Vocni parfe sa grckim jogurtom (Fruit parfait with greek yogurt)

Sastojci: 4 kajsije (na kockice), 2 breskve (na kockice), 500ml grckog jogurta, 3 kasike meda, 1 kasika cia semenki, 150g muslija.

Priprema:

1) U ciniju staviti grcki jogurt i musli. Ostaviti da stoji 2 sata.

2) Dodati kajsije i breskve i promesati.

Torta od kajsija (Apricot cake)

Sastojci: biskvit, za krem - 5 kajsija, 350ml slatke pavlake, 50g secera, 250g kisele pavlake, 4 lista zelatina, 2 kasike ruma, kajsije.

Priprema:

1) Pripremiti biskvit (ispeci tanju koru). Ispasirati kajsije.

2) Umutiti kiselu pavlaku sa secerom.

3) Pomesati kajsije sa kiselom pavlakom.

Voce konzervisano u rumu 4 (Fruit preserved in rum 4)

Sastojci: 500g voca, 350g secera, 350ml ruma.

Napomena: ukoliko svo voce ostavljate odjednom, onda vam je dovoljna ova kolicina ruma. Ukoliko pocinjete prvo sa jednom vrstom pa za njom dodajete drugu vrstu voca, tada se kolicina ruma povecava na dvostruko.

Priprema:

1) Na svo odabrano i pripremljeno voce stavite secer, sve drvenom varjacom izmesati, napuniti ciste tegle pa naliti rumom.

2) Povezati dobro duplim celofanom i ostaviti do upotrebe (6 do 8 nedelja, a moze i duze).

Priprema voca za sokove (Preparing fruit for juices)

1) Voce pazljivo odaberite da bude zrelo ali jedro, operite ga i stavite da se potpuno ocedi od vode.
2) Jagode i maline ocistite od lisca, sljivama povadite kostice, visnjama takodje.

Voce konzervisano u rumu 3 (Fruit preserved in rum 3)

Mozete svo voce ostaviti odjednom, odnosno svo mesano voce koje se pojavljuje u jednom mesecu.

Sastojci: 3 kg voca, 3 kg secera (kristal), rum po potrebi (zavisno od velicine tegle).

Priprema:
1) Na svo odabrano i pripremljeno voce stavite secer, sve drvenom varjacom izmesati, napuniti ciste tegle pa naliti rumom.

Napomena: rum treba naliti u visina 3 prsta iznad nivoa voca.

Priprema vocnih sokova (Preparation of fruit juices)

Sastojci: voce po potrebi i zelji (jagode, maline, sljive, breskve, kajsije, kruske), na 1 l soka 500g secera (kristal).

Priprema:
1) Ocistiti i oprati voce, povaditi kostice i izgnjeciti ga. To je najbolje raditi u staklenom ili porcelanskom sudu ukoliko nemate masinu za cedjenje.

Vocni fil sa gustinom (Fruit filling with starch)

Sastojci: 500g voca (jabuke, kruske, breskve, kajsije, maline, kupine, borovnice, jagode), 3 kasike vode, 3 kasike gustina, 1 kasika ruma, 20g vanilina secera.

Priprema:
1) Voce ocistiti i iseci na sitnije.
2) U serpu staviti voce i dodati vodu, gustin, rum i vanilin secer. Povremeno mesajuci kuvati 10 minuta.

Ingredients: 500g fruit (apples, pears, peaches, apricots, raspberries, blackberries, blueberries, strawberries), 3 tablespoons water, 3 tablespoons starch, 1 tablespoon rum, 20g vanilla sugar.

Preparation:
1) Peel the fruits and cut it into small pieces.
2) Put fruits in a bowl and add water, starch, rum and vanilla sugar. Stirring occasionally, cook for 10 minutes.

Dzem od kajsija i badema (Apricot and almond jam)

Sastojci: 2.5 kg kajsija (bez kostica), 1 kg secera, 20g zelatina, 100g pecenh badema.

