Priprema kelja
1. Odvoji spoljašnje listove koji su oštećeni ili venu.
2. Iseci ili odvoji glavicu kelja na četvrtine, polovine ili listove, zavisno od recepta.
Pranje
3. Stavi listove ili isečene delove u veliku činiju sa hladnom vodom.
4. Lagano promešaj i ostavi 5–10 minuta da pesak i prljavština otpadnu.
5. Ako je kelj posebno zemljast, možeš ga isprati i pod mlazom hladne vode, list po list.
Uklanjanje tvrde korenaste žile
6. Za listove kelja, iseci tvrdu zilu.
7. Tanki listovi se mogu koristiti celokupni, a debeli samo nakon što se ukloni žila.
Seckanje
8. Za supu ili corbu: iseci kelj na trake širine 1–2 cm.
9. Za salatu: tanko nareži listove, po želji na trakice ili sitnije komade.

1. Vreme kuvanja u kipućoj vodi:
- Blago mekan (zadržava malo čvrstine) - 5–7 minuta
- Potpuno mekan (za corbe, pire ili za bebe) - 8–10 minuta
Vrlo mekan - 10–12 minuta
Saveti:
A) Stavi kelj u već ključalu vodu, ne u hladnu.
B) Dodaj prstohvat soli ako nije za bebu.
C) Ako želiš da zadrži više vitamina i boju, kuvaj poklopljeno najviše 7–8 minuta.
D) Ako ide u neko jelo:
- za corbe: oko 10 minuta
- za sarmu od kelja: 6–8 minuta
- za bebe (pire): 12–15 minuta

Prednost: zadržava više vitamina i intenzivniju boju.

- Na malo ulja ili putera 5–7 minuta
- Ako se doda malo vode i poklopi 7–9 minuta.
Savet: prvo kratko proprži beli luk, pa dodaj kelj.
D) Kuvanje u supi ili corbi
Dodaje se poslednjih 10–15 minuta kuvanja da se ne raskuva previše.

10. For stewing: you can roughly cut the leaves or cut them into larger pieces.
