Palacinke od tikvica iz rerne (Oven-baked zucchini pancakes)

Sastojci: 280g tikvica, 2 jaja, 40g ovsenih pahuljica, 100g kačkavalja, za posipanje - semenke susama, lana, sunkcokreta i/ili bundeve.

Priprema:

1. Jaja blago umutiti viljuskom. Tikvice oljustiti i iseci na komade.

2. U blender staviti tikvice, jaja, ovsene pahuljice i kackavalj i izblendati.

Pileci file u sosu od senfa (Chicken filets in mustard sauce)

Sastojci: 500g pileceg filea, 4 kašike kisele pavlake (20% mm), 2 kašike senfa, 2 kasike susama, 2 kasike suncokreta ili semenki bundeve, so i bosiljak.

Priprema:

1. Pilece meso na malo ulja isprziti sa obe strane na srednjoj temperaturi (4), nekoliko minuta. Dodati malo vode, polu-poklopiti i krckati. Staviti na papirne ubruse da se ocedi od ulja.

2. U tiganj u kome se przilo meso, dodati susam, semenke suncokreta ili bundeve, so i bosiljak. Prziti nekoliko minuta mesajuci.

Pileci file u marinadi iz rerne (Chicken fillets in marinade from the oven)

Sastojci: 600g pileceg filea, za pohovanje - 2 jaja, 120g semenki suncokreta, 100g semenki bundeve, za marinadu - 100ml maslinovog ulja, 3 cena belog luka (izgnjecenog), 1 kasicica aleve slatke paprike ili ljute, po zelji, 1 kasicica estragona (suvog), 1 kasicica timijana (suvog), 1 kasika soka od limuna, rendana kota jednog limuna, morska so, biber.


Priprema:

1. Pomesati sastojke za marinadu i ostaviti sa strane.

2. Pileci file pomesati dobro sa marinadim i ostaviti u frizderu 3h a moze i preko noci.

Vegan cokoladne kuglice (Vegan chocolate balls)

Sastojci: 150g semenki suncokreta (oljustenog), 150g semenki bundeve (oljustene), 200g suvih kajsija, 200g suvih sljiva, 1 kasicica cimeta, 100g indijskih oraha, celih (ili oraha, pistaca, badema, lesnika, kikirikija), 200g čokolade, 2 kasike kokosovog ulja.

Priprema:

1. 75g semenki suncokreta samleti u prah, a 75g ostaviti cele. Semenke bundeve samleti u prah.

2. Posebno u blenderu ili seckalici samleti kajsije. Dobro ih usitniti.

Kuglice od kuvanog krompira (Boiled potato balls)

Sastojci: 2 kg krompira, 2 sargarepe, 1 koren persuna, 2 komada korena celera (oko 2cm), 1 kasicica belog luka (u prahu), 200g majoneza, 200g kikirikija (neslan, mleven), 150g susama (prepecen), 150g krekera ili pereca ili grisina (slanih, mlevenih), 150g lana, 150g semenki suncokreta, 150g semenke bundeve (mlevene).

Priprema:

1. Krompir oprati, oljustiti i iseci na manje komade. Sargarepu, koren persuna i celera oljustiti.

2. U serpu staviti krompir, sargarepu, koren persuna i celera i kuvati dok krompir ne omeksa. Izvaditi sargarepu, koren persuna i celera. Ocediti.

Hleb od mesanih celih zrna zitarica

Sastojci: 550ml vode, 200g spelte, 100g heljde u zrnu, 100g integralnog pirinca, 1 kasika psilijuma, 65g semenki sunckoreta, 65g semenki bundeve, 50g susama, 60ml maslinovog ulja, 6g praska za pecivo, 1/2 kasicice soli.

Priprema:

1) U blender staviti speltu, heljdu, pirinac i usitniti.

2) U vangli pomesati brasno i prasak za pecivo. Dodati psilijum semenke suncokreta i bundeve, susam, maslinovo ulje i so i mikserom umutiti.

Hleb od celih zrna psenica sa semenkama

Sastojci: 400g psenice, 65g ovsenih pahuljica, 65g razanih pahuljica, 65g jecmeih pahuljica, 70g susama, 30g semenki lana, 50g semenke suncokreta, 50g semenki bundeve, 1/2 kasicice soli.

Priprema:

1) Psenicu potopiti u vodu. Ostaviti 3 dana. Na svakih  8 sati menjati vodu. Pahuljice potopiti u vodu i ostaviti preko noci. Ocediti.

2) U blender staviti psenicu i usitniti dok ne dobijete glatku smesu.

