Vreme potapanja i kuvanja namirnica (Soaking and cooking time)

P znaci potop. Vreme potapanja namirnice. Nekad i kolicina vode u kojoj se potapa neka namirnica.

V znaci voda. Odnos vode prema namirnici, za kuvanje. 

Uglavnom mera je 1 casa - C - gde je casa od 250g, osim ako drugacije nije navedeno. Recimo 125g ili 6 kasika. Casa vode je 250ml. 

K znaci kuvati. Vreme kuvanja u minutima ili satima. Ponekad i kolicina vode u kojoj treba kuvati odredjenu namirnicu.

Sve se kuva po principu, prokljuca na visoku temperaturu (6), smanjiti temperaturu na srednju (4). Nekad poklopljeno, nekad ne. Nekad je potrebno doliti vode zavisno od temperature kuvanja i vrste namirnice. Takodje i mesanje je ili konstantno ili povremeno. Ja koristim vodu, a vi je mozete zameniti supom.

Paprika punjena mlevenim mesom i kuskusom (Bell pepper stuffed with minced meat and couscous)

Sastojci: 6 paprika babura, 300g mlevenog mesa, 50g kuskusa, 1 sargarepa, 1 manji krompir, vegeta, malo ulja, mlaka voda.

Prrprema:

1) Paprike oprati, ocititi od semena i oprati. Sargarepu oprati, oljustiti, oprati i iseci na kocke ili kolutove ili izrendati na krupno. Krompir oprati, oljustiti i iseci na kolutove.

2) U tiganju na malo ulja, na srednjoj temperaturi (4) proprziti sargarepu, oko 5 minuta. Dodati mleveno meso i prziti dok meso ne promeni boju. Pojacati na srednje visoku temperaturu (5). Dodati vegetu i malo vode i dinstati meso i sargarepu oko 20 minuta, povremeno mesajuci i dolivajuci vodu.

Punjene paprike (Stuffed peppers)


Sastojci: 6 paprika babura, 250g mlevenog mesa, 80g pirinca, 1 krompir, sargarepa, 2 cena belog luka, himalajska so, ulje.

Priprema:
1) Papriku oprati i ocistiti od semenki. Pirinac isprati u nekoliko voda i ocediti. Krompir oprati, oljustiti i iseci na krugove. Sargarepu oprati, oljustiti i iseci na kocke. Beli luk oljustiti i sitno iseckati.
2) U tiganju na malo ulja proprziti sargarepu, nekoliko minuta. Dodati beli luk i proprziti nekoliko minuta. dok ne pusti miris. Dodati mleveno meso i prziti desetak minuta na srednje niskoj temperaturi (4). Dodati so ili vegetu po ukusu.

Marokanski kuskus sa tikvicama (Moroccan couscous with zucchini)

Sastojci: 160g kuskusa + 330ml vode, 700g tikvica + maslinovo ulje, 60g oljustenih badema, 30g ribizli, 30g indijskog oraha, sok od jednog limuna, 1 cen belog luka, 1 kasika svezeg bosljka (sitno seckanog) ili 1 kasicica suvog bosiljka, 1 kasika svezeg persuna (sitno seckanog) ili 1 kasicica suvog persuna, 1 kasicica meda, 1 kasicica senfa.

Priprema:
1) Tikvice oprati, oljustiti i iseci na kolutove. Limun iseci na pola. Beli luk oljustiti i sitno iseckati.
2) U serpu staviti vodu i dodati prstohvat soli. Na srednjoj temperaturi pustiti da prokljuca. Skloniti sa sporeta. U drugu serpu staviti kuskus i preliti sa kljucalom vodom. Ostaviti dok kuskus ne upije tecnost oko 5 minuta. Promesati viljuskom. 
3) Tikvice poprskati maslinovim uljem i prziti u tiganju oko 3-4 minuta sa svake strane.
4) Za preliv - pomesati med, senf, sok od limuna i beli luk. Dodati 2 kasike maslinovog ulja i dobro sjediniti.
5) 1/3 tikvica iseci na kocke. Pomesati isecene tikvice sa prelivom. Dodati kuskus, badem, ribizle, indijski orah, bosiljak i persun. Promesati dobro. Dodati ostatak tikvica.

Ingredients: 160g couscous + 330ml water, 700g zucchini + olive oil, 60g of peeled almonds, 30g currants, 30g cashews, 1 lemon juice, 1 clove of garlic, 1 tsp fresh basil (finely chopped) or 1 tsp dried basil. 1 teaspoon of fresh parsley (finely chopped) or 1 teaspoon of dried parsley, 1 teaspoon of honey, 1 teaspoon of mustard.

Preparation:
1) Wash the zucchini, peel it and cut it into rings. Cut the lemon in half. Peel the garlic and finely chop.
2) Put water in a pot and add a pinch of salt. At medium temperature, let it boil. Remove from the stove. Put couscous in another pot and pour over boiling water. Leave until the couscous soaks up the liquid for about 5 minutes. Stir with a fork.
3) Sprinkle the zucchini with olive oil and fry in the pan for about 3-4 minutes on each side.
4) For dressing - mix honey, mustard, lemon juice and garlic. Add 2 tablespoons of olive oil and combine well.

