Cufte iz rerne (Meatballs in the oven)

Sastojci: 500 g mlevenog juneceg (goveđeg) mesa* (80% posnog), 1 veliko jaje, (umućeno), 40 g prezli ili prezli sa zacinima, 25 g parmezana (rendanog), 40 g crnog luka (sitno iseckanog) ili 2 kašičice crnog luka u prahu, 6 g belog luka (sitno iseckanog) ili 1 kašičica belog luka u prahu ili granulama, prstohvat nejodirane soli, prstohvat bibera, 2 kašike listova peršuna (sitno iseckanih) ili 2 kašičice sušenog peršuna.

Priprema:

1. U činiji pomešajte mleveno goveđe meso, jaje, prezle, parmezan, crni luk, beli luk, so, biber i listove peršuna. Mesite najmanje 10 minuta.

2. Obložite pleh papirom za pečenje. Poprskajte sprejom za pečenje koji se ne lepi ili lagano premažite sa malo ulja. Zagrejte rernu na 200°C (400°F).

Marokanske cufte (Moroccan meatballs)

Sastojci: 450 g mlevenog jagnjećeg mesa, ½ srednjeg crvenog luka (veoma sitno iseckanog), 2 čena belog luka (sitno iseckana), komad svežeg đumbira dužine 5 cm (2,5 inča) (oljuštenog i izrendanog), 40 g običnih prezli, 1 veliko jaje (dobro umućeno), šaka svežeg peršunovog lišća (sitno iseckanog), 2 kašike listova celera (sitno iseckanih), šaka svežeg nane (sitno iseckane), rendana kora dva limuna, 70 g pinjola ili oraha, 120 g feta sira (sitno izmrvljenog), 1 kašičica soli, 1 kašičica svežeg bibera (zgnječenog), ½ kašičice cimeta, 1 kašičica kardamoma (prepečenog i mlevenog) - videti napomene, maslinovo ulje za prženje, za sos - 90 g tahinija, sok od 1 limuna, ¾ kašičice soli, voda, za ukrašavanje - pinjoli ili orasi, seckani peršun ili nana.

Priprema:

1. U veliku posudu stavite jagnjetinu, crni luk, beli luk, đumbir, prezle, umućeno jaje, sveže začinsko bilje, koru limuna, pinjole ili orahe, feta sir, cimet, kardamom, so i biber. Sve pomešajte rukama.

2. Oblikujte ćufte veličine oraha.

Libanske cufte u sosu (Lebanese meatballs in sauce)

Sastojci: 250 g junećeg mlevenog mesa, 250 g jagnjeceg mlevenog mesa, 1 zumance, ½ glavice crnog luka (rendan na sitno), 1 kašika zatar začina, ½ kašičice baharat začina, ½ kašičice cimeta, ½ kasicice pimenta (mlevenog), 2 kašike lista svežeg peršuna (sitno seckanog), 1 kasika lista sveze nane (sitno seckana), 1 kasika maslinovog ulja, za sos - 250 ml jogurta, 35 g tahini, sok od ½ limuna, 1 cen belog Luka (mleven), so, za ukrasavanje -  pinjole, 1 kasika maslinovog ulja.

Priprema:
1. Pomešati junece mleveno meso, jagnjece mleveno meso, zacine, crni luk i 1 kasiku lista persuna. Zamesiti rukom dok se sve lepo ne sjedini.

Kuvane cufte od spanaca (Cooked spinach balls)

Sastojci: 500g spanaca, 250g starog hleba, 100g belog sira, 2 cena belog luka, glavica crnog luka, 3 kasike prezli, 30g margarina, prstohvat muskat oraha, 1 kasicica origana, 3 jaja, 150 ml mleka.

Priprema:
1) Hleb iseckati na kockice. Umutiti jaja sa mlekom. Crni i beli luk oljustiti i sitno iseckati.
2) Spanac blansirati. Ocediti i sitno iseckati.
3) Potopiti hleb u mesavinu jaja i mleka.
4) Na margarinu proprziti crni i beli luk oko 5 minuta. Dodati spanac. Skloniti sa sporeta i promesati. Dodati hleb, 50g izmrvljenog sira, muskat orah, origano, prezle, so. Sve dobro izmesati i navlazenim rukama formirati cufte.
5) Kuvati u slanoj kljucaloj vodi na tihoj vatri oko 8 minuta. Izvaditi i posuti sa 50g izmrvljenog sira. Preliti rastopljenim margarinom.


