Džem od belog duda (White mulberry jam)

Sastojci: 1 kg belog duda, 500 gr šećera, 250 ml vode, ½ kasicice limontusa.

Priprema:

1. Dudinje oprati.

2. Propasirati dudinje.

Sok od koprive (Nettle juice)

NAPOMENA: Ukoliko koristite sredstva za razređivanje krvi, lekove za snižavanje krvnog pritiska ili lekove za dijabetes, pre konzumacije bilo kakavog napitka sa koprivom, konsultovati se sa lekarom. Jos o merama opreza imate u clanku Kopriva za anemiju i kosu.

Sastojci: 30 komada vrhova mlade koprive, ⅛ kašičice konzervansa, 25 g limunske kiseline - limuntusa, 3 L vode, 3 sveža limuna, 3 kg šećera.

Priprema:

1. Listove operite i stavite na cistu kuhinjsku krpu da se ocedi višak vode. Isecite krajeve limuna i bacite. Isecite limun na kriške od 1 cm.

2. U činiju stavite listove koprive i limun. Prelijte vodom, prekrijte krpom i ostavite da odstoji 24 sata.

Sok od nane i limuna (Mint and lemon juice)

Sastojci: 1.5 L vode, 150 g secera monk voca (ili smedjeg secera ili kokosovog secera), 25 stabljika nane sa listovima, 5 g limuntusa, sok od 3 limuna.

Priprema:

0. Nanu oprati.

1. U serpu sipati vodu i secer i pustiti da prokljuca pa smanjiti na srednju temperaturu (4) i kuvati 4 do 5 minuta, povremeno mesajuci.

2. Ostaviti da se ohladi, da bude mlako.

Domace zele bombone (Homemade jelly candies)

Sastojci: 750ml vode, 65g gustina, 500g šećera, ½ kašičice limuntusa, 1 kasicica vanila ekstrakta, boja za kolace, još secera.


Priprema:

1. Pomesati 250ml vode, gustin i šećer da nema grudvica.

2. U serpu sipati 500ml vode i limuntus. Dodati mesavinu secera i gustina i mesajuci kuvati na srednjoj temperaturi (4) dok ne postane belicasto. Kuvati 45 minuta. Smesa ce da zapeni i pobeli.

Dzem od duda (Mulberry jam)

Sastojci: 2kg belog duda, 1kg secera, 500ml vode, 3g limuntusa ili sok od jednog limuna.


Priprema:

1. Dud oprati i propasirati.

2. Secer staviti u serpu i dodati vodu. Na srednjoj temperaturi (4) skuvati sirup. Kad se secer otopi kuvati dok se sirup ne zgusne.

Djoletov sirup od zove i limuna (Djole's syrup from elderberry and lemon)

Sastojci: 40 cvetova zove, 500 do 1 kg secera na 1 L soka od zove, 6 celih limunova, konzervans (opciono), limuntus u prahu (opciono), 4 L vode.

Priprema:

1. Oprati i potopiti cvetove zove u vodu.

2. Limun dobro oprati. Preseci limunove na pola i iscediti sok.

Kako napraviti mocarelu? (How to make mozzarella?)

Sastojci: 4 L hladnog mleka 3.2 % (nepasterizovanog), 8g limunske kiseline (limuntus) + 250ml hladne destilovane ili prokuvane vode, 1.6ml sirila (sirista) + 60ml destilovane ili prokuvane vode, 1 kasicica soli, rasol (za hladjenje mocarele) - 3 kasike soli, 3 kasike surutke, 1 L veoma hladne vode.

Priprema:

1) Rastvoriti sirilo u hladnoj vodi. Rastvoriti limunsku kiselinu u hladnoj vodi.

2) Sipati rastvorenu limunsku kiselinu serpu. Dodati mleko.

3) Polako zagrejati do 32 C (mleko pocinje sa se polako siri - zgrusava). Ako vidite da se sir ne siri zagrejte ga to 35 ili do 38 C.

Dzem od dunja (Quince jam)

Sastojci: 3kg dunja, 700ml vode, 2 kasicice limuntusa, 700g secera.

Priprema:
1) Dunje oljustiti i ocistiti. Iseckati na kocke.
2) U serpu sipati vodu i pustiti da prokljuca na srednjoj temperaturi (4). Dodati dunje i kuvati sa limutusom dok ne omeksaju.
3) Staviti u blender i usitniti.
4) Vratiti u serpu, dodati secer i kuvati do zeljene gustine. 
5) Sipati u oprane, zagrejane i sterilisane tegle. Pokriti krpom i ostaviti da se ohlade preko noci. Zatvoriti i drzati tegle naopako dok se ne pojede dzem (da se ne bi budj hvatala na povrsini).

Ingredients: 3kg quince, 700ml water, 2 tablespoons citric acid, 700g sugar.