Sladoled od meda i suncokreta (Honey and sunflower ice cream)

Potrebno: aparat za pravljenje sladoleda. Pogledati napomenu posle koraka 11).

Sastojci: osnova sladoleda: 60ml tamnog meda, 240ml slatke pavlake, 3 zumanaca (jaja srednje velicine), 120ml mleka (punomasnog), 25g secera, prstohvat soli (manji); 60g semenki suncokreta (sirovih), 10ml limun maslinovog ulja, 4g morske soli.

Priprema:

1) U tiganj staviti limun maslinovo ulje. Dodati semenke i promesati. Posoliti. Prziti na srednjoj temperaturi (4) mesajuci, dok ne pocnu da dobijaju braon boju. Ostaviti da se ohladi. Staviti u frizider da se ohlade.

2) Za osnovu sladoleda - u serpicu staviti med i na srednjoj temepraturi (4) blago zagrejati. 

3) U ciniju sipati slatku pavlaku. Dodati med i promesati. U drugu ciniju umututi zumanca.

Hleb bez glutena sa ovsenim pahuljicama (Bread without gluten with oat flakes)

Sastojci: 400g ovsenih pahuljica, 5 kasika susama, 185g semenki lana + 5 kasika mlevenog lana, 120g badema (sirovih sa ljuskom), 300g semenki suncokreta, prstohvat soli, 5 kasika kokosovog ulja (otopljenog), 500ml destilovane ili prokuvane vode.

Priprema:

1) U ciniju staviti ovsene pahiljice, susam, semenke lana, mleveni lan, badem, semenke sucokreta i so.

2) Dodati kokosovo ulje i vodu i promesati.

Povrtna salata sa amarantom i kinoom (Veggie amaranth and quinoa salad)

Sastojci: 400g kinoe, 150g amaranta (blago pecenog), 1 pecena paprika, 2 sargarepe, 300g spanaca, 80g semenki suncokreta, 2 cena belog luka, 2 kasike lista celera (sitno seckanog), 1 kasika sok od limuna, 1/2 kasicice kima, 1/2 kasicice crnog luka u prahu, 1/2 kasicice korijandera.

Priprema:

1) Skuvati kinou. Skuvati spanac i iseckati. Sargarepu oljustiti i iseci na kocke. Papriku iseci na trakice. Beli luk oljustiti i iseci sitno.

2) U serpu na malo ulja uljane repice, na srednjoj temperaturi proprziti beli luk dok ne pusti miris. Dodati sargarepu i celer i prziti jos 5 minuta. Dodati kim, crniluk i korijander i promesati. Dodati kinou i malo vode i kuvati 5 minuta.

Plocice sa ovsenim pahuljicama pecene u rerni (Bars with oat flakes baked in the oven)

Sastojci: 300g ovsenih pahuljica, 200g semenki bundeve, 130g susama, 130g semenki suncokreta, 150g razanog brasna, 150g integralnog psenicnog brasna, 50g heljdinog brasna, 50g speltinog brasna, 7g praska za pecivo, 70ml maslinovog ulja, 1/2 kasicice morske ili himalajske soli, 250-400ml vode, papir za pecenje..

Priprema:

1. U ciniji, pomesati ovsene pahuljice, semenke bundeve i suncokreta, susam, sve vrste brasna, prasak za pecivo i so.
2. Dodati ulje i 250 ml vode i promesati. Dodati jos vode onoliko koliko je potrebno da se masa sjedini. Smesa je gotova kad prestane da se lepi za prste.

Zamena za prezle (Substitute for bread crumbs)

Sastojci: 200g badema, 150g semenki od bundeve, 150g semenki od suncokreta.

Priprema:

1. Samleti sve sastojke.

Ingredients: 200g of almonds, 150g of pumpkin seeds, 150g of sunflower seeds.

Preparation:

1. Grind all the ingredients.

Hrskava salata (Crunchy salad)

Sastojci: 300g brokolija, 300g karfiola, 150g kupusa svezeg, 150g sargarepe, 4 kasike lista persuna (sitno seckanog), 2 kasike lista celera (sitno seckanog), 1 stabljika celera, 100g badema (na listice), 100g semenki suncokreta, 100g semenki bundeve, za preliv - 3 kasike maslinovog ulja, 4 kasike svezeg soka od limuna, 60ml vode, 1 kasika svezeg djumbira (rendanog) ili 1/4 kasicice djumbira u prahu, 2 kasike meda, so po ukusu.

