Fusili makarone sa sparglama, pancetom i pekorinom (Fusilli macaroni with asparagus, pancetta and pecorino)

Sastojci: 250 g fusili makarona, 300 g špargli, 80 g dimljene pancete (snite), 1 jaje, 1 žumanac, 40 g pekorino kackavalja (rendan), 40 g parmezana (rendan), biber u zrnu, 3 kasike maslinovog ulja.

Priprema:

1. Ocistite spargle.

2. Dobro ih operite i ocedite.

3. U ciniji umutiti jaje i zumanac. Dodato mleveni biber, parmezan i pekorino kackavalje.

4. U tiganju, proprziti pancetu. Izvaditi i staviti na tanjir. Kad se ohladi izlomiti na komadice.

Sacuvati i tiganj i masnoce.

5. U serpu sipati vodu. Kad prokljuca, dodati fusili makarone. Kuvati 7 minuta na srednjoj temperaturi (4). Sacuvati malo vode za spargle.

6. U tiganj, stavite špargle. Dodati malo vode od makarona. Poklopite i kuvati nekoliko minuta. 

7. Dodati fusili makarone u tiganj, promesati i kuvati jos 3 do 4 minuta. Ako je potrebno dodati jos malo vode od makarona.

8. U ciniju sipati fusili makarone sa sparglama.

9. U tu ciniju sipati masu od jaja i kackavalja i brzo i energično promešati. 

Morate učiniti u ciniji jer bi dodavanjem jaja u tiganj dovelo do njihovog pečenja, sto ne zelite.

10. Pospite hrskavom pancetom.


Ingredients: 250 g fusilli macaroni, 300 g asparagus, 80 g of smoked pancetta (sliced), 1 egg, 1 egg yolk, 40 g of pecorino cheese (grated), 40 g of Parmesan (grated), peppercorns, 3 tablespoons of olive oil.

Preparation:

1. Clean the asparagus.

2. Wash them well and drain.

3. Beat egg and egg yolk in a bowl. Added ground pepper, parmesan cheese and pecorino cheese.

4. Fry the pancetta in a pan. Take out and put on a plate. When it cools down, break it into pieces.

Save both the pan and the fat.

5. Pour water into the bucket. When it boils, add fusilli macaroni. Cook for 7 minutes at medium temperature (4). Save some of the water for the asparagus.

6. Put the asparagus in the pan. Add a little macaroni water. Cover and cook for a few minutes.

7. Add the fusilli macaroni to the pan, stir and cook for another 3 to 4 minutes. If necessary, add a little more macaroni water.

8. Pour fusilli macaroni with asparagus into a zinnia.

9. Pour the egg and cheese mixture into that zinnia and mix quickly and energetically.

You have to do it in a zinnia because adding the eggs to the pan would cause them to cook, which you don't want.

. Sprinkle with crispy pancetta.