5) Cut the 1/3 of zucchini into cubes. Mix the chopped zucchini with the dressing. Add couscous, almonds, currants, cashews, basil and parsley. Stir well. Add remaining zucchini.

Bobicasto voce (jagode, maline, borovnice, crvene i crne ribizle, kupine, brusnice, dud) - 


Boranija - mirodjija, majcina dusica, djumbir, bademi.

Kako skuvati kuskus (How to cook couscous)

Sastojci: 250g kuskusa, 375ml vode, 1/2 kasicice soli, 1 kasika ulja ili 1 kasika margarina.

Priprema:
1) U serpu, sipati vodu, dodati so i ulje ili margarin i ostaviti da prokljuca.
2) Dodati kuskus. Poklopiti i odmah skinuti sa sporeta.
3) Ostaviti poklopljeno 8-10 minuta.
4) Viljuskom razdvojiti zrna.

Ingredients: 250g couscous, 375ml water, 1/2 tsp salt, 1 tablespoon oil or 1 tablespoon of margarine.

Preparation:
1) In pot, pour water, add salt and oil or butter and allow to boil.
2) Add the couscous. Cover and immediately remove from the stove.
3) Leave covered for 8-10 minutes.

4) With fork to separate grains.

Severnoafricki kuskus sa povrcem (North African couscous with vegetables)

Sastojci: 250g kuskusa, 500g jagnjetine, 150g leblebija, 2 paprike babure, 3 repe, 3 tikvice, 3 sargarepe, 2 patlidzana, 200g bundeve, 1 glavica crnog luka, 2 cena belog luka, 2 kasike persuna (iseckanog), 1/2 veze korijandera, 1/2 kasicice aleve paprike, 1/2 kasicice bibera, 1/2 kasicica cimeta, 1/2 kasicice safrana, 1/2 kasicice kurkume, 1 kasicica soli, 70g margarina.

Priprema:
1) Leblebije oprati i potopiti u vodu. Ostaviti 12 h. Ocediti. 
2) Papriku, tikvice, sargarepe, patlidzan oprati, oljustiti i iseci na kocke. Repu, crni i beli luk, oljustiti i iseci na kocke. Bundevu oljustiti i ocistiti od semenki i iseci na kocke. Meso iseci na kocke.
3) U serpi, rastopiti 40g margrina. Dodati crni i beli luk, cimet, biber, safran, kurkumu i alevu papriku. Dodati jagnjetinu i prziti 5 minuta.
4) Dodati leblebije, posoliti i preliti vodom. Promesati i ostaviti da provri. Smanjiti temperaturu i ostaviti da se krcka oko 1 h, povremeno skidajuci penu. 
5) Dodati sargarepu i repu i kuvati jos 25 minuta. 
6) Dodati tikvice, bundevu, papriku, patlidzane, korijander i persun i kuvati jos 30 minuta. 
7) Kuskus preliti hladnom vodom i ocediti. Razdvojiti zrna i ostavite 20 minuta da nabubre. Staviti kuskus u korpicu za kuvanje na pari, i staviti iznad serpe u kojoj se kuva povrce. Kuvati 20 minuta povremeno mesajuci.
8) Pomesati kuskus i 30g putera i razdvojiti zrna.
9) Posluziti povrce sa mesom i kuskusom.

Predlog: ovo jelo mozete posluziti sa Severnoafrickim aromaticnim sosom

Ingredients: 250g couscous, 500g lamb, 150g chickpeas, 2 bell peppers, 3 turnips, 3 zucchini, 3 carrots, 2 eggplants, 200g pumpkin, 1 onion, 2 cloves of garlic, 2 tablespoons parsley (chopped), 1/2 bunch of coriander, 1/2 teaspoon cayenne pepper, 1/2 teaspoon pepper, 1/2 teaspoon cinnamon, 1/2 teaspoon of saffron, 1/2 tsp turmeric, 1 teaspoon salt, 70g of margarine.

Preparation:
1) Wash chickpeas and soak it in water. Leave for 12 h. Drain.
2) Wash and peel zucchini, carrots, eggplants and cut into cubes. Peel beets, onions and garlic and cut into cubes. Pumpkin and peppers peel and clean of seeds and cut into cubes. The meat cut into cubes.
3) In the pot, melt 40g margrina. Add onion, garlic, cinnamon, pepper, saffron, turmeric and cayenne pepper. Add the lamb and fry for 5 minutes.
4) Add the chickpeas, season with salt and cover with water. Stir and allow to boil. Reduce heat and simmer for about 1 hour, occasionally removing the foam.
5) Add the carrots and turnips and cook another 25 minutes.
6) Add the zucchini, pumpkin, peppers, eggplants, coriander and parsley and cook for another 30 minutes.
7) Pour cold water over couscous and drain. Separate grains and leave for 20 minutes to swell. Place the couscous in a basket steamer, and place over the pot in which vegetables are cooking. Cook 20 minutes, stirring occasionally.
8) Mix the couscous and 30g butter and separate the grains.
9) Serve vegetables with meat and couscous.


Suggestion: this dish can be served with the North African aromatic sauce (Harissa sauce).