Preparation:
1) Peel and clean the quince. Cut into cubes.
2) Pour water into the pot and let it boil over medium temperature (4). Add quince and cook with citric acid until softened.
3) Put in a blender and finely chop.
4) Return to the pot, add the sugar and cook until thickens as much as you like.
5) Pour into washed, warmed and sterilized jars. Cover with a cloth and allow to cool overnight. Close and hold the jars upside down until the jam is eaten (to prevent it from catching mold on the surface).

Sirup od koprive (Nettle syrup)

Dobije se oko 4 L sirupa.

Sastojci: 60 vrhova lista koprive, 3 L vode, 2 manja limuna, 1.2 kg meda, 60g limunske kiseline.

Priprema:
1) Oprati vrhove lista koprive, ako vec niste. Limun oljustiti i iseci na kocke.
2) U serpu staviti vrhove kopriva i preliti sa vodom. Ostaviri da prokljuca pa skloniti sa sporeta. 
3) Dodati limun i ostaviti da stoji 1 dan.
4) Procediti. Sipati u serpu i dodati med. Kuvati i mesati dok se med ne otopi.  
5) Ostaviti da se ohladi. Dodati limunsku kiselinu i mesati dok se ne otopi. 
6) Kada se sirup potpuno ohladio sipati u oprane i suve flase.

About 4 L of syrup is obtained.

Ingredients: 60 tops of nettle leaf, 3 L of water, 2 smaller lemons, 1.2 kg of honey, 60g of citric acid.

Preparation:
1) Wash the tops of nettle leaf, if you haven't already. Peel the lemon and cut into cubes.
2) Put the tops of the nettle in the pot and pour over the water. Allow it to boil and remove from the stove.
3) Add lemon and leave to stand for 1 day.
4) Drain. Pour in pot and add honey. Cook and stir until the honey has dissolved.
5) Allow to cool. Add citric acid and mix until dissolved.

6) When the syrup has cooled completely, pour it into the washed and dry bottles.

Domaci vocni sok (Homemade fruit juice)

Sastojci: 1 kg dunja, 1 kg jabuka, 1 kg krusaka, 1 kg sargarepe, 1,3 kg secera, 30g limuntusa, 10 L vode.

Priprema:
1) Dunje, jabuke i kruske oljustiti i iseci na kocke, a sargarepu na kolutove.
2) Dunje, jabuke i kruske kuvati u dubljoj serpi (preliti vodom da prekrije voce), dok ne omeksa. Sargarepu posebno kuvati. Ocediti.
3) Voce ispasirati, vratiti u serpu, dodati vodu, secer i limuntus i prokuvati.
Napomena: ako zelite gusci sok, doliti vode do 10 L ukupno.
4) Sok sipati u tople flase, uviti u krpe i ostaviti da se ohladi. Staviti celofan i zatvoriti poklopcem.

Ingredients: 1 kg quince, 1 kg of apples, 1 kg pears, 1 kg carrot, 1.3 kg of sugar, 30g citric acid, 10 L of water.

Preparation:
1) Peel quince, apple and pear and cut into cubes, cut carrots into slices.
2) Cook quince, apples and pears together (pour water to cover the fruit), in a deep pot, until soften. Cooked carrots separately. Drain.
3) Blend fruits, return to pot, add water, sugar and citrci acid and bring to boil.
Note: if you want denser juice, add water to 10 L total.
4) Pour the juice in warm bottles, coat in the cloth and leave to cool. Put cellophane and close lid.

Sok od pomorandzi (Orange juice)

Sastojci: 15 pomorandzi, 2kg secera, 1,5 l vode, 50g limuntusa.


Priprema:

1. U serpu staviti secer, naliti vodom i staviti da provri. 
2. Oljustiti pomorandze. Sacuvati polovinu kora.
3. "Meso" pomorandzi sitno iseckati i dodati u serpu sa secerom. 
4. Sacuvane kore dobro oprati, izrendati na sitno rende i dodati u serpu. Dodati limuntus. 
5. Sadrzaj u serpi promesati da se sjedini, pokriti cistom krpom i ostaviti 24 h da stoji. 
6. Sledeceg dana dobro promesati, procediti kroz sterilnu gazu i sipati u ciste, sterilisane flase.


Ingredients: 15 oranges, 2 kg sugar, 1.5 liters of water, 50g citric acid.


Preparation:
1. In a saucepan put the sugar, pour water and let it boil.
2. Peel off the oranges. Preserve half of the orange peel.
3. Oranges "meat" chop finely and add to pan with sugar.
4. Wash well orange peel, grate on the small chunks and add to pan. Add citric acid.
5. Stir well, cover with a clean cloth and leave to stand for 24 hours.
6. The next day stir well, strain through a sterile gauze and pour into clean, sterilized bottles.
