. Kombinacija zdravih masti, vlakana i bogatog ukusa čini ga odličnim izborom za doručak, užinu ili laganu večeru.
Sastojci: 2 kriške bezglutenskog hleba, 3 kašike krema od indijskog oraha, 1 pecena crvena paprika, 1 kašika maslinovog ulja, prstohvat soli, nekoliko kapi soka od limuna (opciono), prstohvat lista svežeg peršuna (opciono, sitno seckanog).
Priprema
1. Pečenu papriku oljušti ako već nije i iseci je na trake.
2. Tostiraj bezglutenski hleb dok ne postane hrskav.
3. Premaži tost kremom od indijskog oraha.
4. Preko dodaj pečenu papriku.
5. Prelij maslinovim uljem i dodaj so.
6. Dodaj sok od limuna i peršun (ako koristiš).
Predlozi
Možeš dodati:
- Kuvano jaje za više proteina.
- Tunjevinu ili pečenu piletinu ako želiš zasitniji obrok i nisi vegan.
- Posuti semenkama bundeve ili susama za dodatne minerale.
Napomena:
Važno je samo da lek za hipotireozu (ako ga koristiš) uzimaš prema preporuci lekara, obično na prazan stomak, a obroke sa većom količinom vlakana, kalcijuma ili gvožđa ne neposredno uz terapiju.
