Ustipci od bundeve (Pumpkin fritters)

Sastojci: 700 g bundeve, 130 g višenamenskog brašna, 150 g feta sira (izmrvljenog), ½ malog luka, 1 kašika mirođije (sitno iseckanog), 1 kašičica bibera, prstohvat mlevenog muškatnog oraščića, 2 jaja, za prženje - suncokretovo ulje, za pečenje - maslinovo ulje.

Priprema: 

1. Isecite bundevu na komade. Očistite crni luk i sitno iseckajte.

2. Pomešajte komade bundeve sa malo maslinovog ulja. Prebacite u tepsiju i prekrijte folijom. Pecite dok potpuno ne omekša, od 30 minuta do sat vremena, u zavisnosti od veličine vaših komada bundeve. Ostaviti da se ohladi.


3. Oljustiti bundevu.

4. Dodajte bundevu u činiju. Izgnječite viljuškom. 

5. Dodajte ostale sastojke jedan po jedan i nastavite da mešajte i gnječite dok ne dobijete gusto testo. 

Ako je testo previše mekano, dodajte još malo brašna.

6. Zagrejte 5 kašika ulja u tiganju sa debelim dnom na srednjoj vatri (4).

7. Koristite kutlaču da dodate testo u tiganj. Pržite ustipke dok donja strana ne dobije lepu boju, 2-3 minuta. Okrenite i pržite sve dok ne porumeni i bude peceno, još nekoliko minuta. 

8. Prebacite na tanjir prekriven papirnim ubrusima da se ocedi višak ulja.


Ingredients: 700 g pumpkin, 130 g all-purpose flour, 150 g feta cheese (crumbled),

½ small onion, 1 tbsp dill (finely chopped), 1 tsp pepper, pinch of ground nutmeg, 2 eggs, for frying - sunflower oil, for roasting - olive oil.

Preparation: 

1. Cut pumpkin into chunks. Clean onion and finely chop.

2. Mix the pieces of pumpkin with a little olive oil. Transfer to a roasting pan and cover with foil. Roast until completely soft, from 30 minutes to hour, depending on the size of your pumpkin chunks. Set aside to cool.

3. Peel pumpkin.

4. Add the pumpkin to a bowl. Mash with a fork. 

5. Add the other ingredients one at a time and keep mixing and mashing until you have a thick batter. 

If the batter is too soft, add a little more flour.

6. Heat 5 tbsps of oil in a thick-based frying pan over medium heat (4).

7. Use a ladle to add batter to the pan. Fry the fritters until the underside is nicely coloured, 2–3 minutes. Flip and fry until golden all over and cooked through, a couple of minutes more. 

8. Transfer to a plate covered with paper towels to drain off excess oil.
