Testo za princes krofne (Batter for princess donuts)

Sastojci: 250 ml vode, 125 g maslaca, prstohvat soli, 150 g oštrog brašna, 4 veća jaja (220-250 ml).

Priprema:

1. U serpu sipati vodu, so i margarin isecen na kocke. Na srednjoj temperaturi (4) povremeno mesati da se margarin otopi.

2. Dodavati brasno polako stalno mesajuci da se ne stvore grudvice. Mesati i dalje da se razbiju grudvice ako ih ima, ali i da se dobije kompaktna, gusta i glatka smesa.


3. Skloniti sa sporeta i ostaviti da se malo ohladi to jest da bude mlako.

4. Dodati jedno jaje i mesati ili kasikom ili mikserom dok se jaje ne sjedini sa smesom. Ponoviti sve isto sa ostala 3 jaja.

Napomena:

Ako su jaja mala, smesa će vam biti prečvrsta i krofne neće lepo narasti. 

Ako su jaja prevelika, smesa će biti retka pa će krofne splasnuti.

5. U poslastičarski špric sa zvezdastim nastavkom stavite smesu.

6. Pleh obloziti papirom za pecenje i istiskivati krugove precnika oko 4 cm. Ostavite dovoljno prostora između testa jer ce da naraste.

7. Peći u prethodno zagrejanoj rernu na 200 C oko 25 minuta, dok ne porumene.

Savet:

Ne otvarati rernu jer ce krofne splasnuti. 

8. Ostaviti da se ohlade.

9. Iseci na pola pa filovati kremom ili slagom.

10. Po zelji posuti secerom u prahu.

Ingredients: 250 ml of water, 125 g of butter (unsalted), a pinch of salt, 150 g of sharp flour, 4 large eggs (220-250 ml).

Preparation:

1. Pour water, salt and cubed margarine into a saucepan. At medium temperature (4), stir occasionally to melt the margarine.

2. Add flour slowly, constantly mixing so that no lumps form. Continue stirring to break up lumps if there are any, but also to obtain a compact, thick and smooth mixture.

3. Remove from the stove and let it cool a little, that is, it should be lukewarm.

4. Add one egg and mix with either a spoon or a mixer until the egg is combined with the mixture. Repeat the same with the other 3 eggs.

Note:

If the eggs are small, the mixture will be too firm and the donuts will not rise well.

If the eggs are too big, the mixture will be thin and the donuts will be flat.

5. Put the mixture in a pressure pastry syringe with a star attachment.

6. Cover the tray with baking paper and press out circles with a diameter of about 4 cm. Leave enough space between the dough as it will rise.

7. Bake in a preheated oven at 200 C for about 25 minutes, until golden brown.

Tip:

Do not open the oven because the donuts will go down.

8. Leave to cool.

9. Cut in half and fill with cream or whipped cream.

10. If desired, sprinkle with powdered sugar.
