Namaz od suncokreta i susama (Sunflower and sesame seeds spread)

(Ili kuglice ako imate slabiju seckalicu 😊)

Sastojci: 200 g suncokret semenki (okjustenih), 30 g susama, 3-4 kašike neutralnog ulja ili maslinovog blagog ulja, ¼ kašičice soli.

Potrebno: jači blender ili secko.

Priprema:

1. Zagrej rernu na 175 °C (347 °F).

2. Rasporedi suncokret semenke i susam na pleh obložen papirom za pečenje u tankom sloju. 

3. Peci 8–10 minuta, uz jedno kratko mešanje na polovini pečenja, dok semenke ne zamirišu i blago ne potamne. 

Nemoj ih prepeći jer mogu dati gorčinu.

4. Ostavi ih 5–10 minuta da se prohlade. 

Toplo seme se lepše blendira, ali ne treba da bude vrelo.

5. Prebaci sve u blender ili secko. 

6. Dodaj so i 3 kašike ulja.

Blendaj u pauzama da se aparat ne pregreje. Deset sekundi blendaj, 60 sekundi odmara aparat.

Prvo će biti mrvičasto. 

Zatim će početi da se skuplja u gustu masu. 

Posle nekoliko minuta postaće sve kremastije jer semenke same puštaju ulja.

Po potrebi sastruži stranice blendera ili seckalice spatulom između blendanja.

Napomene:

  • Ako želiš ređi namaz, dodaj još 1 kašiku ulja. 
  • Ako želiš mekšu teksturu bez dodatnog ulja, stavi 1–2 kašike tople vode tek na samom kraju i kratko izblendaj. Vodu dodavati postepeno da se smesa ne stegne previše. Prvo dodaj 1 kašiku tople vode, blendaj kratko, pa Ako je potrebno dodaj i drugu kašiku tople vode.

Opciono na kraju možeš dodati:

  • prstohvat belog bibera
  • 1 kašičicu nutritivnog kvasca za blagu „sirastu” notu

Rok trajanja 

Čuvaj u zatvorenoj tegli u frižideru do 7 dana.

Upotreba 

  • namaz za hleb, tost, tortilje, kifle
  • dodatak sendvičima i rolnicama 
  • osnova za soseve i prelive
  • dodatak testenini za kremastu teksturu
  • veganska zamena za neke sireve ili majonez

Kako je meni ispalo?

Ja nemam jaču seckalicu. Moja je od 300 W. Ja sam stavila 4 kašike ulja i na kraj, jednu po jednu (2 ukupno) kašike tople vode. Dobila sam smesu za kuglice 😁 Ali ja sam zadovoljna.

I nisam pekla suncokret i susam.

Za mene, jedna kuglica izmedju 2 parceta tost hleba svaki drugi ili treći dan, jednom mesečno ili jednom u dva meseca, ova količina je ok (zbog šećera i zasicenih masti, jer sam u insulinskoj rezistenciji i imam aterosklerozu).

Oh, zaboravila sam da stavim so 😁 ali ja nemam tu naviku.

Ingredients: 200 g of sunflower seeds (shelled), 30 g of sesame seeds, 3-4 tablespoons of neutral oil or mild olive oil, ¼ teaspoon of salt.

Needed: a stronger blender or chopper.

Preparation:

1. Preheat the oven to 175 °C (347 °F).

2. Spread the sunflower seeds and sesame seeds on a baking sheet lined with baking paper in a thin layer.

3. Bake for 8–10 minutes, stirring once halfway through baking, until the seeds are fragrant and slightly darkened.

Do not overbake them because they can become bitter.

4. Leave them for 5-10 minutes to cool.

Warm seeds blend better, but it should not be hot.

5. Transfer everything to a blender or chopper. 

6. Add salt and 3 tablespoons of oil.

Blend with breaks so that the device does not overheat. Blend for ten seconds, rest the device for 60 seconds.

It will be crumbly at first.

Then it will start to gather into a thick mass.

After a few minutes, it will become more and more creamy because the seeds themselves release their oils.

If necessary, scrape down the sides of the blender or chopper with a spatula between blending.

Notes:

  • If you want a thinner spread, add another 1 tablespoon of oil.
  • If you want a softer texture without additional oil, add 1-2 tablespoons of warm water at the very end and blend briefly. Add water gradually so that the mixture does not harden too much. First add 1 tablespoon of warm water, blend briefly, then if necessary add another tablespoon of warm water.

Optionally, you can add at the end:

  • a pinch of white pepper
  • 1 teaspoon of nutritional yeast for a slight "cheesy" note

Shelf life

Store in a sealed jar in the refrigerator for up to 7 days.

Usage

  • spread for bread, toast, tortillas, buns or rolls
  • addition to sandwiches and wraps
  • base for sauces and dressings
  • addition to pasta for a creamy texture
  • vegan substitute for some cheeses or mayonnaise

How did it turn out for me?

I don't have a stronger chopper. Mine is 300 W. I put 4 tablespoons of oil and at the end, one by one (2 in total) tablespoons of warm water. I got the mixture for the balls 😁 But I am satisfied.

And I didn't roast sunflower and sesame seeds.

For me, one small ball between 2 pieces of toast every second or third day, once a month or once every two months, this amount is ok (because of the sugar and saturated fat, because I am insulin resistant and have atherosclerosis).

Oh, I forgot to add salt 😁 but I don't have that habit.
