Integralni hleb (Integral bread)

Sastojci: 500g integralnog brasna, 1 1/2 kasike suvog kvasca, 400 ml tople vode, 1 kasicica secera, 1/2 kasicice soli, 2 kasike mlevenog lana, 1 kasika cia semenki, 2 kasike semenki suncokreta, 2 kasike semenki bundeve, 2 kasike maslinovog ulja.

Priprema:
1) Pomesati toplu vodu sa kvascem i secerom i ostaviti 15 minuta da nadodje.
2) U brasno dodati so i promesati. Dodati kvasac i mesati. Dodati lan, cia, suncokret i bundevine semenke i promesati.
3) Na malo integralnog brasna staviti testo i mesiti 15 minuta. Staviti u ciniju testo i premazati sa 1 kasikom ulja sa svih strana. Pokriti i ostaviti na toplom da nadodje. 
4) Na malo integralnog brasna izvaditi testo i pesnicom udarati da izadje vazduh. Kratko premesiti testo pokriti i ostaviti da odmori 5 minuta. 
5) Pleh za hleb namazati uljem. Od testa napraviti oblik hleba i staviti u pleh. Pokriti i ostaviti jos 1 sat da nadodje. 
6) Peci u prethodno zagrejanoj rerni na 200 C 30 zatim na 220 C jos oko 10 do 15 minuta. Izvaditi iz rerne poprskati vodom i ostaviti da se ohladi.

Ingredients: 500g integral flour, 1 1/2 tablespoons of dry yeast, 400 ml of warm water, 1 tablespoon of sugar, 1/2 tablespoons of ground flax, 1 tablespoon of chia seeds, 2 tablespoons of sunflower seeds, 2 tbsp of pumpkin seeds, 2 tbsp olive.

Preparation:
1) Mix warm water with yeast and sugar and allow to stand for 15 minutes.
2) Add salt to the flour and stir. Add yeast and stir. Add flax, chia, sunflower and pumpkin seeds and stir.
3) Put the dough on the surface with integral flour and knead for 15 minutes. Put the dough in a bowl and coat with 1 tbsp of oil on all sides. Cover and set aside on warm to rise.
4) Put the dough on surface with integral flour and with a fist hit the dough. This removes air from the dough. Cover the dough and allow to rest for 5 minutes.
5) Grease the bread pan with oil. From the dough make the shape of the bread and put in a baking pan. Cover and allow another 1 hour to rise.
6) Bake in a preheated oven at 200 C 30 then at 220 C for another 10 to 15 minutes. Remove from the oven sprinkle with water and allow to cool.

Fil od jabuka (Apple filling)

Sastojci: 6 jabuka, 2 kasike secera, 750ml soka od jabuka.4 kasike secera, 20g vanilin secera ili 1 kasicica vanila ekstrakta, 80g pudinga od vanile u prahu.

Priprema:
1) Jabuke oljustiti i iseci na kockice. Pomesati puding sa 200ml soka od jabuka i mesajuci napraviti ujednacenu smesu.
2) Jabuke staviti u serpu, dodati secer i prziti dok ne puste svoj sok i secer se istopi.
3) U serpu staviti 550ml soka od jabuka dodati 4 kasike secera i vanilin secer i kuvati dok se secer ne otopi. Dodati smesu pudinga i soka od jabuka konstantno mesaju dok sipate i kuvati krem.
4) U vruc krem dodati jabuke i promesati.

Ovaj krem mozete odmah filovati ako koristite gotove bikvit kore ili keks ili mozete peci u rerni ako koristite biskvit koji tek treba da se pece, a mozete i posluziti sa slagom ili sladoledom.

Ingredients: 6 apples, 2 tablespoons of sugar, 750ml of apple juice, 4 tablespoons of sugar, 20g of vanilla sugar or 1 teaspoon vanilla extract, 80g of vanilla powder pudding.

