Sastojci (4 pljeskavice): 300 g fileta oslića, 1 jaje, 2–3 kašike prezli, 1 kašičica soka od limuna, 1 kašika svežeg lista peršuna (sitno seckanog) ili sveže mirođije (sitno seckane), so, biber po ukusu.
Priprema:
1. Filet oslića izgnječite viljuškom u glatku masu.
2. Dodajte jaje, prezle, peršun, limun, so i biber. Dobro promešajte.
3. Oblikujte 4 pljeskavice srednje veličine.
U tiganju:
4. Pecite na tiganju sa malo ulja 3–4 minuta sa svake strane dok ne dobiju zlatnu koricu.
5. Lagano podmazati tiganj uljem ili puterom da se ne lepe.
6. Okrenuti pljeskavice samo jednom kada donja strana dobije zlatnu boju.
Ako koristiš deblje pljeskavice, možeš poklopiti tiganj 1–2 minuta da se lepo ispeku i iznutra.
U rerni:
7. Zagrejte rernu na 200 °C - 392 °F (gornje i donje grejanje).
8. Pleh obložite papirom za pečenje.
9. Oblikovane pljeskavice poređajte na pleh.
10. Lagano ih premažite ili poprskajte sa vrlo malo ulja (pomaže da dobiju koricu i da se ne isuše).
11. Pecite oko 12–15 minuta sa jedne strane.
12. Pažljivo ih okrenite i pecite još 10–12 minuta sa druge strane.
Pljeskavice su gotove kada dobiju blago zlatnu boju i čvrstu strukturu.
Saveti da ostanu sočne:
- Ako je masa mekša, možete dodati još malo prezli pre oblikovanja.
- Možete staviti mali komadić putera na svaku pljeskavicu pre pečenja za dodatnu sočnost.
- Nemojte ih prepeći – oslić je nemasna riba i može se brzo isušiti.

Prilozi uz soseve i pljeskavice od oslića:
- kuvani krompir sa peršunom
- zelena salata
- krastavac salata ili caciki stil salate
Ingredients (4 burgers): 300 g of hake fillets, 1 egg, 2-3 tablespoons of breadcrumbs, 1 teaspoon of lemon juice, 1 tablespoon of fresh parsley (finely chopped) or fresh dill (finely chopped), salt, pepper to taste.
Preparation:
1. Mash the hake fillets with a fork into a smooth mass.
2. Add egg, breadcrumbs, parsley, lemon, salt and pepper. Mix well.
3. Form 4 medium-sized burgers.
In the pan:
4. Fry in a pan with a little oil for 3-4 minutes on each side until they get a golden crust.
5. Lightly grease the pan with oil or butter so that they do not stick.
6. Turn the burgers only once when the underside is golden.
If you are using thicker burgers, you can cover the pan for 1-2 minutes so that they are nicely cooked on the inside as well.
In the oven:
7. Preheat the oven to 200 °C - 392 °F (top and bottom heat).
8. Line a baking sheet with baking paper.
9. Arrange the shaped burger s on the baking sheet.
10. Lightly brush or spray them with a very small amount of oil (this helps them to get a crust and not dry out).
11. Bake for about 12–15 minutes on one side.
12. Carefully turn them over and bake for another 10–12 minutes on the other side.
The burgers are ready when they are lightly golden and have a firm texture.
Tips for keeping them juicy:
- If the dough is softer, you can add a little more breadcrumbs before shaping.
- You can put a small piece of butter on each burger before baking for extra juiciness.
- Do not overcook them – hake is a lean fish and can dry out quickly.
You can serve hake burgers with one of these sauces:
- 3 sauces for jerk sandwiches
- Creamy garlic and yogurt sauce
Side dishes for hake burgers and sauces:
