Za široke testenine - taljatele.
Sastojci (2-3 porcije): 200 ml pavlake za kuvanje, 30 g putera, 1 manji čen belog luka (opciono, vrlo sitno seckan ili izgnječen), 40–50 g sitno rendanog parmezana (svezeg), sveže mleveni crni biber, prstohvat soli, 2–3 kašike vode od kuvanja testenine.
Priprema:
1. U širokom tiganju na tihoj vatri otopiti puter na srednjoj temperaturi (3).
2. Dodati beli luk i kratko zagrejati (10–15 sekundi), samo da zamiriše.
3. Sipati pavlaku za kuvanje, smanjiti na nisku temperaturu (2), lagano promešati i zagrevati dok ne počne blago da se zgušnjava (ne sme da provri).
4. Dodati parmezan i mešati dok se potpuno ne otopi i sos postane svilenkast.
5. Dodati malo vode od testenine da se sos poveže i dobije kremastu teksturu.
6. Začiniti biberom i po potrebi vrlo malo posoliti.
7. Skuvane taljatele Dodati direktno u sos i kratko promešati na vatri 30–60 sekundi da se oblože sosom.
8. Po želji dodati još malo parmezana prilikom serviranja.
Ovaj sos je blag, bogat i savršeno prijanja uz široke rezance poput taljatela.
For wide pasta - tagliatelle.
Ingredients (2-3 portions): 200 ml of cooking cream, 30 g of butter, 1 small clove of garlic (optional, very finely chopped or mashed), 40-50 g of finely grated Parmesan cheese (fresh), freshly ground black pepper, a pinch of salt, 2-3 tablespoons of pasta cooking water.
Preparation:
1. Melt the butter in a wide pan over low heat at a medium temperature (3).
2. Add garlic and heat briefly (10-15 seconds), just until fragrant.
3. Pour in the cooking cream, reduce to a low temperature (2), stir gently and heat until it begins to thicken slightly (it must not boil).
4. Add Parmesan cheese and stir until it melts completely and the sauce becomes silky.
5. Add a little pasta water to combine the sauce and get a creamy texture.
6. Season with pepper and, if necessary, add very little salt.
7. Add the cooked tagliatelle directly to the sauce and briefly stir on the heat for 30-60 seconds to coat them with the sauce.
8. If desired, add a little more parmesan when serving.
This sauce is mild, rich and goes perfectly with wide pasta like tagliatelle.
