Salata od jecma i leblebija s povrcem (Barley and chickpea salad with vegetables)

Sastojci: 200g jecam zrna (gersla), 200g leblebija (sirovih), 5 sargarepa, 2 paskanata, komad korena celera, 1 crni luk, 250g kuvane leblebije, ½ glavice brokolija, ½ glavice karfiola, preliv za povrce i leblebije.


Priprema:

1. Potopite leblebije u vodu i ostavite da stoji 12h. Posle 6h promenite vodu. Mozete cuvati u frizideru. Isprati i ocediti. Potopiti gerslu (jecam zrno) u vodu i ostaviti 8h. Isprati u 2 do 3 vode i ocediti. Oljustiti sargarepu, crni luk, paskanat i celer i iseci na kolutove ili kockice. Pripremiti brokoli i karfiol.

2. U serpu sipati 800 ml vode i kad prokljuca smanjiti na srednju temperaturu (4), dodati gerslu i kuvati od 45 do 60 minuta dok se zrna otvore. Ako je voda isparila  dodati jos vode.


3. Kuvano jecam zrno - gerslu poklopite i ostavite 10 minuta da odstoji.

4. Pomesati povrće i leblebije i preliti prelivom. 

5. Sipati u pleh i peci u prethodno zagrejanoj rerni na 180 C 15 do 25 minuta.

6. Pomesati gerslu - jecam zrno, pečeno povrće i leblebije.


Ingredients: 200g of barley, 200g of chickpeas (raw), 5 carrots, 2 parsnips, piece of celery root, 1 onion, 250g of cooked chickpeas, ½ head of broccoli, ½ head of cauliflower, dressing for vegetables and chickpeas.


Preparation:

1. Soak the chickpeas in water and let it stand for 12 hours. After 6 hours, change the water. You can store in the refrigerator. Rinse and drain. Soak gersla (yet grain) in water and leave for 8 hours. Rinse in 2 to 3 cups of water and drain. Peel carrots, parsnips, celery root and onion. Cut into cubes or circles. Prepare broccoli and cauliflower.

2. Pour 800ml of water into a pot and when it boils, reduce to medium temperature (4), add barley grain and cook for 45 to 60 minutes until the grains open. If the water has evaporated, add more water.

3. Cover cooked barley and let it rest for 10 minutes.

4. Mix vegetables and chickpeas and cover with dressing.

5. Pour into a baking tray and bake in a preheated oven at 180 C for 15 to 25 minutes.

6. Mix barley grain, roasted vegetables and chickpeas.