Preparation:
1) Peel apples and cut into cubes. Mix the pudding with 200ml apple juice and mix to make a even mixture.
2) Put apples in a pot, add sugar and fry until they release their juice and the sugar is melted.
3) Put 550ml of apple juice in the pot, add 4 tablespoons of sugar and vanilla sugar and cook until the sugar has dissolved. Add the pudding and apple juice to the mixture constantly whisking as you pour and cook the cream.
4) Add the apples to the hot cream and stir.


You can use this filling immediately if you use store bought biscuit crusts or plain biscuits (crackers like) or you can bake in the oven if you use a biscuit that needs to be baked, and you can also serve with the whipped cream or ice cream.

Poslasticarski krem bez brasna (Pastry cream without flour)

Sastojci: 6 zumanaca. 130g secera, 630ml mleka, 40g gustina, 50g margarina (sobne temperature), 1 1/2 kasike vanila ekstrakta, prstohvat soli.

Priprema:
1) Umutiti zumanca sa secerom rucnim mikserom. 
2) U serpu staviti mesavinu jaja sa secerom i dodati mleko, gustin i so. Na srednjoj temperaturi kuvati krem stalno mesajuci. Ostaviti da se ohladi.
3) Kada se krem ohladio dodati margarin i sjediniti. Dodati vanila ekstrakt i jos jednom promesati.

Ingredients: 6 egg yolks. 130g sugar, 630ml milk, 40g cornstarch, 50g margarine (room temperature), 1 1/2 tablespoons vanilla extract, a pinch of salt.

Preparation:
1) Whisk the egg yolks with a sugar with hand mixer.
2) Put egg mixture with sugar in the pot and add milk, cornstarch and salt. At medium temperature, cook the cream constantly stirring. Allow to cool.
3) When the cream has cooled add the margarine and combine. Add the vanilla extract and stir again.

Banana hleb sa kokosom i suvim vocem (Banana bread with coconut and dried fruits)

Sastojci: 300g brasna, 150g kokosovog brasna, 3 jaja, 200g secera, 6 banana, 350ml jogurta, 200ml ulja, 10g praska za pecivo, prstohvat soli, 100g seckanih badema (opcionalno), 150g suvog voca - 30g suvog grozdja, 30g suvih smokava, 30g suvih kajsija, 30g suvih sljiva, 30g suvih brusnica.

Priprema:
1) Suve smokve, kajsije i sljive iseckati. Pomesati brasno, kokosovo brasno, prasak za pecivo i so. Banane izgnjeciti.
2) Umutiti jaja sa secerom rucnim mikserom. Dodati jogurt i ulje i promesati kasikom. Dodati mesavinu brasna i izmesati kasikom. Dodati banane i suvo voce. 

Napomena: ako je pregusto dodati jos malo jogurta. 

3) U kalup za hleb staviti papir za pecenje, sipati smesu, posuti bademima i peci u prethodno zagrejanoj rerni na 180 C oko 60-80 minuta. Ostaviti da se ohladi pa izvaditi iz pleha.

Ingredients: 300g flour, 150g coconut flour, 3 eggs, 200g sugar, 6 bananas, 350ml buttermilk, 200ml oil, 10g baking powder, a pinch of salt, 100g chopped almonds (optional), 150g dried fruits - 30g raisins, 30g dried figs , 30g dried apricots, 30g prunes, 30g dried cranberries.

Preparation:
1) Cut figs, apricots and prunes. Mix flour, coconut flour, baking powder and salt. Mash bananas.
2) Whisk eggs with sugar with a hand mixer. Add buttermlk and oil and stir with a spoon. Add flour mixture and mix with a spoon. Add bananas and dried fruits.

Note: if it's too thick, add some more buttermilk.

3) Put the baking paper in the bread pan, pour the mixture, sprinkle with almonds and bake in a preheated oven at 180 C for about 60-80 minutes. Allow to cool and remove from the baking pan.

Reforma torta (Reform cake)

Sastojci: za kore - 12 belanaca, 250g secera, 300g mlevenih oraha. za fil - 12 zumanaca, 150g secera, 200g cokolade za kuvanje, 250g margarina (sobne temperature), malo ruma.