Priprema:
1) Kajsije iseci na kocke.
2) U serpu staviti kajsije i secer. Na srednjoj temperaturi (4) mesati da se secer otopi.
3) Zelatin otopiti u 100ml hladne vode i blgao zagrevati da se otopi. Ostaviti da se ohladi.
4) Dodati u kajsije i promesati.
5) Dodati bademe i promesati.
6) Na jakoj vatri (6) kuvati 5 minuta sa konstantnim mesanjem.
7) Sipati u tegle, zatvoriti i okrenuti naopako. Ostaviti da se ohladi.
8) Cuvati naopako u frizideru dok ne pojedete dzem (da se ne stvori budj na vrhu).

Ingredients: 2.5 kg of apricots (peeled and pitted), 1 kg of sugar, 20g of gelatin, 100g of almonds.

Preparation:
1) Cut the apricots into cubes.
2) Put apricots and sugar in the pot. At medium temperature (4), stir to dissolve the sugar.
3) MIx the gelatin in 100ml of cold water and warm over low heat to dissolve. Allow to cool.
4) Add in apricots and stir.
5) Add the almonds and stir.
6) On high heat (6) cook for 5 minutes with constant stirring.
7) Pour into jars, close and turn upside down. Leave to cool.
8) Keep it upside down in the fridge until you have jam (so the mold is not formed).

Sladoled od kajsija (Apricot ice cream)

Sastojci: 600g kajsije, 500ml slatke pavlake, 3 kasike secera, 2 kasike ruma, 2 belanceta.

Priprema:
1) Kajsije oljustiti izvaditi i iseci na kocke.
2) U ciniji pomesati kajsije, secer i rum sa mikserom.
3) Umutiti slatku pavlaku.
4) Penasto umutiti belanca.
5) Pomesati belanca, slatku pavlaku i kajsije.
6) Sipati u posude i staviti u zamrzivac.

Ingredients: 600g apricots, 500ml heavy cream, 3 tablespoons of sugar, 2 tablespoons of rum, 2 egg whites.

Preparation:
1) Peel the apricots and remove the pits. Cut into cubes.
2) In a bowl mix apricots, sugar and rum with a hand mixer.
3) Whisk the sour cream.
4) Whisk the egg whites.
5) Stir in the egg whites, sour cream and apricots.
6) Pour into containers and place in freezer.

Pekmez od kajsija (Apricot jam)

Sastojci: 2 kg kajsija, 500g secera, 3 zrna karanfilica. 

Priprema: 
1) Pripremiti kajsije. Izblendirati.
2) U serpu staviti kajsije I postepeno dodavati secer. Kuvati dok postane gust uz povremeno mesanje da ne zagori. Proveriti varjacom da li je pekmez kuvan, tako sto kad povucete varjacom po sredini dna serpe I ako ostane vidljiv trag pekmez je gotov. 
3) Vreo pekmez sipati u oprane I tople (sterilisane) tegle I staviti u rernu na 80 C. Kada se zagreje iskljuciti I ostaviti da se uhvati korica. Sacekati oko pola sata da se ohladi.
4) Ostaviti do sutra da se potpuno ohlade uviijeno u cebe, pa povezati celofanom namocenim u alkohol ili rum.

Ingredients: 2 kg apricots, 500g sugar, 3 flowers of clove.

Preparation:
1) Wash apricots, remove pits and blend in blender.
2) Put apricots in the pot and gradually add the sugar. Cook until thick, stirring occasionally to avoid burning (check with the wooden spoon, when the you pull wooden spoon along the bottom of the pot and when the trace remains visible the jam is done).
3) Pour the hot jam into the washed and warm (sterilized) jars and place in the oven at 80 C. When heated, turn it off and allow the crust to form. Wait about half an hour to cool.
4) Allow to cool until tomorrow completely wrapped in a blanket and bind with cellophane soaked in alcohol or rum.

Kako zamrznuti I odrmznuti voce? (How to freeze and defrost fruit?)

1) Za pripremu zimnice treba koristiti najkvalitetnije voce koje je sveze I neosteceno. Manja ostecenja se moraju ocistiti, da se cela zimnica ne bi pokvarila. 
2) Voce se pre zamrzavanja moze posuti secerom ili preliti secernim sirupom. Za pripremu sirupa na 1 L vode dodati 3 kg seccera I sok od 3 limuna. Sacekati da se secer otopi. Kuvati na laganoj temperaturi. Penu koja se skupi treba pokupiti. Voce staviti u tegle I ostaviti 2 cm prazno. Svo voce treba da bude pokriveno sirupom.
3) Voce se preliva vrelim sirupom.    
4) Kod pasterizacije voce se zagreva u rerni u dobro zatvorenoj tegli na 75-100 C. 
5) Voca koja su najbolja zamrzavanje su breskve, dinje, jagode, kajsije, kupine, limun, maline, pomorandze, ribizle, tresnje I visnje bez kostica, sljive. Jabuke I kruske se ne zamrzavaju a mogu se cuvati u kompotu.  

