Cile kon keso (en. chile con queso) je topli, kremasti sos od sira poreklom iz Teks-Meks kuhinje, koji se najčešće služi uz nacose, tortilja čips, buritose ili takose.

U osnovi, to je rastopljeni sir sa dodatkom čili papričica, a po potrebi i drugih sastojaka.

Osnovne karakteristike:

- Tekstura: glatka, gusta i kremasta (više kao sos nego kao klasično topljeni sir)

- Ukus: blag do srednje ljut, sirast i pun

- Temperatura: služi se topao

Najčešći sastojci:

- kackavalj sir (američki sir, cedar sir ili mešavina topljivih sireva)

- čili papričice (najčešće zelene, blage)

- mleko ili pavlaka za kuvanje 15-20% mm ili kisela pavlaka 

- puter

- ponekad luk, beli luk, paradajz ili začini

Važno je razlikovati:

- Cile kon keso (en. chile con queso) – sos od sira sa čilijem

- Keso sos za umakanje (en. queso dip ili en. queso sauce) - kolokvijalni nazivi za isto ili vrlo slično jelo

- Cili kon karne (en. Chili con carne) – potpuno drugo jelo (mesni čili), često se meša zbog imena

Ukratko: cile kon keso nije samo sir, već topli sirni sos sa čilijem, posebno osmišljen za umakanje i prelivanje.

Chile con queso is a warm, creamy cheese sauce originating in Tex-Mex cuisine, most often served with nachos, tortilla chips, burritos, or tacos.

Basically, it is melted cheese with the addition of chili peppers, and optionally other ingredients.

Basic characteristics:

- Texture: smooth, thick and creamy (more like a sauce than a classic processed cheese).

- Taste: mild to medium hot, cheesy and full.

- Temperature: served warm.

The most common ingredients:

- yellow cheese (American cheese, cheddar cheese or a mixture of melting cheeses)

- chili peppers (most often green, mild)

- milk or cooking cream 15-20% fat or sour cream

- butter

- sometimes onions, garlic, tomatoes or spices

It is important to distinguish between:

- Chile con queso – cheese sauce with chili

- Queso dip or queso sauce - colloquial names for the same or very similar dish

- Chili con carne – a completely different dish (meat chili), often confused because of the name

In short: chile con queso is not just cheese, but a warm cheese sauce with chili, specially designed for dipping and topping.
