Vanila sladoled osnovni recept (Vanilla ice cream basic recipe)

Sastojci: 500 ml punomasnog mleka, 250 ml slatke pavlake ili domace slatke mlecne pavlake, 4 žumanca, 120 g šećera, 1 stapic vanile (ili 1 kašičica ekstrakta vanile).

Priprema: 

1. U šerpi zagrej mleko i slatku pavlaku na srednjoj temperaturi (4) ali nemoj da provri. 

2. Ako koristiš stapic vanile, preseci je po dužini, sastruži seme i dodaj i seme i mahunu u mleko.

Dzem od bresaka sa stapicima vanile (Peach jam with vanilla sticks)

Sastojci: 3 kg bresaka (ociscenih), 2 kg secera, 3-4 stapica vanile, 500 ml vode.

Priprema:
1) Breskve oljustiti, izvaditi kostice I iseci na kocke. 
2) Secer staviti u serpu I preliti vodom. Kuvati oko 45 minuta ili dok se dobije gust sirup. 
3) Dodati breskve I kuvati jos 45 minuta, stalno mesajuci da ne zagori. 
4) Oprane tegle sterilisati I sipati vruc dzem. Povezati celofanom.

Ingredients: 3 kg of peaches (cleaned), 2 kg of sugar, 3-4 sticks of vanilla, 500 ml of water.

Preparation:
1) Peel peaches, remove pits and cut into cubes.
2) Put the sugar in a pot and pour over water. Cook for about 45 minutes or until thick syrup is obtained.
3) Add peaches and cook for another 45 minutes, stirring constantly to keep from burning.
4)  Wash jars and sterilize them and pour hot jam. Cover with cellophane.

Domaci vanila ekstrakt (Homemade vanilla extract)

Sastojci: 8 stapica vanile, 500ml vodke (ili ruma, ili rakije).

Priprema:
1. Zavisno od velicine tegle, preseci stapice vanile na pola ili na tri dela.
2. U teglu staviti stapice vanile i sipati vodku, vodeci racuna da su stapici vanile potpuno prekriveni vodkom. Staviti poklopac i dobro promuckati.
3. Ostaviti teglu na hladnom i mracnom mestu mesec dana; s vremena na vreme promuckati. Ako zelite jacu aromu ekstrakta ostavite jos mesec dana da stoji.
4. Nakon mesec (ili dva) dana procedite zrna vanile kroz filter od kafe, koje mozete nakon susenja da iskoristite za pravljenje domaceg vanilin secera.

Ingredients: 8 vanilla sticks, 500ml vodka (or rum, or brandy).

Preparation:
1. Depending on the size of the jar, cut the vanilla sticks in half or in three.
2. Put vanilla sticks in the jar and pour the vodka, taking care that the vanilla sticks are completely covered with vodka. Put on the lid and shake well.
3. Leave the jar in a cool, dark place for a month; shake from time to time. If you want a stronger extract aroma, leave it for another month.

4. After a month (or two), process the vanilla beans through a coffee filter which you can use after drying to make homemade vanilla sugar.

Domaci vanilin secer (Homemade vanilla sugar)

Sastojci: 1 - 300g secera (kristal), 2 stapica vanile.

Priprema:

Nacin 1

1. Stapice vanile, ostrim nozem preseci po duzini. Drskom od kasicice izvaditi semenke vanile. 
2. Staviti secer u seckalicu i dodati semenke vanile. Usitniti.
3. Cuvati vanilin secer u hermeticki zatvorenoj kutiji do 9 meseci.

Nacin 2 

1. Stapice vanile, ostrim nozem preseci po duzini. Drskom od kasicice izvaditi semenke vanile. 
2. U hermeticku kutiju sipati 50g secera. Dodati semenke od jednog stapica vanile. Sipati 100g secera i dodati semenke od drugog stapica vanile. Sipati 150g secera. 
3. Zatvoriti i ostaviti meseca dana pre upotrebe. 
4. Nakon upotrebe mozete dodavati jos semenki stapica vanile i secera, i ponoviti postupak..

Ingredients: 1 - 300g of sugar (granulated), 2 sticks of vanilla.

Preparation:

Method 1

1. With sharp knife cut vanilla sticks lengthwise. With the handle of a teaspoon remove vanilla seeds.
2. Place the sugar in a food processor and add the vanilla seeds. Process until blended..
3. Keep vanilla sugar in a hermetically sealed box to 9 months.

Method 2

1. With sharp knife cut vanilla sticks lengthwise. With the handle of a teaspoon remove vanilla seeds.
2. In the hermetic box pour 50g of sugar. Add seeds from one vanilla stick. Pour 100g of sugar and add the seeds of another vanilla stick. Pour 150g of sugar.
3. Close and leave one month before use.

4. After use, you can add more vanilla seeds and sugar, to repeat the process.

Kolac od anisa (Anise cake)


Sastojci: 370g margarina (putera), 300g secera u prahu, 430g glatkog brasna, 6 jaja, strugana korica jednog limuna, sipka vanile, 1 kasika anisa, secer u prahu (za posipanje).

Priprema:
1) Nozem po duzini preseci sipku vanile i izvaditi srz.
2) Margarin omeksati nad serpicom vruce vode, pa penasto umutiti sa secer u prahu. Dodati vanilu, koricu od limuna i jedno po jedno jaje, dok ne dobijete glatku masu.
3) Na kraju dodati brasno i anis. Pazljivo promesati.
4) Rernu zagrejati na 180 stepeni.
5) U dublji pleh, izduzenog oblika, staviti papir za pecenje (ako nemate, premazite margarinom), sipati masu i izravnati povrsinu. Peci oko 65 minuta
6) Kad se ispece, ostaviti da se ohladi u plehu, zatim izvaditi, skinuti papir i ostaviti da se potpuno ohladi.
7) Seci i posuti secerom u prahu.

Ingredients: 370g margarine (butter), 300g powdered sugar, 430g plain flour, 6 eggs, 1 lemon rind (grated), 1 stick of vanilla, 1 tablespoon anise, powdered sugar (for sprinkling).

Preparation:
1) Cut vanilla stick lengthwise with knife and remove the core.
2) Soften margarine over the pan of hot water, and whisk with powdered sugar until creamy. Add vanilla, lemon rind and the eggs, one at a time, until you get a smooth mass.
3) At the end, add the flour and anise. Stir carefully.
4) Preheat oven to 180 degrees.
5) In a deeper pan, elongated shape, place baking paper (if don't have it, grease with margarine), pour mass and realign the surface. Bake for about 65 minutes.
6) When baked, let it cool in the pan, then remove from pan. Remove baking paper and leave to cool completely.
7) Cut and sprinkle with powdered sugar.
