Kako konzervirati limun? (How to preserve a lemon?)

Sastojci: 4-5 limuna + sok od jednog limuna, morska so, prokuvana voda (ohladjena na sobnoj temperaturi), tegla od 1 kg.

Priprema:

0) Oprati limun. U serpu sipati vodu i pustiti da prokljuca. U cediljku staviti limun i preliti sa prokljucalom vodom. Preliti limun sa hladnom vodom sa cesme. Ostaviti da se kratko ohladi, desetak sekundi. Cetkicom za citruse izribati limun. Poredjati na papirni ubrus i ostaviti da se osusi ili obrisati papirnim ubrusom. 

1) Iseci limun na cetvrtine ali ne do kraja, otprilike do 3/4 limuna.

2) U svaki iseceni deo staviti po kasicicu soli. 

3) U teglu staviti 1 kasicicu soli. Staviti limun u teglu, isecenom stranom na dole. Pritisnuti rukama da spljostite limun i da sok izadje. Na vrh limuna staviti 1 kasicicu soli. Staviti drugi limun (na vrh prvog) isecenom stranom na dole i opet pritisnuti da izadje sok. Ponoviti postupak sa ostalim limunovima. Na zadnji limun staviti 1 kasicicu soli.

4) Dodati sok od limuna.

5) Preliti sa prokuvanom (i ohladjenom) vodom do vrha. Zatvoriti dobro.

6) Svakog dana, tokom 3 dana, promuckati teglu nekoliko puta u toku dana i okretati teglu naopako.

7) Staviti u frizider na 25 dana.

8) Cuvati u frizideru do 3 meseca.

9) Upotreba - ukloniti meso limuna (pulpu), a koru limuna dobro isprati od soli.

Ingredients: 4-5 lemons + juice of one lemon, sea salt, boiled water (cooled to room temperature), 1 kg jar.

Preparation:
0) Wash the lemon. Pour water into the pot and let it boil. Put a lemon in a strainer and pour over with boiling water. Pour lemon with cold tap water. Allow to cool briefly, about ten seconds. Scrub the lemon with a citrus brush. Arrange on a paper towel and allow to dry or wipe with a paper towel.
1) Cut the lemon into quarters but not to the end, about 3/4 of the lemon.
2) Put a teaspoon of salt in each cut part.
3) Put 1 teaspoon of salt in the jar. Put the lemon in a jar, cut side down. Press with your hands to flatten the lemon and let the juice come out. Put 1 teaspoon of salt on top of the lemon. Put another lemon (on top of the first one) with the cut side down and press again to get the juice. Repeat the process with the other lemons. Put 1 teaspoon of salt on the last lemon.
4) Add lemon juice.
5) Pour over boiled (and cooled) water to the top. Close well.
6) Every day, for 3 days, shake the jar several times during the day and turn the jar upside down.
7) Put in the fridge for 25 days.
8) Store in the refrigerator for up to 3 months.
9) Use - remove the flesh of the lemon (pulp), and rinse the lemon peel well from the salt.
