Sastojci (za 2 porcije): 200 g mlevene junetine (po mogućstvu 15% masnoće), prstohvat soli, prstohvat mlevenog crnog bibera, 100 g cedar sira (isečenog na tanke kriške, ili kockice), 2 zemičke za pljeskavice, 1–2 lista zelene salate, majonez, kečap, za hrskavu koricu - 100 g kukuruznog brašna, 50 g pšeničnog brašna, ½ kašičice aleve paprike u prahu, ½ kašičice belog luka u prahu, ¼ kašičice čili praha (opciono, za pikantnost), 50 ml hladnog mleka, 1 jaje.
Priprema:
Priprema mesa
1. U činiji pomešaj mlevenu junetinu, so i biber. Nemoj previše mesiti da pljeskavice ne bi postale tvrde. Podeli smesu na 2 jednaka dela i oblikuj pljeskavice.
Punjenje sirom
2. U sredinu svake pljeskavice lagano utisni cheddar sir (kriške ili kockice), pa pažljivo zatvori meso oko sira tako da sir ostane u centru. Blago spljošti.
Priprema smese za paniranje
3. U jednoj posudi umuti jaje sa mlekom.
4. U drugoj posudi pomešaj kukuruzno brašno, pšenično brašno, alevu papriku, beli luk u prahu i čili prah (ako koristite).
Paniranje
5. Svaku pljeskavicu prvo uvaljaj u smesu sa jajetom i mlekom, zatim u suvu smesu sa brašnom. Po želji možeš ponoviti postupak za ekstra hrskavu koricu.
Prženje
6. U tiganju zagrej ulje na srednje jakoj vatri (5).
7. Prži pljeskavice 4 do 5 minuta sa svake strane, dok ne dobiju duboku zlatno-smeđu boju i dok se sir unutra ne otopi. Ne pritiskaj pljeskavice tokom prženja.
Sklapanje burgera
8. Zemičke po želji kratko zagrej ili tostiraj.
9. Na donju polovinu stavi zelenu salatu, zatim pljeskavicu, dodaj majonez i kečap, pa poklopi drugom polovinom zemičke.
Napomena:
Zbog sadržaja sira i prženja, ovo jelo je energetski bogato i najbolje ga je konzumirati povremeno. Kao balans, preporučuje se serviranje uz svežu salatu ili povrće bez dodatnih masnoća.
Saveti i varijacije
- Umesto prženja, pljeskavice se mogu peći u rerni na 200 °C (392 F) oko 18–20 minuta, uz okretanje na polovini vremena.
- Za jači ukus možeš dodati malo rendanog parmezana u smesu za paniranje.
- Ako želiš blažu verziju, izostavi čili prah i koristi mlečniji cedar sir

Hrskave pljeskavice punjene i obložene cedar sirom kombinuju sočnost junetine i izrazitu teksturu hrskave korice. Spolja zlatne i hrskave, iznutra mekane i pune topljenog sira, idealne su kao bogat obrok ili “hrana za dusu” vikendom. Paniranje sa kombinacijom kukuruznog i pšeničnog brašna daje dodatnu hrskavost, dok začini naglašavaju ukus mesa bez da ga prekrivaju.

Ingredients (for 2 servings): 200 g of ground beef (preferably 15% fat), a pinch of salt, a pinch of ground black pepper, 100 g of cheddar cheese (cut into thin slices or cubes), 2 burger buns, 1–2 lettuce leaves, mayonnaise, ketchup, for a crispy crust - 100 g of corn flour, 50 g of wheat flour, ½ teaspoon of sweet paprika powder, ½ teaspoon of garlic powder, ¼ teaspoon of chili powder (optional, for spiciness), 50 ml of cold milk, 1 egg.
Preparation:
Meat preparation
1. Mix ground beef, salt and pepper in a bowl. Don't mix (knead) too much so that the burgers won't become hard. Divide the mixture into 2 equal parts and shape into burgers.
Cheese filling
2. Gently press cheddar cheese (slices or cubes) into the center of each patty, then carefully close the meat around the cheese so that the cheese remains in the center. Flatten slightly.
Preparing the breading mixture
3. In one bowl, beat the egg with milk.
4. In another bowl, mix the corn flour, wheat flour, sweet paprika powder, garlic powder, and chili powder (if using).
Breading
5. Roll each burger first in the egg and milk mixture, then in the dry flour mixture. You can repeat the process for an extra crispy crust if desired.
Frying
6. Heat the oil in a frying pan over medium heat (5).
7. Fry the burgers for 4 to 5 minutes on each side, until they are deep golden brown and the cheese is melted inside. Do not press the patties while frying.
Assembling the burger
8. Briefly heat or toast the buns if desired.
9. Place lettuce on the bottom half, then the burger, add mayonnaise and ketchup, and cover with the other half of the bun.
Note:
Due to the cheese and frying content, this dish is high in energy and is best consumed occasionally. For balance, it is recommended to serve with fresh salad or vegetables without additional fat.
Tips and variations
- Instead of frying, the burgers can be baked in the oven at 200 °C (392 F) for about 18–20 minutes, turning halfway through.
- For a stronger flavor, you can add a little grated Parmesan cheese to the breading mixture.
- For a milder version, omit the chili powder and use a milkier cheddar cheese.
