Hrskava turska pica lahmacun (Crispy turkish pizza lahmacun)

Sastojci: za testo - 500g mekog brašna, 3 kašičice instant suvog kvasca ili 34g svežeg kvasca, 2 kašičice šećera, 3g soli, 2 velika jaja, 250ml mleka punomasnog, 130ml maslinovog ulja ili 500g testa za picu (nepecenog), 1 crvena paprika, 1 crni luk, 2 čena belog luka, 2 kašike svežeg peršunovog lista, 300g mlevenog jagnjećeg ili mlevenog junećeg mesa, 1 kašičica paprike u prahu, 1 kašičica pimenta u prahu ili zamene za piment zacin, ½ kašičice mlevenog kima, ½ kašičice mlevenog cimeta, ½ kašičice paprike, ½ kašičice ljute paprike u prahu, ½ kašičice soli, 4 kašike paradajz paste ili 250 ml paradajz sosa, 2 kašike maslinovog ulja, za serviranje - kriške limuna.


1. Za testo - zagrejati mleko da bude mlako.

2. U solji ili ciniji pomesati mlako mleko, secer i kvasac. Ostaviti 15 minuta da nadodje na toplom mestu.


3. Pomesati brasno i so. Promesati. Dodati kvasac i zamesiti testo. Mesiti 7 do 8 minuta dok ne dobijete glatko i elastično testo. Ako koristite mikser mutiti dok se ne formira glatka lopta.

4. Posudu prekriti plastičnom folijom te ostavite 2 sata da testo naraste.

6. Testo prebaciti na lagano pobrašnjenu površinu, podeliti ga na 8 delova i oblikovati u loptice. 

7. Ponovno prekriti plastičnom folijom i ostavite 30 minuta da testo odmori.

8. Za fil - očistite papriku, crni luk i beli luk. Narežite papriku i crni luk na male kockice. Sitno isecite beli luk.

9. U mašinu za hranu dodajte crvenu papriku, crni luk, beli luk i peršun. Blendirati dok se usitni.

10. Dodajte mlevenu jagnjetinu ili junetinu. Dodajte sve začine i so, paradajz pastu i maslinovo ulje. Sada ponovo mešajte dok se dobro ne sjedini.

11. Pripremite dva pleha obložena papirom za pečenje.


12. Stavite loptu na pobrašnjenu površinu. Oklagijom razvaljajte testo u tanku elipsu prečnika oko 15-20 cm.

13. Stavite jedno testo za picu na jedan od pripremljenih pleha. Na testo sipajte 3–4 kašike fila i ravnomerno rasporedite preliv i ostavite 1,5 do 2 cm prostora na ivicama. Savijte ivice prema filu. Premazite ivice maslinovim uljem.

14. Pecite u zagrejanoj rerni na 230 C oko 5 do 7 minuta ili dok se testo i meso potpuno ne ispeku. Testo će biti malo hrskavo oko ivica.

15. Ponovite korake 13 i 14 sa preostalim testom i filom.

16. Pre serviranja iscedite malo limunovog soka odozgo.


Ingredients: for the dough - 500g soft flour, 3 kasicice instant dry yeast or 34g fresh yeast, 2 tsp sugar, 3g salt, 2 big eggs, 250ml milk full fat, 130ml olive oil or 500g pizza dough (uncooked), for filling - 1 red pepper, 1 onion, 2 garlic cloves, 2 tbsp fresh parsley leaves, 300g ground lamb or ground beef, 1 tsp paprika powder, 1 tsp ground allspice or substitute for allspice, ½ tsp ground cumin, ½ tsp ground cinnamon, ½ tsp cayenne pepper, ½ tsp salt, 4 tbsp tomato paste or 250ml of tomato sauce, 2 tbsp olive oil, for serving - lemon wedges.


Preparation:

1. For the dough - heat the milk until it is lukewarm.

2. Mix lukewarm milk, sugar and yeast in a bowl or bowl. Leave to rise for 15 minutes in a warm place.

3. Mix flour and salt. Stir. Add yeast and knead the dough. Knead for 7 to 8 minutes until you get a smooth and elastic dough. If using a mixer, beat until a smooth ball is formed.

4. Cover the bowl with plastic film and leave it for 2 hours for the dough to rise.

6. Transfer the dough to a lightly floured surface, divide it into 8 parts and form into balls.

7. Cover again with plastic film and leave the dough to rest for 30 minutes.


8. For the filling - clean pepper, onion and garlic. Cut pepper and onion into small cubes. Finely cut garlic.

9. In the food processor add red peppers, onion, garlic, and parsley. Blend a few times to chop. 

10. Add ground lamb or beef. Add all spices and salt, tomato paste and olive oil. Now blend again until well-combined.

11. Prepare two baking sheets lined with baking paper.


12. Place the ball on a floured surface. Using a rolling pin, roll dough out into a thin ellipse that's about 15-20cm in long diameter.

13. Place one pizza dough on one of the prepared pans. Spoon 3–4 tablespoons of filling onto dough and spread topping evenly to edges, leaving a 1.5 to 2cm space on the edges. Fold in the edges towards the filling. Cover the edges with olive oil.

14. Bake in a preheated oven on 230 C for about 5 to 7 minutes or until dough and meat are fully cooked. Dough will be a little crusty around the edges.

15. Repeat steps 13 and 14 with the remaining dough and the filling.

16. Before serving squeeze a little lemon juice on top.