Priprema:
1) Odvojiti belanca od zumanaca. U ciniji mutiti belanca mikesrom dok ne postane penasto. Postepeno dodavati secer i dalje mutiti. Kasikom dodavati po malo oraha i mesati. 
2) U veliki pleh staviti papir za pecenje i sipati pola smese. Peci u prethodno zagrejanoj rerni na 180 C oko 20 minuta. Ostaviti da se ohladi pa iseci na dva dela. Ponoviti postupak za drugu koru.
3) Zumanca mutiti sa secerom. U serpicu sipati zumanca, staviti preko druge serpe sa vodom i kuvati na pari oko 20 minuta. Kada se smaesa ujednaci dodati cokoladu i nastaviti sa kuvanjem dok se cokolada ne otopi. Dodati rum i promesati. Ostaviti da se potpuno ohladi. Dodavati fil postepeno u margarin i mutiti mikserom. Fil podeliti na 4 dela.
4) Na tacnu redjati kora, fil, kora, fil, kora, fil, kora, fil.

Ingredients: crust - 12 egg whites, 250g sugar, 300g ground walnuts. for cream - 12 egg yolks, 150g sugar, 200g chocolate for cooking, 250g margarine (room temperature), some rum.

Preparation:

Add the mixture gradually to the margarine and mix with the mixer. Divid cream into 4 parts.

Belgijska juneca corba (Belgian beef stew)

Sastojci: 500g juneceg mesa, za marinadu - 1 crni luk, 4 cena belog luka ili 2 kasicice belog luka u prahu, 1 grancica ruzmarina svezeg, 1/2 kasicice suvog timijana, 4 kasike lista persuna (sitno seckanog), 2 kasike crvenog vinskog sirceta, 1 kasika senfa, maslinovo ulje, komad margarina, za corbu - 140ml belgijskog tamnog piva, 2 lista lovora, 400ml junece supe, 1 kasika meda, maslinovo ulje. 

Priprema:
1) Junece meso iseci na kocke. Crni i beli luk oljustiti i sitno iseckati. 
2) U plasticnu kesu staviti meso. U ciniji pomesati crni i beli luk, ruzmarin, timijan, persun, sirce i 2 kasike maslinovog ulja. Promesati dobro i dodati u kesu sa junetinom. Zatvoriti kesu i promesati sastojke. Ostaviti u frizideru najmanje 4 sata a moze i preko noci.
3) Izvaditi grancicu ruzmarina.
4) U serpu sipati 1 kasiku maslinovog ulja i komad margarina i ugrejati. Dodati meso sa sve marinadom i prziti dok ne postane braonkasto. 
 5) Dodati pivo, supu, listove lovora i med. Promesati. Kada provri smanjiti na srednje nisku temperaturu (3), poklopiti i krckati 1 sat i 30 minuta. Skinuti poklopac i krckati jos 30 minuta. Izvaditi listove lovora.
6) Senf namazati na hleb.

Predlog: posluziti uz krompir pire ili pecen krompir sa sosom od mirodjije.

Ingredients: 500g of beef meat, for marinade - 1 onion, 4 cloves of garlic or 2 teaspoons of garlic powder, 1 sprig of rosemary, 1/2 teaspoon of dried thyme, 4 tablespoons of parsley leaf (finely chopped), 2 tbsp of red wine vinegar, 1 tablespoon of mustard, olive oil, a piece of margarine, for stew - 140ml of Belgian dark beer, 2 bay leaves, 400ml of beef soup, 1 tablespoon of honey, olive oil.

