Pire od batata (Sweet potato puree)

Moze biti vegan.

Sastojci: 500 g batata + 1 ravna kašičica soli na 1 litar vode, 30-40 g neslanog putera, 40–80 ml mleka ili pavlake za kuvanje*, prstohvat soli, prstohvat bibera, ¼-½ kašičice belog luka u prahu (opciono), 1-2 kašike svezeg lista peršuna (sitno seckanog, opciono).

Priprema:

1. Oljušti batat i iseci na kocke 2-3 cm.

2. U šerpi stavi batat, prelij hladnom vodom, dodaj so i pusti da prokljuca na jakoj temperaturi (6 od 6).

3. Smanji temperaturu na srednje nisku (3) ili srednju (4) i kuvaj oko 15–20 minuta, dok potpuno ne omekša.

4. Ocedi vodu, pa vruć batat izgnječi viljuškom ili gnječilicom za pire.

5. Dodaj beli luk u prahu (ako koristiš) neslan puter, mleko ili pavlaku za kuvanje postepeno, dok ne dobiješ kremastu teksturu. 

6. Začini solju, biberom i svezim persunom (ako koristiš).

Napomena:

Ako hoćeš ekstra kremast pire, skini ga sa sporeta čim viljuška lako prolazi kroz komade.

Napomena za mleko i pavlaku za kuvanje

  • Dodajte mleko ili pavlaku za kuvanje postepeno da pire ne postane previše redak.
  • Pavlaku za kuvanje mozete zameniti kiselom pavlakom ako želite osvežavajući i jači ukus ili neutralnom biljnom pavlakom ako pravite bez mlečnih proizvoda.

  • piletinu
  • cufte
  • ribu
  • peceno povrce ili grilovano povrce
  • pljeskavice ili povrtne pljeskavice
  • kobasice
  • priprema obroka za više dana

Ingredients: 500 g of sweet potato + 1 level teaspoon of salt per 1 liter of water, 30-40 g of unsalted butter, 40-80 ml of milk or cooking cream*, a pinch of salt, a pinch of pepper, ¼-½ teaspoon of garlic powder (optional), 1-2 tablespoons of fresh parsley leaves (finely chopped, optional).

Preparation:

1. Peel the sweet potato and cut it into 2-3 cm cubes.

2. Put the sweet potato in a pot, pour cold water over it, add salt and let it boil at a high temperature (6 out of 6).

3. Reduce the temperature to medium-low (3) or medium (4) and cook for about 15-20 minutes, until completely soft.

4. Drain the water, then mash the hot sweet potato with a fork or masher.

5. Add garlic powder (if using) unsalted butter, milk or cooking cream gradually, until you get a creamy texture.

6. Season with salt, pepper and fresh parsley (if using).

Note:

If you want an extra creamy puree, remove it from the stove as soon as a fork easily passes through the pieces.

Note for milk and cooking cream 

  • Add milk or cooking cream gradually so that the puree does not become too thin.
  • You can replace the cooking cream with sour cream if you want a refreshing and stronger taste or with neutral plant-based cream if you are making it without dairy products.

  • chicken
  • meatballs
  • fish
  • roasted vegetables or grilled vegetables
  • burgers or veggie burgers
  • sausages
  • preparing meals for several days
