Tortelini

- Male, punjene testenine u obliku prstena ili malog “prstena sa čvorom”.

- Tradicionalno potiču iz Emilije-Romanje u Italiji, naročito iz Bolonje i Modene.

- Punjenje: najčešće kombinacija mesa (svinjetina, šunka, kobasica), sira (najčešće rikota i parmezan), ili povrća.

- Prave se od tankog testa od brašna i jaja.

- Poslužuju se u supi (“in brodo”), sa kremastim sosovima, puterom i žalfijom ili sa paradajz sosom.

Ravioli

- Ravne kvadratne ili okrugle testenine, takođe punjene.

- Punjenje može biti slično tortelinima: meso, sir, spanać, pečurke, povrće.

- Obično se kuvaju i serviraju sa sosom, retko u supi.

Kako su nastale punjene testenine?

Tortelini 

Legenda kaže da oblik tortelina potiče od sunca i ženskog pupka. 😂 Da, zvuči čudno, ali tako ide priča:

- Kažu da je kuvar u Bolonji bio toliko očaran lepotom lokalne gostionicarke da je oblik punjenih testenina inspirisan njenim pupkom.

- Zato tortelini imaju mali prstenasti oblik sa uvijenim krajevima – “mali prstenčić”.

Naravno, ovo je više zabavna legenda, ali je ostalo i danas u obliku tortelina. Pored priče, oblik ima i praktičnu svrhu: mali prsten čuva punjenje i ravnomerno se kuva, naročito kada se služi u supi.

Ravioli

- Najstariji spisi o raviolima potiču još iz Srednjeg veka u Italiji.

- Legenda kaže da su nastali kao praktičan način da se iskoristi ostatak hrane: narezano meso, sir i povrće stavljalo se između dva lista testa.

- U početku su ih služili u supi, ali kako su recepti evoluirali, počeli su da se prže, peku ili služe sa sosom.

- Zanimljivo je da ime “ravioli” verovatno dolazi od reči “riavvolgere” što znači umotati, jer se nadev umotava u testo.

Torteloni

- Torteloni su “veći rođaci” tortelina.

- Nastali su iz želje da se napravi punija, bogatija verzija, sa više nadeva, često za praznike i specijalne prilike.

- Oblik je praktičan: veći otvor i veće punjenje omogućavaju raznovrsnije nadeve – sir, povrće, meso, pa čak i morski plodovi.

- Ime “torteloni” znači bukvalno “veliki tortelini”, a u nekim regijama se služe samo leti ili za svečane obroke.

Tortellini

- They are served in soup ("in brodo"), with creamy sauces, butter and sage or with tomato sauce.

Ravioli

- Flat square or round pasta, also filled.

- The filling can be similar to tortellini: meat, cheese, spinach, mushrooms, vegetables.

- They are usually cooked and served with sauce, rarely in soup.

- They are larger than tortellini and "flat", while tortellini are small and twisted into a ring.

Tortelloni

- Similar to tortellini, but bigger.

- The filling is cheese, vegetables, meat, sometimes seafood.

- Sometimes they are served baked in the oven or with richer creamy sauces

Key differences:

- Shape: tortellini are small ring-shaped "mini-doughnuts", ravioli are square or round, tortellini are large tortellini.

- Size: tortellini < tortelloni.

- Method of serving: tortellini often in soup, ravioli and tortelloni usually with sauce or baked.

How was the stuffed pasta created?

Tortellini

Legend has it that the shape of tortellini originates from the sun and a woman's navel. 😂 Yes, it sounds strange, but that's how the story goes:

- They say that the chef in Bologna was so enchanted by the beauty of the local innkeeper that the shape of the stuffed pasta was inspired by her navel.

- That's why tortellini have a small ring shape with twisted ends - "small ring".

Of course, this is more of a fun legend, but it remains today in the form of tortellini. In addition to the story, the shape also has a practical purpose: the small ring preserves the filling and cooks evenly, especially when served in soup.

Ravioli

- The oldest writings about ravioli date back to the Middle Ages in Italy.

- Legend says that they were created as a practical way to use up leftover food: sliced ​​meat, cheese and vegetables were placed between two sheets of dough.

- In the beginning, they were served in soup, but as the recipes evolved, they started to be fried, baked or served with sauce.

- It is interesting that the name "ravioli" probably comes from the word "riavvolgere" which means to wrap, because the filling is wrapped in dough.

Tortelloni

- Tortelloni are "bigger cousins" of tortellini.

- They were born from the desire to make a fuller, richer version, with more fillings, often for holidays and special occasions.

- The shape is practical: a larger opening and a larger filling allow for a variety of fillings – cheese, vegetables, meat, and even seafood.

- The name "tortelloni" literally means "big tortellini", and in some regions they are only served in summer or for festive meals.
