Preparation:
1. Wash the cucumber, peel it and cut it into thin rings or cubes.
2. Mix cream cheese with lemon juice, salt, pepper and herbs.
3. Spread the prepared cream cheese over the rice crackers.
4. Arrange the cucumber on top.
5. Serve immediately to keep the crackers crispy.
Optionally you can add:

- sesame seeds or pumpkin seeds
