Crab burgers with chili for firefighters (Kraba pljeskavice sa cilijem za vatrogasce)

Juicy burgers with crab meat in chili sauce, with ginger aroma. The combination of seafood, fresh vegetables and creamy mayonnaise makes for a delicious protein-rich meal, ideal for a quick break during a shift or to bring for a shift.

Preparation time for the crab filling: 30 minutes.

Time to prepare burgers: 15 minutes.

Total preparation time: 45 minutes.

Ingredients (for 2 burgers): 

For the crab filling: 200 g of cleaned crab meat (or a good substitute for crab meat such as surimi), 1 tablespoon of olive oil, 2 cloves of garlic (finely chopped), 10 g of fresh ginger root (about 2 cm, finely grated), 2 tablespoons of tomato puree, 1 tablespoon of sweet chili sauce, 1 teaspoon of soy sauce or substitute for soy sauce, 1 teaspoon of sugar, 100 ml of water or fish broth, 1 tablespoon of corn starch (stirred in a little water), a pinch of salt, 1 teaspoon of lemon juice (5 ml);

For burgers: 2 burger buns, 1 tablespoon of butter, a few lettuce leaves, a few cucumber rings, 1-2 tablespoons of mayonnaise or lime mayonnaise (recipe follows).

Preparation:

1. In a frying pan, heat the olive oil at a medium temperature (4 out of 6) and briefly fry the garlic and ginger until fragrant.

2. Add tomato puree, sweet chili sauce, soy sauce or soy sauce substitute, sugar and water or broth, then stir.

3. Cook for 5-7 minutes until the sauce comes together and thickens slightly.

4. Pour in the corn starch mixture and cook for another 1 to 2 minutes until a thick, shiny sauce is obtained.

5. Add the crab meat or surimi and mix it gently so that it remains juicy and in larger pieces.

6. At the end, add lemon juice and remove from heat.

7. Toast the buns in butter until they become slightly crispy.

8. Place the lettuce on the lower part of the bun, then half the amount of crab and chili filling. Add cucumber rings and ½ or 1 tablespoon of mayonnaise or limeta mayonnaise, then close the burger with the other half of the bun.

Note:

If you use surimi, it is added only after the sauce has thickened and heated for a short time, about 2-3 minutes, to keep it tender, because longer cooking can make it rubbery.

Lime mayonnaise

Ingredients: 2 tablespoons of mayonnaise, 1 teaspoon of lime juice, a little lime peel (finely grated).

Preparation:

1. Mix all the ingredients and stir.


Sočne pljeskavice sa mesom krabe u čili sosu, sa aromam djumbira. Kombinacija morskih plodova, svežeg povrća i kremastog majoneza daje ukusan obrok bogat proteinima, idealan za brzu pauzu tokom smene ili obrok za poneti.

Vreme pripreme nadeva od krabe: 30 minuta.

Vreme pripreme pljeskavica: 15 minuta.

Ukupno vreme pripreme: 45 minuta.

Sastojci (za 2 pljeskavice): 

Za punjenje od kraba: 200 g ociscenog mesa krabe (ili kvalitetne zamene za meso krabe kao što je surimi), 1 kašika maslinovog ulja 2 čena belog luka (sitno seckana), 10 g korena svezeg đumbira (oko 2 cm, sitno relendanog), 2 kašike paradajz pirea, 1 kašika slatkog čili sosa, 1 kašičica soja sosa ili zamene za soja sos, 1 kašičica šećera, 100 ml vode ili ribljeg bujona, 1 kašika gustina - kukuruznog skroba (razmućenog u malo vode), prstohvat soli, 1 kašičica soka od limuna (5 ml);

Za pljeskavice: 2 zemicke za pljeskavice, 1 kašika putera, nekoliko listova zelene salate, nekoliko kolutova krastavca, 1-2 kasike majoneza ili limeta majoneza (recept sledi).

Priprema:

1. U tiganju zagrej maslinovo ulje na srednjoj temperaturi (4 od 6) i kratko proprži beli luk i đumbir dok ne zamirišu.

2. Dodaj paradajz pire, slatki čili sos, soja sos ili zamenu za  soja sos, šećer i vodu ili bujon, pa promešaj.

3. Kuvaj 5-7 minuta dok se sos ne sjedini i lagano zgusne.

4. Sipaj razmucen gustin i kuvaj još 1 do 2 minuta dok se ne dobije gust, sjajan sos.

5. Dodaj meso rakova ili surimi i lagano ga umešaj da ostane sočno i u većim komadima.

6. Na kraju dodaj sok od limuna i skloni sa sporeta.

7. Prepeci zemičke na puteru dok ne postanu blago hrskave.

8. Na donji deo zemičke stavi salatu, zatim pola količine nadeva od krabe sa cilijem. Dodaj kolutove krastavca i ½ ili 1 kasiku majoneza, pa zatvori pljeskavicu drugom polovinom zemičke.

Napomena:

Ako koristiš surimi dodaje se tek posle zgušnjavanja sosa i zagreva kratko, oko 2–3 minuta, da ostane nežno, jer duže kuvanje može da ga učini gumenastim.

Limeta majonez

Sastojci: 2 kašike majoneza, 1 kašičicu soka od limete, malo korice limete (sitno rendane).

Priprema:

1. Pomešajte sve sastojke i promešajte.
