Keks je često prvi sloj dezerta u casi, ali njegov izbor može potpuno promeniti ukus i teksturu celog dezerta. Neki keksi su neutralni i lako se kombinuju sa različitim kremovima i voćem, dok drugi imaju izražen ukus koji se odlično slaže sa određenim sastojcima, poput karamela, čokolade, kafe ili cimeta.
