Kazandibi karamelizovani mlecni puding s slatkom pavlakom (Kazandibi caramelised milk pudding with heavy cream)

Sastojci: 900ml mleka, 300ml slatke pavlake, 3 kašike pirinčanog brašna (pune) ili obicnog belog brasna, 1 kašika kukuruznog skroba tj. gustina (puna) i još ½ kašike, 150g šećera, 2 sitna komada mastike ili 1 ½ kašičice ekstrakta vanile.


Priprema:

1. Pomešajte mleko i slatku pavlaku u serpi.

2. Dodati pirinčano brašno, kukuruzni skrob, šećer i mastika gumu ili ekstrakt vanile i mešati dok ne dobijete glatku smesu.


3. Kuvatii krem na srednjoj vatri (4) dok se ne zgusne.

4. Sipati kremu u pleh koji se ne lepi.

5. Vratite pleh na šporet i ostavite na jakoj vatri dok se dno ne karamelizira.

6. Skloniti sa vatre i ostaviti na stranu dok se potpuno ne ohladi.

7. Isecite na pravougaonike. Preklopiti tako da karamelizovana strana bude i gore o dole.


Ingredients: 900ml milk, 300ml heavy cream, 3 tablespoons rice flour (spoonful) or white flour, 1 tbsp cornstarch spoonful) plus ½ tbsp more,

150g sugar, 2 tiny pieces of mastic gum or 1 ½ teaspoons of vanilla extract.


Preparation:

1. Mix the milk and heavy cream in a large saucepan.

2. Add the rice flour, cornstarch, sugar and mastic gum or vanilla extract and stir until you get a smooth mixture.

3. Cook the mixture over medium heat (4) until thickened.

4. Pour the cream into a non-stick pan.

5. Return the saucepan to the stove on high heat until the bottom is caramelised.

6. Remove from heat and set aside until completely cools down.

7. Cut into rectangles. Fold so that the caramelized side is up and down.
