Ludo testo kiselo testo (Crazy dough sourdough)

 Sastojci: 1 kg mekog i glatkog brašna tip 400, 40 g svežeg kvasca, 1 kašičica šećera, 1 kašičica soli, 500 ml mleka (mlako), 200 ml jogurta (sobne temperature), 100 ml ulja, 2 jaja (blago umucena), 10g praška za pecivo.

Priprema

1. U 200 ml mlakog mleka dodajte izmrvljeni kvasac i kašičicu šećera. Promešajte i ostavite na toplom mestu 15 minuta dok se ne naraste.

2. U vangli prosejte brašno, prašak za pecivo i so.


3. U sredini napravite rupu i dodajte nadošli kvasac, preostalo mleko, jogurt, ulje i jaja.

4. Mešajte sastojke dok ne dobijete glatko i elastično testo. 

5. Oblikujte ga u loptu i premažite ga s malo ulja kako se ne bi stvorila korica.

6. Stavite ga u posudu s poklopcem.

7. Ostavite ga u frižideru najmanje 6 sata, a moze preko noći.

8. Izvaditi iz frizidera i ostavite je na sobnoj temperaturi 20 minuta.

9. Oblikujte peciva kiflice, pogačice, lepinje, pletenice, puzice, djevreke, stapice, perece i ostavite ih da narastu na toplom mestu oko 30 minuta.

10. Pecite u prethodno zagrejanoj rerni na 200 C dok ne dobiju zlatno-smeđu boju.


Ingredients: 1 kg of soft and smooth flour type 400, 40 g of fresh yeast, 1 teaspoon of sugar, 1 teaspoon of salt, 500 ml of milk (lukewarm), 200 ml of yoghurt (room temperature), 100 ml of oil, 2 eggs (lightly beaten), 10 g of baking powder.

Preparation:

1. Add crushed yeast and a teaspoon of sugar to 200 ml of lukewarm milk. Mix and leave in a warm place for 15 minutes until it rises.

2. Sift the flour, baking powder and salt in a bowl.

3. Make a hole in the middle and add the yeast, remaining milk, yogurt, oil and eggs.

4. Mix the ingredients until you get a smooth and elastic dough.

5. Shape it into a ball and coat it with a little oil to prevent a crust from forming.

6. Put it in a container with a lid.

7. Leave it in the refrigerator for at least 6 hours, or overnight.

8. Remove from the refrigerator and leave it at room temperature for 20 minutes.

9. Shape the pastries into rolls, scones, buns, braids, snails, bagels, sticks, pretzels and let them rise in a warm place for about 30 minutes.

10. Bake in a preheated oven at 200 C until golden brown.
