Zele od jabuka (Apple jelly)

Sastojci: 1.6 kg jabuka (oljustenih, raznih vrsta),  2 L vode, 1 kg secera, 70ml soka od limuna, prstohvat soli.

Priprema:

1. Iseci jabuke na kocke.

2. Jabuke preliti vodom. Pustiti da prokljuca pa smanjiti na srednje visoku (5) i kuvati oko 40 minuta tj. dok omeksaju.


3. U serpu staviti sito a preko gazu i sipati jabuke sa sokom. Ostaviti da se ocedi bez pritiskanja. Kada se ohladi staviti u frizider i ostaviti preko noci. Jabuke ili pojesti ili iskoristiti u nekom drugom receptu.

4. U zamrzivac staviti manji tanjir.

5. U serpu sipati sok od jabuka i na srednje visoku (5) temperturu kuvati. Dodati sok od limuna i secer i mesati dok se ne otopi.

6. Skidati penu koja se pojavi na povrsini.

7. Smanjiti na srednju temperaturu (4) i krckati dok se tecnost ne prepolovi i zgusne, oko 40 d0 50 minuta.

8. Malu kolicinu staviti na tanjir i vratiti u zamrzivac da se potpuno ohladi oko 2 minuta. Kada provucete kasicicu i ako ostavlja nabore zele je gotov.

9. Dodati so i sve dobro izmesati. 

10. Sipati u tegle i ostaviti da se ohladi.

11. Cuvati u frizideru do 3 nedelje.

Ingredients: 1.6 kg of apples (peeled, various types), 2 L of water, 1 kg of sugar, 70 ml of lemon juice, a pinch of salt.

Preparation:

1. Cut the apples into cubes.

2. Pour water over the apples. Let it boil, then reduce to medium-high (5) and cook for about 40 minutes, i.e. until they soften.

3. Put a sieve in the pot and cheesecloth over it and pour apples with juice. Leave to drain without pressing. When it cools down, put it in the refrigerator and leave it overnight. Apples can either be eaten or used in another recipe.

4. Put a small plate in the freezer.

5. Pour apple juice into a pot and cook on a medium-high (5) temperature. Add lemon juice and sugar and mix until it dissolves.

6. Remove the foam that appears on the surface.

7. Reduce to medium temperature (4) and simmer until the liquid is reduced by half and thickens, about 40 to 50 minutes.

8. Place a small amount on a plate and return to the freezer to cool completely for about 2 minutes. When you pull the spoon through and it leaves wrinkles, it's done.

9. Add salt and mix everything well.

10. Pour into jars and leave to cool.

11. Store in the refrigerator for up to 3 weeks.