Ingredients: 500g of spinach, 250g of old bread, 100g of white cheese, 2 cloves of garlic, 1 onion, 3 tbsp breadcrumbs, 30g margarine, a pinch of nutmeg, 1 tablespoon of oregano, 3 eggs, 150 ml of milk.


Preparation:
1) Slice the bread into cubes. Whisk eggs with milk. Peel the onion and garlic and finely chop.
2) Blanch spinach. Drain and chop finely.
3) Dip the bread into the egg and milk mixture.
4) Fry the onion and garlic on the margarine for about 5 minutes. Add spinach. Remove from the stove and stir. Add bread, 50g of crushed cheese, nutmeg, oregano, breadcrumbs, salt. Mix everything well and form balls with moistened hands.
5) Boil in salted boiling water over low heat for about 8 minutes. Remove and sprinkle with 50g of crushed cheese. Topped with melted margarine.

Egipatske cufte od pasulja (Egyptian bean balls)

Sastojci: 400g belog pasulja, 1 crni luk, 2 cena belog luka, sok od jednog limuna, 2 kasike iseckanog lisca persuna ili korijandera, 1 kasicica kima u prahu, 1 kasicica seckanog korijandera, 1/2 kasicice aleve paprike, 1/2 kasicice kurkume, 1/2 kasicice praska za pecivo, susam, 50g brasna, jogurt, ulje za przenje.

Priprema:
1) Potopiti pasulj u vodu i ostaviti 12 sati. Ocediti. Staviti u blender i blendati da dobijete zrnastu masu.
2) Crni luk i beli luk oljustiti i sitno iseckati. Pomesati pasulj, crni luk, beli luk i persun ili korijander. Dodati kim, korijander, alevu papriku, kurkumu, prasak za pecivo, sok od limuna. Dobro promesati i ostaviti 15 minuta.
3) Uzimati po 2 kasike i praviti cufte, blago pritisnuti dlanovima.

Napomena: ako je suvise meko, dodati jos malo brasna i vode i ostaviti 15 minuta da odstoji.

4) Cufte posuti susamom i prziti u vrelom ulju. Staviti na papir da upije visak masnoce.
5) Posluziti uz jogurt i Egipatski hleb od jecma.


Ingredients: 400g white beans, 1 onion, 2 cloves garlic, juice of one lemon, 2 tablespoons chopped parsley leaves or coriander, 1 teaspoon cumin powder, 1 teaspoon chopped coriander, 1/2 teaspoon cayenne pepper, 1/2 tsp turmeric, 1/2 teaspoon baking powder, sesame seeds, 50g flour, yogurt, oil for frying.

Preparation:
1) Soak the beans in water and leave for 12 hours. Drain. Put in blender and blend to get the grain mass.
2) Onions and garlic peel and finely chop. Mix the beans, onion, garlic and parsley or coriander. Add cumin, coriander, red pepper, turmeric, baking powder, lemon juice. Mix well and leave for 15 minutes.
3) Take 2 tablespoons and make meatballs, gently press with palms.

Note: if it is too soft, add a little flour and water and leave for 15 minutes to rest.

4) Balls sprinkle with sesame seeds and fry in hot oil. Put on paper to absorb excess fat.
5) Serve with yogurt and Egyptian barley bread.

Izraelske cufte od leblebija (Israeli chickpea balls)

Sastojci: 250g leblebija, 1 glavica crnog luka, 1 cen belog luka, 100g brasna, 5g praska za pecivo, 1 kasicica kima (mlevenog), 1 kasicica korijandera (mlevenog), 1/2 kasicice aleve paprike, 2 kasike persuna (sitno seckanog), ulje.

Priprema:
1) Oprati leblebije i procediti. Preliti vodom i ostaviti da stoji 10-12 sati. Procediti.
2) Ocistiti crni luk i beli luk. Sitno iseckati.
3) Staviti u blender i izdrobiti. Dodati crni luk i beli luk, persun, kim, korijander, prasak za pecivo i alevu papriku i ponovo seckati.
4) Sipati u posudu i ostaviti u frizider 30 minuta.
5) Praviti pljosnate cufte, redjati na posluzavnik posut brasnom i ostaviti 20 minuta.
6) Cufte uvaljati u brasno i prziti u ulju dok ne porumene.