Priprema:
1) Pripremiti brokoli i karfiol. Kupus na krupno izrendati. Sargarepu oljustiti i izrendati. Stabljiku celera iseckati na kockice. 
2) U ciniji pomesati sve sastojke.
3) Sastojke za preliv staviti u teglicu, zatvoriti i promuckati. Preliti preko salate.
4) Ostaviti u frizider 2 sata. 

Ingredients: 300g broccoli, 300g cauliflower, 150g fresh cabbage, 150g carrots, 4 tablespoons parsley leaves (finely chopped), 2 tablespoons celery leaves (finely chopped), 1 stalk of celery, 100g almonds (cut on the leaves), 100g sunflower seeds, 100g seeds pumpkin, for dressing - 3 tablespoons of olive oil, 4 tablespoons of fresh lemon juice, 60ml of water, 1 tablespoon of fresh ginger (grated) or 1/4 teaspoon of powdered ginger, 2 teaspoons of honey, salt to taste.

Preparation:
1) Prepare broccoli and cauliflower. Grate the cabbage coarsely. Peel and shred carrots. Chop the celery stalk into cubes.
2) In a bowl, mix all ingredients.
3) Put the topping ingredients in a jar, close and shake. Pour over salad.

4) Leave in the fridge for 2 hours.

Integralni hleb (Integral bread)

Sastojci: 500g integralnog brasna, 1 1/2 kasike suvog kvasca, 400 ml tople vode, 1 kasicica secera, 1/2 kasicice soli, 2 kasike mlevenog lana, 1 kasika cia semenki, 2 kasike semenki suncokreta, 2 kasike semenki bundeve, 2 kasike maslinovog ulja.

Priprema:
1) Pomesati toplu vodu sa kvascem i secerom i ostaviti 15 minuta da nadodje.
2) U brasno dodati so i promesati. Dodati kvasac i mesati. Dodati lan, cia, suncokret i bundevine semenke i promesati.
3) Na malo integralnog brasna staviti testo i mesiti 15 minuta. Staviti u ciniju testo i premazati sa 1 kasikom ulja sa svih strana. Pokriti i ostaviti na toplom da nadodje. 
4) Na malo integralnog brasna izvaditi testo i pesnicom udarati da izadje vazduh. Kratko premesiti testo pokriti i ostaviti da odmori 5 minuta. 
5) Pleh za hleb namazati uljem. Od testa napraviti oblik hleba i staviti u pleh. Pokriti i ostaviti jos 1 sat da nadodje. 
6) Peci u prethodno zagrejanoj rerni na 200 C 30 zatim na 220 C jos oko 10 do 15 minuta. Izvaditi iz rerne poprskati vodom i ostaviti da se ohladi.

Ingredients: 500g integral flour, 1 1/2 tablespoons of dry yeast, 400 ml of warm water, 1 tablespoon of sugar, 1/2 tablespoons of ground flax, 1 tablespoon of chia seeds, 2 tablespoons of sunflower seeds, 2 tbsp of pumpkin seeds, 2 tbsp olive.

Preparation:
1) Mix warm water with yeast and sugar and allow to stand for 15 minutes.
2) Add salt to the flour and stir. Add yeast and stir. Add flax, chia, sunflower and pumpkin seeds and stir.
3) Put the dough on the surface with integral flour and knead for 15 minutes. Put the dough in a bowl and coat with 1 tbsp of oil on all sides. Cover and set aside on warm to rise.
4) Put the dough on surface with integral flour and with a fist hit the dough. This removes air from the dough. Cover the dough and allow to rest for 5 minutes.
5) Grease the bread pan with oil. From the dough make the shape of the bread and put in a baking pan. Cover and allow another 1 hour to rise.
6) Bake in a preheated oven at 200 C 30 then at 220 C for another 10 to 15 minutes. Remove from the oven sprinkle with water and allow to cool.

Hleb od razi, psenice i prosa (Rye seeds, wheat and millet bread)

Sastojci: 150g razi, 150g psenice, 30g proso (oljusten), 50g semenki bundeve, 20g svezeg kvasca ili 7g suvog + 50ml vode + malo secera, 2 kasike mekinja, 2 kasike suncokretovih semenki, 2 kasike susama, 1/2 kasicice soli, komadic masti. 