Breskve I kajsije – oprati. Staviti u cediljku uroniti u serpu sa vrelom vodom, a zatim u serpu sa hladnom vodom. Ocediti, oljustiti I izvaditi kostice. Preliti secernim sirupom I spakovati u plasticne kutije. Ja sam kajsije zamrzavala bez secernog sirupa I bile su ok za kompot.

Dinje – oprati, oljustiti I ocistiti od semenki. Iseci na kocke posuti secerom I sokom od limuna. Poredjati u plasticne kutije I zamrznuti.

Jagode, kupine I maline – oprati, ocediti I posuti secerom tj. dobro ih uvaljati u secer. Poredjati na posluzavnik I brzo zamrznuti, a onda spakovati u kese I vratiti u zamrzivac. Ja sam jagode zamrzavala bez secera I odlicne su za kompot.

Dzem od kajsija (Apricot jam)

Sastojci: 4 kg kajsija (ociscenih), 3.5 kg secera, 350ml vode. 

Priprema: 
1) Kajsije oljustiti, izvaditi kostice I iseci na kocke. 
2) U serpi otopiti secer sa vodom I skuvati kao za slatko. 
3) Dodati kajsije I kuvati oko 45 minuta na jakoj temperaturi, stalno mesajuci da ne zagori. 
4) Skloniti sa sporeta I mesati dok sva pena ne nestane. 
5) Vruc dzem sipati u oprane I tople tegle (sterilisane) I staviti u rernu. Ukljuciti na 80 C I kad se uhvati korica iskljuciti rernu I ostaviti da se potpuno ohlade. 
6) Povezati celofanom I cuvati na suvom i hladnom mestu.

Ingredients: 4 kg of apricots (pitted), 3.5 kg of sugar, 350ml of water.

Preparation:
1) Peel the apricots, remove the pit and cut into cubes.
2) Dissolve the sugar with water in a pot and cook as for fruit preserve.
3) Add apricots and cook for about 45 minutes at high temperature, stirring constantly to keep from burning.
4) Remove from the stove and stir until all the foam is gone.
5) Pour hot jam into washed and warm jars (sterilized) and place in oven. Switch on at 80 C and when the crust is formed on top switch off the oven and allow to cool completely.

6) Bind with cellophane and store in a dry and cool place.

Kajsije u lisnatom testu (Apricots in puff pastry)

Sastojci: 300g lisnatog testa 1, 300g kajsija iz kompota, 200g dzema od kajsija, 300ml mleka, kora od jednog limuna, 100g secera, 10g zelatina, 3 zumanca, 400ml+200ml slatke pavlake.

Priprema:
1) Rastopiti zelatin u hladnoj vodi. Kajsije ocediti i sitno iseckati.
2) U posudu staviti mleko i koru od limuna i na tihoj temperaturi pustiti da provri. Skloniti i ostaviti da odstoji 10 minuta.

Sok od kajsija sa malinama (Apricota and raspberries juice)

Sastojci: 400g kajsija, 150g malina, 100ml soka od pomorandze, 150ml slaga.

Priprema:
1) Kajsije oljustie, isecite na polovine i izvadite kostice.
2) Stavite u blender kajsije, maline. Dodati sok od pomorandze i slag, pa izblendirajte.

Ingredients: 400g apricots, 150g raspberries, 100ml of orange juice, 150ml whipped cream.

Preparation: 
1) Peel apricots, cut it in half and remove the kernel.
2) Put in blender apricots and raspberries. Add orange juice and whipped cream and blend.

Priprema dzema-cvrsto voce 2 (Jam preparation-solid fruits 2)


Priprema dzema od voca sa manje tecnosti kao sto su tresnje, visnje, kajsije, breskve, kruske i slicno, opciono konzervans.