Ingredients: 250g chickpeas, 1 onion, 1 clove of garlic, 100g flour, 5g baking powder, 1 teaspoon cumin (ground), 1 teaspoon coriander (ground), 1/2 teaspoon cayenne pepper, 2 tablespoons parsley (finely chopped ), oil.

Preparation:
1) Wash and drain chickpeas. Pour water and leave to stand for 10-12 hours. Drain well.
2) Clean the onion and garlic. Finely chop.
3) Put in a blender and pulverize. Add onion and garlic, parsley, cumin, coriander, baking powder and cayenne pepper and again pulverize.
4) Pour into a bowl and leave in the refrigerator for 30 minutes.
5) Form flat balls, arrange on the plate sprinkled with flour and leave for 20 minutes.
6) Coat balls in flour and fry in oil until golden.

Cufte od karfiola u sosu od mesa (Cauliflower balls in meat sauce)

Sastojci: 1 glavica karfiola, 1-2 jaja, 1 kasika masti, 1 kasika prezli, za sos - 300g mlevenog mesa, 1 glavica crnog luka, 200ml soka od paradajza, 1 kasika brasna, 1 kasika persunovog lista, so po ukusu.

Priprema:
1) Karfiol skuvati, ocediti (vodu ostaviti sa strane) i sitno iseckati.
2) Belance odvojiti od zumanceta. Umutiti belance. Umutiti zumance sa mascu. Posoliti, dodati prezle i belanca. Dodati karfiol i praviti cufte i prziti u ulju. Staviti na papir da upije visak ulja.

Cufte od spanaca i sira (Meatless balls with spinach and cheese)


Sastojci: 600g spanaca, 300g sira (fete ili nekog drugog sira), 200g rendanog parmezana, 100g brasna, 3 jaja, ulje, so.

Priprema:
1) Ocistiti, oprati i skuvati spanac u vrijucoj slanoj vodi. Kuvati oko 10 minuta. Ocediti, ohladiti, iseckati i pomesati sa 100g parmezana i fetom. Dodati brasno, so (ako je potrebno), Izmesati i malo mesiti.
2) Rukama oblikovati cufte, spustati u vrijucu vodu, kuvati 1-2 minuta, vaditi i redjati u vatrostalnu ciniju, preliti uljem i posuti sa 100g parmezana. Kratko zapeci u rerni.
3) Sluziti uz meso i kiselo mleko.

Ingredients: 600g spinach, 300g cheese (feta or other cheese),  200g shredded Parmesan cheese, 100g flour, 3 eggs, oil, salt.

Preparation:
1) Clean, wash and cook spinach in boiling salted water. Cook about 10 minutes. Drai, cool, chop and mix with 100g parmesan and feta. Add flour, salt (if needed), mix and knead slightly.
2) Shape the meatballs by hand, place into boiling water, cook for 1-2 minutes, remove, and place in ovenproof dish, pour over oil and sprinkle with 100g Parmesan cheese. Bake short in the oven.
3) Serve with meat and sour milk.

Cufte u sosu od belog vina (Meatballs in a sauce of white wine)

Ingredients: meat balls - 500g minced meat, 1 egg, 1 onion, 3 cloves of garlic, parsley, salt, pepper, sauce - 2 tablespoons of flour, oil, 200ml white wine, 1 tablespoon mustard, parsley, salt, pepper . 
Preparation: 1. Finely chop parsley, garlic and onions. 2. In a bowl put meat, add parsley, onion, garlic, egg; add salt and pepper to taste and mix well.

Cufte (Meatballs)

Ingredients: 500g minced meat, 4 eggs, 1 onion, 1-2 cloves of garlic, salt, pepper, 4 tablespoons oil, 1 cup warm water, 4 tablespoons flour, 1/2 pack of baking powder (5g).

Preparation:
1. Mix baking powder with flour.
2. Finely chop onions and garlic.
3. Whisk the eggs.