Priprema:
1) Raz i psenicu potopiti u vodu, u posebnim posudama i ostaviti da stoji 48h. Proso potopiti u vodu i ostaviti da stoji 12h.
2) Staviti u cediljku i isprati. Ocediti. Potopiti kvasac u malo mlake vode i secera. Ostaviti 15 minuta da nadodje. Ako koristite svez kavasac izgnjeciti ga viljskom i promesati. Mekinje preliti sa 200ml mlake vode i ostaviti da stoji 10 minuta. Ocediti. Semenke suncokreta i susam malo preprziti. Ostaviti da se ohladi.
3) Samleti raz i psenicu u blenderu ili na masini za meso (dva puta). 
4) Pomesati raz i psenicu. dodati mekinje, sunkoret semenke, susam i semenke bundeve. Promesati. Dodati proso, kvasac i so. Zamesiti rukom, Smesa ce biti mekana. 
5) Ukljuciti rernu na 220 C. Kalup za hleb namazati mascu i sipati pola smese i prekriti mokrom krpom. Drugu polovinu sipajte u drugi pleh podmazan mascu i prekrite mokrom krpom. Dok se rerna greje ostaviti smesu da naraste. Kad se rerna ugrejala staviti da se pece. Kad je hleb pecen (proverite tako sto cete da zabodete cackalicu u sredinu, ako nema testa na njoj hleb je pecen) izvaditi iz pleha i umotati u cistu kuhinjsku krpu i ostaviti da se ohladi. 

Ingredients: 150g rye seeds, 150g wheat seeds, 30g millet (peeled), 50g pumpkin seeds, 20g fresh yeast or 7g dry + 50ml water + a little sugar, 2 tablespoons of bran, 2 tablespoons of sunflower seeds, 2 tablespoons of sesame seeds, 1/2 tsp salt, a piece of lard.

Preparation:
1) Submerge rye seeds and wheat seeds in water, in separate bowls and allow to stand for 48 hours. Soak the millet in water and let stand for 12 hours.
2) Put in a strainer and rinse. Drain. Soak the yeast in lukewarm water and sugar. Allow 15 minutes to rest. If using fresh yeast, mash it with a fork and stir. Pour over the bran 200 ml of lukewarm water and let stand for 10 minutes. Drain. Sunflower seeds and sesame fry a little in a frying pan. Allow it cool.
3) Rye and wheat seeds process in blender or food processor or on a meat machine (twice).
4) Mix the rye and wheat seeds. Add bran, sunflower seeds, sesame seeds and pumpkin seeds. Mix well. Add millet, yeast and salt. Knead with your hand, the mixture will be soft.

5) Turn the oven on to 220 C. Grease the bread baking pan with lard and put half of the mixture and cover with a wet cloth. Pour the other half into the second pan greased with lard and cover with a wet cloth. While the oven is heating, allow the mixture to grow. When the oven is heated, place it to bake. When the bread is baked (check by sticking the toothpick in the center, if there is no dough on it, the bread is baked) remove from the pan and wrap in a clean kitchen cloth and allow to cool.

Pohovana pileca prsa (Fried chicken breasts)

Sastojci: 450g pilecih grudi (fileti), 250ml mleka, 1 kasika belog sirceta ili 1 kasika jogurta, 250g brasna, prstohvat soli, 2-3 jaja, 250g prezli sa zacinima, 4 kasike svezeg ruzmarina seckanog, 60g semenki suncokreta, ulje.

Priprema:
1) Mleko pomesati sa sircetom ili mleko sa jogurtom. Stavite pileca prsa u ovu mesavinu 30 minuta.
2) U ciniji, pomesajte brasno i so. U ciniji umutite jaja. U drugoj ciniji pomesajte prezle, ruzmarin i semenke suncokreta.
3) Zagrijte ulje u tiganju na srednje visokoj temperaturi (5). Izvadite piletinu iz smese mleka i osusite papirnim ubrusom. Stavite piletinu u brasno, zatim u jaja, pa u mesavinu prezli.

4) Svaku sniclu przite 3 do 5 minuta sa svake strane. Ostavite na papirnatom ubrusu da apsorbira visak ulja.

Ingredients: 450g chcicken breasts (fillets), 250ml milk, 1 tablespoon white vinegar or 1 tablespoon buttermilk, 250g flour, pinch of salt, 2-3 eggs, 250g breadcrumbs with spices, 4 tablespoons fresh rosemary chopped, 60g sunflower seeds, oil.

Preparation:
1) Mix milk with vinegar or milk with buttermilk. Place chicken breasts in this mixture for 30 minutes. 
2) In a bowl, combine flour and salt. In a bowl whisj eggs with a fork. In another bowl combine breadcrumbs, rosemary and sunflower seeds.
3) Heat oil in skillet over medium high heat (5). Remove chicken from milk mixture and dry with a paper towel. Place chicken in flour, then in eggs, breadcrumbs mixture.
4) Fry each chicken 3 to 5 minutes on each side. Leave on paper towel to absorb the excess oil.

