Testenina sa povrcem (Pasta with vegetables)

UN Dijeta - ugljenihidrati dan,

Sastojci: 120g makarona, 150g pecurki, 1 patlidzan, 2 manje tikvice, 1 paradajza, 2 cena belog luka, 20ml maslinovog ulja, prstohvat soli, 2 kasike persunovog lista (svezeg, sitno seckanog) ili 1/2 kasicice suvog, 1/2 kasicice suvog origana.

Priprema

1) Oprati tikvice, oljustiti i iseci na kockice. Pecurke oprati, ocistiti i iseci na listove. Patlidzan oprati, oljustiti i iseci na tanke listove, malo posoliti i ostaviti da pusti vodu. Ocediti od vode. Beli luk oljustiti i sitno iseckati. Paradajz oprati, ocistiti i iseci na kocke.

2) U tiganj staviti ulje i dodati beli luk. Prziti dok ne pusti miris. Dodati pecurke, tikvice i patlidzan pa uz dodatak malo vode dinstati dok povrce ne omeksa. Dodati so, paradajz, persun, origano i nastaviti sa dinstanjem na srednje niskoj temperaturi (3) dok ne bude gotovo.

3) Skuvati makarone i kad su gotove preko njih staviti povrce.

Ingredients: 120g macaroni, 150g mushrooms, 1 eggplant, 2 smaller zucchini, 1 tomato, 2 garlic cloves, 20ml olive oil, a pinch of salt, 2 teaspoons parsley leaf (fresh, finely chopped) or 1/2 teaspoon dry, 1/2 teaspoon dried oregano.

Preparation

1) Wash the zucchini, peel and cut into cubes. Wash mushrooms, clean and cut into leaves. Wash the eggplant, peel it and cut it into thin leaves, add a little salt and let it drain. Drain the water. Peel a garlic clove and finely chop. Wash tomatoe, clean and cut into cubes.

2) Put oil in a pan and add garlic. Fry until it releases the fragrance. Add mushrooms, zucchini and eggplant and simmer with the addition of water until the vegetables soften. Add salt, tomato, parsley, oregano and continue to simmer on medium-low heat (3) until done.

3) Cook the macaroni and when they are done put the vegetables over them.
