Sastojci: 1 srednji patlidžan (narezan na 1,25 cm debljine), 8 kapica pečuraka portobelo, 3 kašike maslinovog ulja, 2 avokada, 2 kašike svežeg limunovog soka, 1/4 kašičice paprike, 8 kriški hleba od celog zrna, (po želji lagano tostirano), humus, 40 g bebi rukole, 1 veći paradajz (isečen na tanke krugove), 1 krastavac (narezan na štapiće), 120 g klica brokolija ili 80 g klica rotkvice ili 150 g suncokreta seme, sol po ukusu.
Priprema:
1. Ispecite patlidžan.
2. Pečurke začinite uljem i solju. Pecite ih u plehu obloženom papirom za pečenje na 220 C 8 do 10 minuta.
3. Zgnječite avokado sa limunovim sokom, paprikom i prstohvatom soli.
4. Namažite 4 kriške tosta sa pire avokadom. Namažite 4 kriške hleba humusom.
5. Dodajte patlidžan, pečurke, rukolu, krastavac i klice brokolija ili rotkvica ili semenke suncokreta.
Ingredients: 1 medium eggplant (sliced in 1.25cm thickness), 8 portobello mushroom caps, 3 tbsp olive oil, 2 avocados, 2 tbsp fresh lemon juice, 1/4 tsp paprika,
8 slices whole-grain bread, (lightly toasted if desired), hummus, 40g baby arugula, 1 large tomato (sliced into thinly circles), 1 cucumber, (cut into sticks), 120g broccoli sprouts or 80g of radish sprouts or 150g sunflower seeds, salt to taste.
Preparation:
1. Bake eggplant.
2. Season mushrooms with oil and salt. Bake them in the baking pan covered with baking paper on 220 C 8 to 10 minutes.
3. Mash avocados with lemon juice, paprika and a pinch of salt.
4. Spread 4 slices of toast with mashed avocados. Spread 4 slices of bread with hummus.
5. Add eggplant, mushrooms, arugula, cucumber and broccoli or radish sprouts or sunflower seeds.
