Sumak zacinski miks (Sumac spice mix)

Sastojci: 3 kašike sušenog mlevenog sumaка, 1 kašičica morske soli, 1 kašičica mlevenog semena korijandera,  1 kašičica mlevenog kumina, ½ kašičice belog luka u prahu, ½ kašičice crnog luka u prahu, ½ kašičice mlevene slatke paprike u prahu, ¼ kašičice mlevenog crnog bibera, prstohvat suvog origana.

Priprema:

1. Sve sastojke dobro izmešaj u činiji dok ne dobiješ ujednačen prah.

2. Cuvati u dobro zatvorenoj tegli, na suvom i tamnom mestu.

 Upotreba :

1. Rezanci (nudle)

½-1 kašičice za jednu porciju rezanaca (nudli) ili salate. Dodaje se na kraju ili u završnom mešanju jel ili u sos. Može i u ulje (maslinovo + sumak miks) kao preliv. Najbolje uz piletinu, leblebije ili povrće.

2. Meso

Piletina, ćuretina, junetina. Utrljati 1 kašičica na 300 g mesa pre pečenja ili prženja ili posuti na kraju preko gotovog mesa.

Ako praviš marinadu sa uljem ili jogurtom, sumak zacinski miks se još lepše zalepi za meso i ukus bude puniji. Posebno dobro ide sa piletinom i ćuretinom jer sumak daje blagu kiselkastu notu koja osvežava meso.

3. Povrće

Tikvice, paprika, patlidžan, paradajz. Posuti posle pečenja ili dinstanja. Može i u maslinovo ulje kao preliv.

4. Salate

Kao zamena za limun i so, ili uz maslinovo ulje kao preliv. Odlično uz krastavac, paradajz, luk.

5. Doručak 

Posuti preko kajgane ili prženih jaja. Ide super uz tost ili bagel.

Najbolji efekat za sumak zacinski miks dobijaš kada ga ne kuvaš dugo, nego ga dodaješ na kraju.

Sta je sumak zacin?

Ingredients: 3 tablespoons of dried ground sumac, 1 teaspoon of sea salt, 1 teaspoon of ground coriander seeds, 1 teaspoon of ground cumin, ½ teaspoon of garlic powder, ½ teaspoon of onion powder, ½ teaspoon of ground sweet paprika powder, ¼ teaspoon of ground black pepper, a pinch of dried oregano.

Preparation:

1. Mix all the ingredients well in a bowl until you get a uniform powder.

2. Store in a well-closed jar, in a dry and dark place.

 Usage :

1. Noodles

½-1 teaspoon for one portion of noodles or salad. It is added at the end or in the final mixing of the dish or in the sauce. It can also be in oil (olive + sumac spice mix) as a dressing. Best with chicken, chickpeas or vegetables.

2. Meat

Chicken, turkey, beef. Rub 1 teaspoon per 300 g of meat before baking or frying, or sprinkle over the finished meat at the end.

If you make a marinade with oil or yogurt, the sumac spice mix will stick to the meat even better and the taste will be fuller. It goes especially well with chicken and turkey because the sumac gives a slight sour note that refreshes the meat.

3. Vegetables

Zucchini, pepper, eggplant, tomato. Sprinkle after baking or stewing. It can also be in olive oil as a dressing.

4. Salads

As a substitute for lemon and salt, or with olive oil as a dressing. Excellent with cucumber, tomato, onion.

5. Breakfast

Sprinkle over scrambled eggs or fried eggs. It goes great with toast or a bagel.

You get the best effect for the sumac spice mix when you don't cook it for a long time, but add it at the end.