Za jacanje imuniteta i kostiju (To strengthen immunity and bones)

Sastojci:  600g meda, 500g makedonskog tana, 100g lana, 100g suncokreta (sirovog), 100g badema (sirovog), 100g golice (sirove), 100g leblebija (sirove), sok od jednog limuna.

Priprema:
1) Staviti leblebije u serpu naliti vodom i ostaviti preko noci. a moze i 12 sati. Ocediti. Staviti u serpu, naliti novu vodu i ostaviti da prokljuca. Smanjiti na 2 i krckati 2 sata minuta. Ocediti ponovo.
2) Suncokret, bademe, golicu i leblebije samleti.

Slani krekeri sa susamom (Salty sesame crackers)

Sastojci: 500g brasna, 200g susama, 150g semenki suncokreta, 200ml ulja, 200ml vode, 10g praska za pecivo, 1/2 kasicice soli.

Priprema:
1) Pomesati brasno, prasak za pecivo, so, susam i semenke suncokreta.
2) Dodati vodu i ulje i zamesiti testo.
3) Ostaviti u frizider na pola sata.
4) Razviti na pola cm debljine pa casom ili modlom za kolace vaditi krekere.
5) Pleh pbloziti papirom za pecenje ili namazati margarinom i peci u prethodno zagrejanoj rerni na 220 C oko 15 minuta ili dok ne dobiju svetlo braon boju.


Ingredients: 500g flour, 200g sesame seeds, 150g sunflower seeds, 200ml oil, 200ml water, 10g baking powder, 1/2 teaspoon of salt.

Preparation:
1) Mix flour, baking powder, salt, sesame and sunflower seeds.
2) Add water and oil and make the dough.
3) Leave in the fridge for half an hour.
4) Develop in half a cm thick, then use a glass or a mold for cookies to remove the crackers.
5) Place a baking paper in baking pan or smear with margarine and bake in a preheated oven at 220 C for about 15 minutes or until it gets light brown color.

Slani krekeri sa belim vinom (Salty crackers with white wine)

Sastojci:  400-500g brasna, 150g susama, 150g suncokreta, 200ml belog vina, 200ml ulja, 10g praska za pecivo, so po ukusu.

Priprema:
1) Pomesati brasno, prasak za pecivo i so. Takodje pomesati susam i suncokret i dodati brasnu.
2) Dodati vino i ulje i zamestiti testo.
3) Razvuci na radnu povrsinu, vaditi krugove sa casom. Staviti na papir za pecenje i peci u prethodno zagrejanoj rerni oko 10 minuta na 200C.

Ingredients: 400-500g flour, 150g sesame seeds, 150g sunflower seeds, 200ml white wine, 200ml oil, 10g baking powder, salt to taste.

Preparation:
1) Mix flour, baking powder and salt. Also mix sesame seeds and sunflower seeds and add it to the flour mixture.
2) Add wine and oil and knead the dough.
3) Develop on the working surface, take out the circles with the glass. Place it on baking paper and bake in preheated oven for about 10 minutes at 200C.

Brze kocke od urmi (Quick dates squares)

Sastojci: 20 urmi (bez kostica), 150g sirovih semenki suncokreta, 150g sirovih badema, 150 g kokosa, 3-5 kasike kokosovog ulja (omeksao), prstohvat soli.

Priprema:
1. Pomesati urme, semenke suncokreta, bademe, kokos, 3 kasike kokosovog ulja i soli u blenderu (oko 2-3 minuta).
2. Dodajte vise kokosovog ulja, ako je blendanje tesko.
3. Rukama formirati kvadrat ili pravougaonik (debljine oko 1.5 cm) na papiru za pecenje.
4. Ostaviti u zamrzivac na 15 minuta da se stvrdne. Izvadite i isecite na kvadrate.

Ingredients: 20 dates (pit removed), 150g raw sunflower seeds, 150g raw almonds, 150g coconut flakes, 3-5 tbsp coconut oil (softened), dash of salt.

Preparation:
1. Combine dates, sunflower seeds, almonds, coconut flakes, 3 tbsp coconut oil and salt in blender (about 2-3 minutes). 
2. Add more coconut oil if blending is difficult.
3. Use hands to form batter into square or rectangular shape (about 1.5cm thick) on baking sheet.
4, Place in freezer for 15 minutes to harden. Remove and slice into squares.
