How to clean and prepare quinces? (Kako ocistiti i pripremiti dunje?)

Quince fuzz removal

1. Before washing, wipe each quince well with a dry cloth or paper towel to remove the surface layer of fuzz.

Washing quince

2. Thoroughly wash the quinces under a stream of cold water to remove the remaining dust and impurities.

Cutting quince

3. Since quinces are extremely hard, use a sharp knife and a stable board.

4. Cut the quince in half, then cut each half into quarters.

5. Cut out the hard core with the seeds from each quarter. This is the hardest part of the fruit, so be careful when cutting.

Peeling the quince (if needed)

6. If you are making sweet preserve (whole fruits in syrup), jam or compote, you can leave the peel because it contains a lot of pectin that helps the mixture thicken naturally.

7. If the recipe calls for peeled quinces, use a vegetable peeler.

Preventing quince darkening

8. Quince oxidizes very quickly and darkens in the air. To prevent this, immediately place the cut pieces in a bowl of cold water into which you have squeezed the juice of one lemon.

How to choose quinces in the store?

1. Quince color

Choose quinces that have a nice, bright yellow color (lemon color). The yellow color is a sign that the quince is ripe. If it has greenish shades, it means that it was harvested too early and will not develop its full aroma.

2. The smell of quince

Ripe and high-quality quince has a strong, fragrant and characteristic fruity smell that is felt as soon as you approach it. If it doesn't smell at all, it's probably still green.

3. Firmness and texture of quince

Quince is a hard fruit by nature, but to the touch it should be firm and heavy for its size. Avoid fruits that are too soft in some places, because this indicates that they have started to rot from the inside.

4. Appearance of the skin

Minor brown spots or scratches on the skin are completely normal. However, avoid quinces that have large dents, cracks or black soft spots.

5. Quinces fuzz

Natural quince has fuzz on it, this is a good sign that it is not too dry or old, but the fuzz themselves do not affect the quality of the fruit.

6. If you don't plan to prepare them right away, you can also take those with mild green shades. Leave them at room temperature for a few days and they will quickly turn yellow and smell good.

Uklanjanje dlakica sa dunja

1. Pre pranja, suvom krpom ili papirnim ubrusom dobro obrisite svaku dunju kako biste skinuli povrsinski sloj sitnih dlakica.

Pranje dunja

2. Temeljno operite dunje pod mlazom hladne vode kako biste uklonili preostalu prasinu i necistoce.

Secenje dunja

3. Posto su dunje izuzetno tvrde, koristite ostar noz i stabilnu dasku.

4. Presecite dunju napola, a zatim svaku polovinu na cetvrtine.

Sprecavanje potamnjivanja dunja

 Kako izabrati dunje u prodavnici?

1. Boja dunja

3. Tvrdoca i tekstura dunja
