Slatki bademov namaz (Sweet almond spread)

Sastojci (za oko 300 g namaza): 250 g sirovih badema (oljuštenih ili sa ljuskom) 20 g javorovog sirupa, (ili 20 g meda / 25 g urminog sirupa), 10 g hladno ceđenog bademovog ili suncokretovog ulja, 1 g fine morske soli (≈ ¼ kašičice), 5 g vanila ekstrakta ili 3 g praha od burbon vanile (opciono).

Priprema:

A) Pečenje badema

1. Rernu zagrej na 170 °C.

2. Bademi se rasporede u jednom sloju na pleh i peku 10–12 minuta, uz jedno mešanje na polovini.

3. Cilj je blago pečenje – da puste prirodna ulja, ali da ne potamne.

4. Izvadi bademe i ostavi ih 5–10 minuta da se malo ohlade (ne melju se vreli).

B) Blendiranje badema

5. Stavi bademe u snažan blender ili procesor hrane. Miksaj 3–5 minuta.

Prvo će biti brašnasti, zatim zrnasti, na kraju kremasti

Po potrebi pauziraj i sastruži ivice posude.

C) Dodavanje zaslađivaca

6. Dodati zaslađivač, ulje, so, vanilu.

7. Miksaj još 1–2 minuta dok ne dobiješ potpuno gladak, maziv namaz.

Ako želiš ređi namaz, dodaj još 5–10 g ulja ili 1–2 kašike tople vode i kratko izmiksaj.

8. Sipaj u sterilizovanu staklenu teglu.

9. Čuvaj u frižideru do 10 do 12 dana.

Opis

Ovo je čist, prirodan slatki bademov namaz bez mleka, margarina i rafinisanog šećera. Tekstura je glatka, a ukus blag i prirodno sladak.

- koristiti oljuštene bademe (lakši za varenje)

- bez jakih aroma (vanila je u redu, ali bez cimeta ili kakaa)

B) Blending almonds

5. Place the almonds in a powerful blender or food processor. Mix for 3-5 minutes.

First it will be floury, then grainy, finally creamy.

If necessary, pause and scrape the edges of the bowl.

C) Addition of sweeteners

6. Add sweetener, oil, salt, and vanilla.

7. Mix for another 1-2 minutes until you get a completely smooth, spreadable spread.

If you want a thinner spread, add another 5-10 g of oil or 1-2 tablespoons of warm water and mix briefly.

8. Pour into a sterilized glass jar.

9. Store in the fridge for up to 10 to 12 days.

Description

This is a pure, natural sweet almond spread without milk, margarine (butter) and refined sugar. The texture is smooth, and the taste is mild and naturally sweet.

How to adapt the recipe for children?

- use peeled almonds (easier to digest)

- reduce the sweetener to 10 g or use only the natural sweetness of almonds

- without added oil or a maximum of 5 g

- no strong aromas (vanilla is fine, but no cinnamon or cocoa)

Example of a children's version: 250 g of peeled almonds, 10 g of maple syrup (or without sweeteners), 1 g of sea salt, 1–2 tablespoons of warm water for texture.

How to offer a child?

- Spread thinly on bread or pancake or crepes

- Mixed in porridge (oatmeal, rice)

- Never on a spoon (because of the density)

Important note:

Almond spread is rich in energy, so the portion for a child is small:

- 1-2 teaspoons are quite enough