1) Na 1 kg voca staviti 750g secera, a moze i manje sto zavisi od vaseg ukusa, kao i kiselosti samo voca.
2) Polovinu opranog voca staviti u veci sud i kuvati na umerenoj temperaturi dok ne omeksa. Povremeno dodavati secer uz neprestano mesanje.
3) Vruce sipati u ciste tegle.
4) Kada se ohladi povezati duplim celofanom.
Opciono: dodati 1 kasicicu konzervansa u dzem.

Kompot od kajsija ili breskvi (Apricot or Peach compote)


Pravi se na isti nacin kao kompot od sljiva, samo sto se sirupom preliva samo jedanput i u tome sto je potrebno kajsije ocistiti od kore i kostica.

Kolac od breskvi i kajsija (Peaches and apricots cake)


Sastojci: 4-5 breskvi, 10-12 kajsija, 2x40g pudinga od vanile (u prahu), 8 kasika secera, 2x10g vanilin secera, 1 L vode, petit ber keks (ili bilo koji drugi obican keks), slag (opciono).

Priprema:
1) U dve cinije, sipati po 100ml vode, dodati puding i dobro promesati.
2) Breskve i kajsije oprati, izvaditi kostice i izgnjeciti.
3) Ostatak vode, po 400ml sipati u dve serpe i u svaku dodati po 4 kasike secera i po jedan vanilin secer i kuvati. Kad provri dodati  kajsije i breskve i kuvati 2-3 minuta, zatim dodati puding i kuvati dok se zgusne.
4) U pleh poredjati red keksa, preko toga preliti fil od bresaka, opet red keksa i onda fil od kajsija.
5) Opciono - staviti slag preko fila od kajsija.

Ingredients: 4-5 peaches, 10-12 apricots, 2x40g vanilla pudding (powder), 8 tablespoons of sugar, 2x10g vanilla sugar, 1 L of water, plan biscuits (or any other plain cookies), whipped cream (optional).

Preparation:
1) In two bowl, pour 100ml water, add the pudding and stir well.
2) Wash peachs and apricots, and remove the stone.
3) Rest of the water, pour in two saucepans, 400ml each, add 4 tablespoons of sugar and a vanilla sugar and cook. When it boils add the apricots and peaches, and cook for 2-3 minutes, then add the pudding and cook until it thickens.
4) In a baking pan place one layer of biscuits, then pour over peaches filling, place another layer biscuits and then filling of apricots.
5) Optional - put cream over filling of apricots.

Kolac od kajsija (Apricot cake)


Sastojci: 300g lisnatog testa, 1 tegla kompota od kajsija, 200g mrvica od testa, malo secera u prahu.

Priprema: 
1) Lisnato testo odmrznite prema uputstvu, listove prepolovite. Ako ste testo uradili sami, isecite ga na trake 8x20cm.
2) Na svaku traku stavite po tri polovice kajsije i pospite mrvicama od testa.
3) Poslazite u pleh koji ste prethodno pokvasili hladnom vodom.
4) Pecite na 225°C oko 20 minuta.
5) Pre serviranja posuti secerom u prahu.

Ingredients: 300g puff pastry, 1 jar of apricot compote, 200g of crumbs dough, a little powdered sugar.

Preparation:
1) Defrost puff pastry according to instructions, cut sheets in half. If you made your own, cut it into strips 8x20cm.
2) At each strip put three apricot halves and sprinkle with dough crumbs.
3) Before placing in a baking pan, wash baking pan with cold water.
4) Bake at 225°C for about 20 minutes.
5) Before serving sprinkle with powdered sugar.

Narandzasti sok (Orange juice)

Ingredients: 2 slices of melon, 1 peach, 3-4 apricots, 6 tablespoons of sugar, 100g strawberries, 10 ice cubes, a few drops of lemon juice, 3 cups water.

Preparation:
1. Peel and cut all fruit into small pieces and place in blender; add sugar, a few drops of lemon juice, ice cubes and cold water.
2. Mix and serve.

Sastojci: 2 kriške dinje, 1 breskva, 3-4 kajsije, 6 kašika šećera, 100g jagoda, 10 kockica leda, nekoliko kapi limunovog soka, 3 čaše vode.