Preparation:
1) Cut the meat into cubes. Peel the onion and garlic and finely chop.
2) Put the meat into the plastic bag. In a bowl mix the onion, garlic, rosemary, thyme, parsley, vinegar and 2 tablespoons of olive oil. Stir well and add to the beef bag. Close the bag and mix the ingredients. Leave it in the fridge for at least 4 hours and even overnight.
3) Remove the rosemary sprig.
4) In a pot, pour 1 tbsp of olive oil and a piece of margarine and heat. Add the meat with all the marinade and fry until it is brown.
5) Add beer, soup, bay leaves and honey. Stir. When it boils reduce to medium-low temperature (3), cover and simmer for 1 hour and 30 minutes. Remove the lid and simmer for another 30 minutes. Remove the bay leaves.
6) Put mustard on the bread.


Suggestion: serve with mashed potatoes or baked potatoes with dill cream.

Salata od brokolija i karfiola sa slaninom (Broccoli and cauliflower salad with bacon)

Sastojci: 1 brokoli, 1 karfiol. 200g majoneza, 250g kisele pavlake, 200g slanine.

Priprema:
1) Pripremiti brokoli i karfiol.
2) Pomesati majonez i kiselu pavlaku. Slaninu iseckati na kocke.
3) Razdvojiti brokoli i karfiolna cvetove. Brokoliju iseci drske.
4) U serpu sa kljucalom vodom dodati karfiol i kuvati 12 minuta. Izvaditi resetkastom kasikom. Staviti u ciniju sa hladnom vodom 3-4 minuta da se prekine proces kuvanja. Dodatu drske brokolija i kuvati 7 minuta. Dodati cvetove brokolija i kuvati sve zajedno jos 3 minuta, Staviti u ciniju sa hladnom vodom 3 minuta da se prekine proces kuvanja.  
5) U ciniji pomesati brokoli, karfiol, mesavinu majoneza i kisele pavlake i slaninu.

Napomena: kako se priprema brokoli tako se isto priprema i karfiol (slana kupka). 

Ingredients: 1 broccoli, 1 cauliflower. 200g mayonnaise, 250g sour cream, 200g bacon (raw).

Preparation:
1) Prepare broccoli and cauliflower.
2) Mix mayonnaise and sour cream. Chop the bacon into cubes.
3) Separate broccoli and cauliflower into flowers.  Cut the stems of broccoli.
4) Add cauliflower to boiling water and cook for 12 minutes. Remove with a slotted spoon. Put in cold water for 3-4 minutes to stop the cooking process. Add the stems of broccoli and cook for 7 minutes. Add broccoli flowers and cook all together for 3 minutes, Put in cold water for 3 minutes to stop the cooking process.
5) In a bowl mix the broccoli, cauliflower, mayonnaise mixture and bacon.


Note: as broccoli is prepared, so is cauliflower (salt bath).

Indijski przen krompir i patlidzan (Indian stir fry potato and eggplant)

Sastojci: 3-4 patlidzana, 2 krompira, 2 paradajza ili 200ml soka od paradajza, 1 crni luk, 4 cena belog luka, 1/3 kasicice djumbira u prahu, lisce korijandera, 1/2 kasicice kima, 1/4 kasicie kurkume, 1 kasicica korijandera u prahu, maslinovo ulje, so.  

Priprema:
1) Patlidzan i krompir oprati, oljustiti i iseckati na kocke ili trakice. Paradajz ocistiti i iseci na kocke. Crni i beli luk oljustiti i sitno iseckati. Korijander sitno iseckati.
2) U dubljem tiganju staviti ulje i zagrejati. Smanjiti te srednju temperaturu. Dodati kim i mesajuci prziti nekoliko sekundi. Dodati belik luk i prziti dok ne pusti miris. Dodati crni luk i prziti dok ne postane staklast.
3) Dodati paradajz, pokriti i kuvati na srednjoj temperaturi (4) dok se ne raspadne. Ako koristite sok od paradajza kuvati nekoliko minuta.
4) Dodati krompir, djumbir, kurkumu  korijander. Promesati. Poklopiti i kuvati 10 minuta. 
5) Dodati patlidzan, promesati, poklopiti i kuvati jos 15 minuta. Ako je potrebno dodati malo vode. 
6) Dodati korijander, promesati i kuvati jos 2 minuta.

