Sastojci: 250 ml balzamiko sirćeta, 2–3 kašike smeđeg šećera ili 2 kašike meda ili 1–2 kašike javorovog/agava sirupa, manji prstohvat soli, 1 kašičica gustina + malo hladne vode.
Priprema:
1. Sipajte balzamiko sirće u serpicu. Dodaj šećer ili med ili javorov sirup ili agava sirup. Pusti da proključa na srednjoj vatri (4).
2. Smanjiti vatru na nisku (2). Kuvajte 15–18 minuta, povremeno mešajuci.
3. Kada se prepolovi i postane sirupast, spremno je.
Dok se bude hladilo jos ce se zgusnuti.
3. Za jos gusci balzamiko krem - razmutiti gustin u hladnoj vodi.
4. Dodajte u poslednjih 2–3 minuta kuvanja i mešajte dok se ne sjedine i zgusne.
5. Sipati u čistu flašicu ili teglicu.
6. Može da stoji u frižideru do 15 dana.
Tipovi ukusa:
- Sa medom – mekši, slađi ukus
- Sa javorovim sirupom – karamelast, tamniji ton
- Sa mediteranskom notom – dodaj 1 grančicu ruzmarina tokom kuvanja
- Sa citrusom – dodaj malo narandžine kore pa izvadi pre kraja
Napomena: mozete napraviti balzamiko krem i bez dodataka zaslađivača.
Kako da koristite balzamiko krem uz konkretna jela?
1. Uz meso
- Piletina sa roštilja – par linija preko mesa nakon pečenja
- Ćuretina – odlično razbija suvoću
- Svinjski file ili svinjski vrat – dodaje slatko-kiseli kontrast
- Biftek – samo par kapi, podiže ukus bez prekrivanja
2. Uz ribu i morske plodove
- Losos pečen u rerni – par kapi na kraju pečenja
- Tuna stek – 1 kašičica preko gotovog mesa
- Škampi sa roštilja – četkicom premazati zadnjih 30 sekundi pečenja
3. Uz peceno povrće
- Pečena bundeva
- Pečeni paradajz, tikvice i patlidžan
- Grilovane pečurke
- Pečena cvekla – klasik u kombinaciji sa feta sirom
4. Uz sir
- Mocarela sir / kaprese salata (paradajz + bosiljak)
- Bri i kamembert
- Feta sir, kozji sir, parmezan sir
5. Uz salate
- Zelena salata sa piletinom
- Rukola + veganski parmezan + orasi
- Salata sa jagodama ili narom
6. Uz slatka jela
(odličan je i bez šećera u kombinaciji sa voćem)
- Palačinke
- Sladoled od vanile
- Jagode, maline i breskve
- Rikota sir ili grčki jogurt sa voćem
7. Za dekoraciju tanjira
Na mesu, ribi, slatkišima — za vizuelni efekat i blagi slatkasto-kiseli akcenat.
Ingredients: 250 ml of balsamic vinegar, 2–3 tablespoons of brown sugar or 2 tablespoons of honey or 1–2 tablespoons of maple/agave syrup, a small pinch of salt, 1 teaspoon of cornstarch + a little cold water.
Preparation:
1. Pour balsamic vinegar into a saucepan. Add sugar or honey or maple syrup or agave syrup. Bring to a boil over medium heat (4).
2. Reduce the heat to low (2). Cook for 15–18 minutes, stirring occasionally.
3. When it cuts in half and becomes syrupy, it's ready.
As it cools, it will thicken even more.
3. For more thick balsamic cream - stir the cornstarch in cold water.
4. Add cornstarch mixture in the last 2-3 minutes of cooking and stir until combined and thickened.
5. Pour into a clean bottle or jar.
6. It can be stored in the refrigerator for up to 15 days.
Types of flavors:
- With honey - softer, sweeter taste
- With maple syrup – caramel, darker tone
- With a Mediterranean note - add 1 sprig of rosemary during cooking
- With citrus - add some orange peel and remove before the end
Note: you can make balsamic cream without added sweeteners.
How to use balsamic cream with specific dishes?
1. With meat
- Grilled chicken - a couple of lines across the meat after grilling
- Turkey - perfectly breaks up dryness
- Pork tenderloin or pork neck – adds a sweet and sour contrast
- Beefsteak - just a few drops, boosts the flavor without covering it up
2. With fish and seafood
- Salmon baked in the oven - a few drops at the end of baking
- Tuna steak - 1 teaspoon over the finished meat
- Grilled shrimp - smear with a brush during the last 30 seconds of grilling
3. With roasted vegetables
- Baked pumpkin
- Roasted tomatoes, zucchini and eggplant
- Grilled mushrooms
- Baked beets - a classic in combination with feta cheese
4. With cheese
- Mozzarella cheese / caprese salad (tomato + basil)
- Brie and Camembert
- Feta cheese, goat cheese, parmesan cheese
5. With salads
- Lettuce with chicken
- Arugula + vegan parmesan + walnuts
- Salad with strawberries or pomegranate
6. With sweet dishes
(it's also great without sugar in combination with fruit)
- Crepes

- Strawberries, raspberries and peaches
- Ricotta cheese or Greek yogurt with fruit
7. For plate decoration
