Sta je jogurt u prahu? (What is yogurt powder?)

Jogurt u prahu je dehidrirani jogurt, odnosno jogurt iz koga je uklonjena voda pa ostane fini suvi prah. Koristi se kao zamena za svež jogurt u prehrambenoj industriji, pekarstvu i nekim sirevima jer dodaje mlečne bakterije i blagu kiselost bez dodatne tečnosti.

Za pravljenje brzog trapista služi kao “starter”, odnosno pomoć fermentaciji mleka.

Možeš ga naći pod nazivima:

  • jogurt u prahu
  • suvi jogurt u prahu 

Najčešće se prodaje u prodavnicama zdrave hrane ili internet prodavnicama za sirarstvo.

Ako nemaš jogurt u prahu, možeš staviti:

1–2 kašike običnog punomasnog jogurta sa živim kulturama*, ili

potpuno preskočiti ako koristiš pravu starter kulturu za sir

Gde kupiti jogurt sa živim kulturama u Srbiji?

U Maxi ili Idea prodavnicama obično možeš naći nekoliko dobrih opcija:

  • Moja Kravica čvrsti jogurt
  • Balans+ probiotski jogurt
  • Imlek jogurt sa probiotskim kulturama
  • Dukat probiotski jogurt
  • Activia natural jogurt

Traži da piše nešto poput:

  • „žive jogurtne kulture”
  • „probiotske kulture”
  • „L. bulgaricus i S. thermophilus”

Za trapist je sasvim dovoljno 1–2 kašike takvog jogurta na 2 litre mleka.

U Americi jogurt sa živim kulturama najčešće imaju obični supermarketi kao:

  • Walmart
  • Target
  • Kroger
  • Whole Foods
  • Costco
  • Trader Joe’s
  • Safeway
  • Publix

Brendovi koje skoro svako može naći:

1. Chobani

Često piše “zive i aktivne kulture” (en. “live and active cultures”). Dobar i za jelo i kao starter za domaći jogurt ili sir.

2. FAGE

Vrlo gust grčki jogurt sa živim kulturama. Čest izbor za kuvanje i fermentaciju.

3. Activia

Poznat probiotski jogurt sa aktivnim kulturama.

4. Stonyfield

Organski jogurt sa više probiotskih kultura.

5. Dannon

Neki njihovi plain jogurti imaju aktivne kulture.

6. Nancy's

Jedan od najjačih probiotskih jogurta po količini kultura.

Na pakovanju traži:

  • „žive i aktivne kulture”
  • „aktivne kulture”
  • „sadrži probiotike”
  • Lactobacillus bulgaricus
  • Streptococcus thermophilus

Za pravljenje sira ili fermentaciju najbolji su:

  • običan jogurt
  • nezaslađen jogurt
  • punomasni jogurt

Upotreba jogurta u prahu u kuhinji:

1. U pekarstvu

Dodaje se u testo za hleb, lepinje, peciva, pogačice i kekse. Daje blagu kiselost i mekšu, sočniju strukturu, kao da ste dodali kiselo mleko ili jogurt.

2. U marinadama

Odličan je za meso, posebno piletinu. Pomaže da meso bude mekše i sočnije jer blaga kiselina “razbija” vlakna. Koristi se u suvim ili polusuvim marinadama zajedno sa začinima.

3. U sosevima i prelivima

Može da se pomeša sa vodom, mlekom, kiselom pavlakom,  pavlakom za kuvanje, grčkim jogurtom i neutralnog mlečnom pavlakom da dobiješ brzi jogurt-sos. Dobro ide uz piletinu, povrće ili kao sos za umakanje.

4. U mešavinama začina

Često se koristi u “suvim začinskim” mešavinama za meso ili grickalice, jer daje blagu kremastu kiselost u prahu bez vlage.

5. U instant i fit obrocima

Dodaje se u ovsene kaše, proteinske smese, smutije u prahu ili gotove mešavine za doručak, da pojača ukus i malo proteina.

6. U industrijskoj i domaćoj hrani za duže čuvanje

Zato što je suv, ne kvari se lako i stabilan je u mešavinama gde tečni jogurt ne bi mogao da stoji.

Važna napomena

Nije 1:1 zamena za običan jogurt uvek. Kad ga rehidriraš, moraš dodati vodu ili mleko, i ukus je malo blaži i “suvlji” nego svež jogurt.


Powdered yogurt is dehydrated yogurt, that is, yogurt from which the water has been removed, leaving a fine dry powder. It is used as a substitute for fresh yogurt in the food industry, bakery and some cheeses because it adds lactic bacteria and mild acidity without additional liquid.

For making quick Trappist, it serves as a "starter", that is, an aid to the fermentation of milk.

If you don't have yogurt powder, you can put:

1–2 tablespoons plain full-fat yogurt with live cultures*, or

skip it entirely if you are using a real cheese starter culture

Where to buy yogurt with live cultures in Serbia? 

In Serbia, Maxi or Idea stores you can usually find several good options:

  • Moja Kravica solid yogurt
  • Balance+ probiotic yogurt
  • Imlek yogurt with probiotic cultures
  • Dukat probiotic yogurt
  • Activia natural yogurt

Look for something like:

  • "live yogurt cultures"
  • "probiotic cultures"
  • "L. bulgaricus and S. thermophilus"

For a Trappist cheese, 1-2 tablespoons of such yogurt per 2 liters of milk is quite enough.

In America, yogurt with live cultures is most often available in regular supermarkets such as:

One of the strongest probiotic yogurts by the amount of cultures.

Look for on the package:

  • "living and active cultures"
  • "active cultures"
  • "contains probiotics"
  • Lactobacillus bulgaricus
  • Streptococcus thermophilus

For making cheese or fermentation, the best are:

  • plain yogurt
  • unsweetened yogurt
  • full fat yogurt

Uses of yogurt powder in the kitchen:

1. In the bakery

It is added to the dough for bread, buns, pastries, scones and biscuits. It gives a slight acidity and a softer, juicier texture, as if you had added sour milk or yogurt. 

2. In marinades

It is excellent for meat, especially chicken. It helps the meat to be softer and juicier because the mild acid "breaks down" the fibers. It is used in dry or semi-dry marinades together with spices.

3. In sauces and dressings

It can be mixed with water, milk, sour cream, cooking cream, Greek yogurt and neutral milk cream to get a quick yogurt sauce. It goes well with chicken, vegetables or as a dipping sauce.

4. In spice mixes

It is often used in "dry spice" mixes for meats or snacks, as it provides a mild, creamy acidity to the powder without moisture.

5. In instant and fit meals

Add it to the oat flakes - rolled oats porridge, protein shakes, smoothie powders or ready-to-eat breakfast mixes for a boost of flavor and some protein.

6. In industrial and homemade food for longer storage

Because it is dry, it does not spoil easily and is stable in mixes where liquid yogurt would not be able to stand.

Important note

It is not always a 1:1 substitute for regular yogurt. When you rehydrate it, you have to add water or milk, and the taste is a little milder and "drier" than fresh yogurt.
