Koji kackavalj izabrati za dijabetes i IR u Srbiji i USA? (Which yellow cheese to choose for diabetes and IR in Serbia and the USA?)


🇷🇸 Srbija - kackavalj 

1. Najbolji izbor (za zdravlje i kvalitet):

- domaći kačkavalj (pijaca ili mala mlekara)

- pirotski kačkavalj

- sjenički ili zlatarski

Zašto?

- pravi se od pravog mleka

- bez aditiva

- bolji za stabilan šećer

2. Dobar izbor iz radnje:

- Imlek kačkavalj ili gauda sir

- Biser trapist ili gauda

- President (uvozni, ali često kvalitetniji)

- Kozji (domaći bez aditiva)

Ovo su najčešći u prodavnicama i OK su za svakodnevno.

Izbegavaj:

- najjeftinije “pica sir” varijante

- biljni ili mešani sirevi

- topljeni kačkavalj

Cesto nisu pravi sir (dodaci, skrob, loš kvalitet)

Mali savet:

Polutvrdi sirevi poput kačkavalja i gaude se dobro tope i imaju stabilan sastav, ali kvalitet zavisi od mleka i proizvodnje

🇺🇸 USA – šta je ekvivalent kackavalju?

U Americi nema “kačkavalj” kao naziv, ali ovo je isto:

1. Najbliže kačkavalju:

- cedar sir (najčešći)

- gauda

- monterey jack

- mocarela sir sa smanjenim sadržajem vlage (en. low moisture)

Dobri brendovi:

- Tillamook (vrlo kvalitetan cedar sir)

- Cabot cedar sir 

- Sargento (ok srednja klasa)

- Organic valley

Izbegavaj u USA:

- Procesuiran sir (en. processed cheese) npr. Kraft singles

- krem sirevi

- “kackavalj namazi” (en. cheese spreads***).

Najbitnije pravilo

Što je sir tvrđi, jednostavnijeg sastava (mleko + so + kultura) → to je bolji za dijabetes i insulinsku i stabilan šećer.

Napomena za “kackavalj namaz”

Kackavalj namaz je prerađena hrana u kojoj se jedan ili više polutvrdih ili polumekih kackavalja - sireva kombinuje sa drugim sastojcima poput povrća, mesa, voća, začina i mirisnih sastojaka, kao i sastojcima, za krekere ili hleb.

🇷🇸 Serbia - yellow cheese 

1. The best choice (for health and quality):

- homemade cheese (market or small dairy shops)

- Pirot yellow cheese

- Sjenica or Zlatar yellow cheese 

Why?

- it is made from real milk

- without additives

- better for stable sugar

2. A good selection from the store:

- Imlek cheese or gouda cheese

- Biser  Trappist or Gouda

- President (imported, but often of better quality)

- Goat (homemade without additives)

These are the most common in stores and are OK for everyday use.

Avoid:

- the cheapest "pizza cheese" variants

- vegetable (plant-based or mixed cheeses

- melted cheese

They are often not real cheese (additives, starch, poor quality)

A little tip:

Semi-hard cheeses such as yellow cheese and Gouda melt well and have a stable composition, but the quality depends on the milk and production

🇺🇸 USA - what is the equivalent of a yellow cheese?

In America, there is no "yellow cheese" as a name, but this is the same:

1. Closest to yellow cheese:

- cheddar cheese (most common)

- gouda

- monterey jack

- mozzarella cheese low moisture 

Good brands:

- Tillamook (high quality cheddar cheese)

- Cabot cheddar cheese 

- Sargento (ok affordable)

- Organic valley

Avoid in the USA:

- Processed cheese (en. processed cheese) e.g. Kraft singles

- cream cheese 

- "cheese spreads"***

The most important rule

Harder with a simpler composition (milk + salt + culture) → it is better for diabetes and insulin resistance and stable sugar.

Note for "cheese spread"

Cheese spread is a processed food in which one or more semi-hard or semi-soft cheeses are combined with other ingredients such as vegetables, meat, fruit, spices and aromatic ingredients, as well as ingredients for crackers or bread.
