Krem od mleka sa gustinom i zacinima (Milk cream with corn starch and spices)

Sastojci: 400 ml mleka, 1 žumance, 2 kašike šećera, 1 kašika gustina (kukuruznog skroba), 1 kašičica ekstrakta vanile, ¼ kašičice cimeta + prstohvat muskatnog oraščića (božićni ton).

Priprema:

1. U manjoj činiji umuti žumance sa šećerom dok ne pobledi i postane blago penasto. 

2. Dodaj gustin i dobro izmešaj da nema grudvica.

3. U šerpi zagrej mleko na srednjoj temperaturi do ivice ključanja (da bude vruće, ali da ne provri).

4. Polako sipaj oko ⅓ toplog mleka u smesu sa žumancem, neprestano mešajući (temperiranje).

5. Vraćaj celu smesu u šerpu sa preostalim mlekom.

6. Kuvaj na tihoj (2) do srednje niskoj vatri (3) uz stalno mešanje žicom ili varjačom, dok se krem ne zgusne (2–4 minuta).

7. Skloni sa vatre, umešaj ekstrakt vanile, cimet i prstohvat muskatnog oraščića.

8. Prespi u činije. 

9. Ako želiš glatku površinu bez korice, prekrij providnom folijom direktno po kremu.

10. Ohladi ili posluži mlako, po želji.

Napomena:

- Krem će se dodatno stegnuti hlađenjem. 

- Odličan je samostalno ili kao punjenje za kolače. 🎄


Ingredients: 400 ml of milk, 1 egg yolk, 2 tablespoons of sugar, 1 tablespoon of corn starch, 1 teaspoon of vanilla extract, ¼ teaspoon of cinnamon + a pinch of nutmeg (Christmas tone).

Preparation:

1. In a small bowl, beat the egg yolk with the sugar until pale and slightly foamy.

2. Add the corn starch and mix well so that there are no lumps.

3. In a pot, heat the milk at a medium temperature (4) to the point of boiling (so that it is hot, but not boiling).

4. Slowly pour about ⅓ of the warm milk into the egg yolk mixture, stirring constantly (tempering).

5. Return the whole mixture to the pot with the remaining milk.

6. Cook on low (2) to medium-low heat (3) with constant stirring with a wire or a whisk, until the cream thickens (2–4 minutes).

7. Remove from heat, stir in vanilla extract, cinnamon and a pinch of nutmeg.

8. Pour in bowls.

9. If you want a smooth surface without a crust, cover with transparent foil directly on top of the cream.

10. Cool or serve lukewarm, as desired.

Note:

- The cream will firm up further by cooling.

- It is excellent on its own or as a filling for cakes. 🎄
