What is banitsa? (Sta je banica?)

Banitsa is a traditional Bulgarian dish made of thin crusts and various fillings. The most famous is the savoury banitsa with white brine cheese, eggs and buttermilk, but there are many other varieties.

The crusts can be stacked on top of each other with the filling between them or twisted into rolls and stacked in a circle or spiral. During baking, the crusts become golden and crispy, while the inside remains soft and juicy.

Banitsa is most often eaten for breakfast, but it is also served as a snack, part of a family meal or a holiday dish. In Bulgaria, it is often eaten with buttermilk, yogurt (sour milk), ayran (Turkish salty liquid yogurt drink) or boza (a traditional fermented grain drink).

 Where does banitsa come from? 

Banitsa is primarily associated with Bulgaria and is considered one of the signature dishes of Bulgarian cuisine. Its precise origin, however, cannot be tied to one year or one country.

The technique of making thin crusts with filling is much older and is spread over a large area from the Middle East to the Balkans. This is why banitsa belongs to the broad tradition of layered pies, while Bulgarian cuisine has developed its characteristic recipes, shapes and fillings over time.

Zeljanica banitsa

Zeljanica is a traditional Balkan savory pie (phyllo pastry pie) made with phyllo pie crusts (store bought) or phyllo dough crusts (homemade) and leafy greens, usually spinach, nettle or Swiss chard, and white brine cheese.

Leeks banitsa 

Leeks and spring onions are used for special types known as holiday or onion pies.

Banitsa has a special place in Bulgarian holiday traditions. One of the most famous examples is the New Year's banitsa with vegetables. Each member of the family gets his piece, so it is believed that the wish from his part will follow that person during the year.

Kore se mogu slagati jedna preko druge sa filom izmedju njih ili uvijati u rolnice i slagati u krug ili spiralu. Tokom pecenja kore postaju zlatne i hrskave, dok unutrasnjost ostaje mekana i socna.

Banica se najcesce jede za dorucak, ali se sluzi i kao uzina, deo porodicnog obroka ili praznicno jelo. U Bugarskoj se cesto jede uz jogurt, ajran ili bozu.

 Odakle potice banica? 

Banica se prvenstveno vezuje za Bugarsku i smatra se jednim od prepoznatljivih jela bugarske kuhinje. Njeno precizno poreklo, medjutim, nije moguce vezati za jednu godinu ili jednu osobu.

Tehnika pravljenja tankih kora sa nadevom mnogo je starija i rasprostranjena je na velikom prostoru od Bliskog istoka do Balkana. Zbog toga banica pripada siroj tradiciji slojevitih pita, dok je bugarska kuhinja vremenom razvila svoje karakteristicne recepte, oblike i nadeve.

Najpoznatija je banica sa sirom, ali tradicionalna bugarska kuhinja poznaje mnogo vise varijanti.

Bundevara 

Bundevara je slatka verzija, pita sa bundevom, secerom, orasima i cimetom. Posebno je popularan tokom hladnijeg dela godine.

Mlecna banica

Mlecna banica pravi se sa mlekom, jajima, secerom i vanila ekstraktom i mnogo je mekse i kremastije teksture.

Zeljanica banica

Postoje i banice sa spanacem, koprivom, zeljem i drugim lisnatim biljem. 

Banica od praziluka 

Praziluk i luk koriste se za posebne vrste poznate kao praznicne ili lukove pite.

U zavisnosti od kraja, mogu se koristiti i razliciti drugi sastojci, ukljucujuci voce, susam i tahini.

 Zanimljivosti o banici

Banica ima posebno mesto u bugarskim praznicnim obicajima. Jedan od najpoznatijih primera je novogodisnja banica sa zeljama. U nju se tradicionalno stavljaju mali simboli ili papirici sa zeljama za narednu godinu. Svaki clan porodice dobija svoj komad, pa se veruje da ce zelja iz njegovog dela pratiti tu osobu tokom godine.
