Univerzalno testo od krompira za slane knedle (Universal potato dough for savory dumplings)

Sastojci: 500 g krompira (pasirani), 150–180 g brašna (mozda i vise po potrebi) tip 500 ili tip 400 plus 1-2 kašike griza, 1 jaje,  ½ kašičice soli.

Priprema:

1. Krompir skuvaj u ljusci ili oljušten dok ne omekša. Ostavi da se malo ohladi.

2. Ispasiraj ili izgnječi viljuškom dok je još topao.

Zelene heljdine knedle punjene mocarelom (Green buckwheat dumpling filled with mozzarella)


Sastojci: 1 kg heljdinog brašna (grubog), 200g starog crnog hleba, 50ml mleka (hladnog), 1 jaje, 20ml ulja, 50g spanaća (kuvanog), ½ glavice kupusa, 1/2 praziluka, 3 kašike vlasca, so, hladna voda po potrebi, za punjenje - mocarela, pršuta.

Priprema:

1. Stari crni hleb iseći na kockice i potopiti u mleko preko noći. Cuvati u frizideru.

2. Spanać, kupus, praziluk i vlasac iseći i pomesati sa hlebom.

Knedle sa sljivama (Dumplings with plums)

Sastojci: 500g krompira, 1/4 kasicice soli,  1 jaje, 1 zumance, 250g brasna, sljive, prezle, ulje, secer (po ukusu), 10g vanilin secera, 1 kasicica cimeta.

Priprema:

1) Krompir obariti, oljustiti ga, pa ispasirati.

2) Dodati so, jaje, zumance i brasno, pa rukom zamesiti glatko testo.

Mamina supa sa knedlama (Mom's soup with dumplings)

Sastojci: 1 jaje, 5 kasika griza (ravnih), 1 kasicica ulja, 2 sargarepe, 1 koren persuna, 1 koren paskanata, komad korena celera oko 2cm, 2 kasike lista persuna (sitno seckanog), 300g pileceg mesa, rezanca, vegeta, malo ulja.

Priprema:
1) Oljustiti sargarepu, koren persuna, koren paskanata i koren celera. Iseci na kockice sve osim celera. Belo meso isprati hladnom vodom. Iseci na kocke.
2) Belo meso staviti u vrelu vodu i kuvati oko 15 minuta. Povremeno skidati penu koja se nakupi. Procediti.

Knedle od krompira sa mesom (Potato dumplings with meat)

Sastojci: 500g krompira (kuvanog) ili krompir pirea, 200g brasna + jos za valjanje, 1 jaje, 250g mlevenog mesa, 1 glavica crnog luka, 1 cen belog luka, 2 kasike persuna (sitno seckanog), so, prezle i ulje.

Priprema:
1) Krompir izgnjeciti i pomesati sa brasnom i jajetom. Posoliti po ukusu i dobro sjediniti. Ostaviti sa strane.
2) Crni luk i beli luk ocistiti i sitno iseckati. Mleveno meso isprziti.
3) Pomesati mleveno meso, crni luk, beli luk i persun.
4) Od testa praviti knedle, u sredinu staviti nadev od mesa. Svaku knedlu uvaljati u brasno, pa u prezle i prziti u vrelom ulju dok ne porumene sa svih strana.

Ingredients: 500g potatoes (cooked) or mashed potatoes, 200g flour + more for rolling, 1 egg, 250g of minced meat, 1 onion, 1 clove of garlic, 2 tablespoons parsley (finely chopped), salt, bread crumbs and oil.

Preparation:
1) Mash potatoes and mix with the flour and egg. Add salt to taste and combine well. Set aside.
2) Clean onion and garlic, and finely chop. Fry minced meat.
3) Combine ground meat, onion, garlic and parsley.
4) From dough form dumplings, put the meat stuffing in the center. Every dumpling roll in flour, then in bread crumbs and fry in hot oil until golden brown on all sides.

Przene knedle sa sirom (Fried dumplings with cheese)


Sastojci: 4 belanceta, 70g sunke (iseckane na kockice), 350g fete, so, 80g prezli, maslinovo ulje (za przenje).

Priprema: 
1) Belanca pomesati sa malo soli i mutiti dok se ne napravi cvrst sneg. Dok mutite postepeno dodavati sunku, sir (prethodno izgnjecen viljuskom) i prezle.
2) Sve dobro izmesati. Ulje zagrejati i kasikom vaditi knedle i prziti.

Predlog 1: od zumanaca mozete napraviti krem od zumanaca.

Predlog 2: ili mozete napraviti Slane stapice sa krompirom.

Ingredients: 4 egg whites, 70g ham (chopped into cubes), ??350g feta cheese, 80g of breadcrumbs, olive oil (for frying).

Preparation:
1) Mix egg whites with a pinch of salt and beat until becomes "snowy". While mixing gradually add ham, cheese (previously squashed with fork) and breadcrumbs.
2) Mix well. Heat the oil and scoop with tablespoon the dumplings and fry.

Suggestion 1: from egg yolks you can make egg yolks cream.

Suggestion 2: or you can make Salted sticks with potatoes.