Ingredients: 3-4 eggplants, 2 potatoes, 2 tomatoes or 200ml tomato juice, 1 onion, 4 cloves of garlic, 1/3 teaspoon of ginger powder, coriander leaves, 1/2 teaspoon cumin, 1/4 teaspoon turmeric, 1 tsp coriander powder, olive oil, salt.

Preparation:
1) Wash the eggplants and potatoes, peel and chop them into cubes or strips. Peel the tomatoes and cut them into cubes. Peel garlic and onion and finely chop. Finely chop the coriander.
2) In a deep frying pan, place oil and heat. Reduce heat to medium. Add cumin and stir fry for a few seconds. Add garlic and fry until fragrant. Add the onion and fry until it is glassy.
3) Add the tomatoes, cover and cook over medium heat (4) until tender. If using tomato juice, cook for a few minutes.
4) Add potatoes, ginger, turmeric coriander. Stir. Cover and cook for 10 minutes.
5) Add eggplants, stir, cover and cook for another 15 minutes. Add some water if needed.

6) Add the coriander leaves, stir and cook for another 2 minutes.

Kineski przeni rezanci sa povrcem (Chinese fried noodles with vegetables)

Sastojci: 300g rezanaca, 500g svezeg kupusa (rendanog), 150g sargarepe, 3 paprike babure (1 zelena, 1 zuta, 1 crvena), 60g mladog luka, 4 cena belog luka, 1 crni luk, 2 kasike soja sosa, 3 kasike kecapa, 1 kasika jabukovog sirceta, maslinovo ulje, so.

Priprema:
1) Sargarepu oprati, oljustiti, oprati i iseci na trakice. Paprike oprati, ocistiti od semenki i iseci na trake. Mlad luk oljustiti, oprati i odvoji zeleni i beli deo. Sitno iseckati oba dela. Beli luk i crni luk oljutiti i sitno iseckati. Pomesati kecap, sirce i soja sos i posoliti po ukusu.

4) Dodati mesavinu sosa i promesati i prziti jos 1 minut. Dodati rezanca i prziti mesajuci jos 3 minuta.
5) Dodati zeleni deo mladog luka. Promesati.

Ingredients: 300g noodles, 500g fresh cabbage (grated), 150g carrots, 3 bell peppers (1 green, 1 yellow, 1 red), 60g green onions, 4 colves of garlic, 1 onion, 2 tbsp of soy sauce, 3 tbsp of ketchup , 1 tbsp of apple cider vinegar, olive oil, salt.

Preparation:
1) Wash, peel, wash and cut the carrots into strips. Wash peppers, remove seeds and cut into strips. Clean the green onions, wash and separate the green and white parts. Finely chop both parts. Peel the garlic and onion and finely chop. Mix the kecap, vinegar and soy sauce and salt to taste.

Vegan majonez (Vagan mayo)

Sastojci: 250ml maslinovog ulja, 125ml soja mleka (ne zasladjenog), 2 kasicice jabukovog sirceta, 1/2 kasicie soli. 

Priprema:
1) Staviti soja mleko, sirce i so u teglu i malo stapnim mikserom promesati.
2) Postepeno dodavati ulje i nastaviti sa stapnim mikserom da mutite.

Napomena: mleko i ulje moraju biti iste temperature, sobne. Ako je smesa previse gusta dodati malo sojinog mleka, a ako je previste retka dodati ulja.

3) Cuvati u frizideru.

Ingredients: 250ml olive oil, 125ml soy milk (not sweetened), 2 tsp apple cider vinegar, 1/2 tsp salt.

Preparation:
1) Put the soy milk, vinegar and salt in a jar and mix with a stick mixer.
2) Gradually add oil and continue with the stick mixer to blend.

Note: milk and oil must be at the same temperature, room temperature. If the mixture is too thick add some soy milk and if it is too watery add oil.


3) Store in the refrigerator.
