Beetroot salad for hypothyroidism (Cvekla salata za hipotireozu)

Ingredients (for 2-3 servings): 250 g of cooked beets, 1 chicken fillet (about 200 g), 1 cooked egg, 100 g of sour cream, 100 g of Greek yogurt, 2 Brazil nuts (finely chopped) or 1 tablespoon of walnuts or almonds (finely chopped), fresh parsley leaf (finely chopped, optional)

Preparation:

1. Cook the chicken fillet. Cool and finely chop.

2. Cook the beets. Drain and cut into cubes or chop briefly in a chopper.

3. Peel and finely chop the boiled eggs.

4. Combine chicken, beetroots and eggs in a bowl.

5. Add sour cream, Greek yogurt, finely chopped Brazil nuts and parsley leaf (if using).

6. Mix everything well until the ingredients are evenly distributed.

7. Cover and leave in the refrigerator for at least 1 hour before serving.

Note for hypothyroidism:

  • This beetroot salad contains more protein thanks to the eggs and Greek yogurt, and the Brazil nuts contribute to the intake of selenium, a mineral that participates in the normal function of the thyroid gland.
  • Cooked beets are often a better choice as they usually contain less salt and no added sugar that is sometimes found in jars.


Sastojci (za 2-3 porcije): 250 g kuvane cvekle, 1 pileći file (oko 200 g), 1 kuvano jaje, 100 g kisele pavlake, 100 g grckog jogurta, 2 brazilska oraha (sitno seckana) ili 1 kašika oraha ili badema (sitno seckanih), svež list peršuna (sitno seckan, opciono)

Priprema:

1. Pileci file skuvati. Ohladiti i sitno iseckati.

2. Cveklu skuvati. Ocediti i iseći na kockice ili kratko usitniti u secku.

3. Kuvana jaja oljuštiti i sitno iseckati.

4. U posudi sjediniti piletinu, cveklu i jaja.

5. Dodati kiselu pavlaku, grčki jogurt, sitno seckane brazilske orahe i list peršuna (ako koristite).

6. Sve dobro promešati dok se sastojci ravnomerno ne rasporede.

7. Poklopiti i ostaviti u frižideru najmanje 1 sat pre serviranja.

Napomena za hipotireozu: 

  • Ova cvekla salata sadrži više proteina zahvaljujući jajima i grčkom jogurtu, a brazilski orasi doprinose unosu selena, minerala koji učestvuje u normalnoj funkciji štitne žlezde.
  • Kuvana cvekla je često i bolji izbor jer obično sadrži manje soli i nema dodatog šećera koji se ponekad nalazi u teglama.
