Lunch for hypothyroidism (with a soup).
Ingredients (for 2 portions): 120-160 g of drained tuna (1 can in water or olive oil), 8 to 12 lettuce leaves, 3 tablespoons of Greek yogurt, 1 teaspoon of mustard, 1 tablespoon of olive oil, 1 small cucumber (finely chopped), 1 tablespoon of onion or spring onion (finely chopped), juice of ¼ - ½ lemon, a pinch of pepper, optional: some parsley leaf or fresh dill (optional, for micronutrients).
Preparation:
0. Wash and dry the lettuce leaves.
1. Mix tuna, Greek yogurt, mustard, olive oil and lemon juice until you get a creamy mixture.
2. Add cucumber and onion or spring onion.
