Sta je rukola? (What is arugula - rocket - rocket?)


Rukola je jestivo zeleno lisnato povrće koje spada u porodicu kupusnjača (Brassicaceae), isto kao i brokoli, karfiol i kupus. Ima karakterističan, blago ljutkast i orašast ukus, koji podseća na senf ili rotkvu, zbog čega je često cenjena u salatama, sendvičima i kao dodatak pastama ili pici.

Postoje dve glavne vrste: 

- divlja rukola (koja ima jači i gorkastiji ukus), i 

- gajena rukola (blaži, prijatniji ukus).

Rukola je bogata vitaminima A, C, K i folnom kiselinom, kao i mineralima poput kalcijuma, gvožđa i magnezijuma. Osim toga, sadrži antioksidanse i fitonutrijente koji mogu pomoći u zaštiti srca i održavanju zdravlja kostiju.

Najčešće se koristi sveža, ali se može kratko propržiti ili dodati u kuvana jela pred kraj pripreme.

Zasto je dobro jesti rukolu?

Rukolu je dobro jesti jer je izuzetno hranljiva i blagotvorna za telo, čak i kad se jede sveža. Evo zašto:

1. Podrška varenju

Rukola je bogata vlaknima koja pomažu crevima da pravilno funkcionišu i olakšavaju pražnjenje. Gorki sastojci u rukoli podstiču lučenje digestivnih sokova, pa hrana brže i lakše prolazi kroz želudac i creva.

2. Za imunitet

Sadrži vitamin C i antioksidanse koji jačaju imuni sistem i pomažu telu da se bori protiv infekcija.

Cuvanje sveže rukole

1. Priprema pre čuvanja

- Proveri listove i ukloni sve uvele ili crne delove.

- Ne peri rukolu dok je ne planiraš koristiti, jer vlaga ubrzava kvarenje.

2. Pakovanje za frižider

- Stavite rukolu u plastičnu posudu ili kesu sa rupicama za vazduh.

- Možeš staviti papirni ubrus između listova – upija višak vlage i čuva hrskavost.

3. Optimalna temperatura

- Čuvaj u fioci za povrće u frižideru na temperaturi oko 1–4 °C.

4. Priprema za duže čuvanje*

- Ako želiš da traje do nedelju dana, možeš listove lagano poprskati vodom i staviti u hermetički zatvorenu posudu sa papirnim ubrusom.

- Promeni ubrus svakih 2–3 dana ako je postao vlažan.

5. Kratko blanširanje (opciono)

- Ako želiš da čuvaš rukolu duže (10–14 dana), možeš je vrlo kratko blanširati u ključaloj vodi 15–20 sekundi, zatim odmah staviti u hladnu vodu i osušiti. 

- Nakon toga je stavi u posudu sa papirnim ubrusom u frižider.

Napomena za “Priprema za duže čuvanje”

Za rukolu (i slične listove) važno je balansirati između vlage i suvoće:

- Ako je list potpuno mokar i staviš ga direktno u zatvorenu posudu, može brzo da se pokvari zbog kondenzacije i stvaranja bakterija.

- Zato se lagano poprska vodom pre nego što staviš papirni ubrus i u hermetičku posudu, i to samo da listovi nisu potpuno suvi. Papirni ubrus tada upija višak vlage, pa rukola ostaje sveža duže.

- Ubrus se menja svakih 2–3 dana da upije vlagu koja se nakupila.

Dakle, ključ je: ne natapati rukolu, samo je lagano osvežiti, i koristiti papirni ubrus da upije višak. To je razlika između “previše mokro = brže kvari” i “lagano poprskano + papir = duže traje”.

Arugula - rocket is good to eat because it is extremely nutritious and beneficial for the body, even when eaten fresh. Here's why:

Arugula - rocket is rich in fibers that help the intestines to function properly and facilitate emptying. The bitter ingredients in arugula - rocket stimulate the secretion of digestive juices, so food passes through the stomach and intestines faster and easier.

It contains vitamin C and antioxidants that strengthen the immune system and help the body fight infections.

Storing fresh arugula - rocket

1. Preparation before storage

- Check the leaves and remove any wilted or black parts.

- Do not wash the arugula - rocket until you plan to use it, because moisture accelerates spoilage.

2. Refrigerator packaging

- Put the arugula - rocket in a plastic container or bag with holes for air.

- You can put a paper towel between the leaves - it absorbs excess moisture and preserves the crispiness.

3. Optimal temperature

- Store in the vegetable drawer in the fridge at a temperature of around 1-4 °C.

4. Preparation for longer storage*

- If you want it to last up to a week, you can lightly spray the leaves with water and put them in a hermetically sealed container with a paper towel.

- Change the towel every 2-3 days if it has become damp.

5. Short blanching (optional)

- If you want to store the arugula - rocket for a longer period of time (10–14 days), you can blanch it very briefly in boiling water for 15–20 seconds, then immediately place it in cold water and dry it.

- Then place it in a container with paper towels in the refrigerator.

For arugula - rocket (and similar leaves), it is important to balance moisture and dryness:

- If the leaf is completely wet and you put it directly in a closed container, it can quickly spoil due to condensation and the formation of bacteria.

- Therefore, it is lightly sprayed with water before placing the paper towel in an airtight container, just so that the leaves are not completely dry. The paper towel then absorbs excess moisture, so the arugula - rocket stays fresh longer.

- The towel is changed every 2–3 days to absorb the moisture that has accumulated.

So the key is: don't soak the arugula - rocket, just refresh it slightly, and use a paper towel to absorb the excess. It's the difference between "too wet = spoils faster" and "lightly sprayed + paper = lasts longer".
