Zatar zacin (Zaatar spice)

Sastojci: 1 kasika majčine dušice (suve, zdrobljene), 1 kasika kumina (mlevenog), 1 kasika korijandera (mlevenog), 1 kasika susama (preprženih), 1 kasika sumak zacina ili zamene za sumak zacin, 1/2 kasicice soli (sitne).

Priprema:

1. Pomesati sve sastojke zajedno u maloj posudi.

Lepinje punjene mlevenim mesom (Buns filled with minced meat)

Sastojci: 500g brašna, 10 g suvog kvasca ili 30g svežeg kvasca, 1 kašika šećera, 1/2 kašičice soli, 60ml ulja, 300ml vode, 500g mlevenog mesa, 1 glavica crnog luka (sitno iseckanog), 3 čena belog luka (sitno iseckanog), 3 kašike maslinovog ulja, 1 kašičica majčine dušice, 1/2 kašičice kima, 50 g oraha (iseckanih), 1 jaje, susam

Priprema:

1. U činiju stavite suvi ili svež kvasac, šećer i 1 kašiku brašna. Ostavite da naraste na toplom mestu 15 minuta.

2. Dodati ostatak brašna, so i ulje. Mesiti testo oko 8 minuta.

Curece pljeskavice sa zacinima (Turkey burgers with spices)

Sastojci: 600g mlevenog cureceg mesa, 120g spanaca, 60g ovsenih pahuljica, 2 belanceta, 2 stabljike celera, 1 zelena paprika babura, 3 cena belog luka, 1/2 glavice crnog luka, 3 kasike persuna seckanog, 1/2 kasicice kima u prahu, 1 kasicica majcine dusice, prstohvat kurkume i soli.

Priprema:
1) Crni i beli luk oljustite i sitno iseckajte. Papriku ocistite i sitno iseckajte. Celer sitno iseckajte. Spanac sitno iseckajte. Belanca penasto umutite.
2) Pomesati curece meso, belanca, ovsene pahuljice i zacine.
3) Dodati crni i beli luk, papriku, spanac i celer.
4) Formirajte pljeskavice. U pleh staviti papir za pecenje i poredjati pljeskavice.
5) Peci u prethodno zagrejanoj rerni na 200C 20 minuta pa smanjiti na 180C.

Ingredients: 600g turkey minced meat, 120g spinach, 60g oatmeal flakes , 2 egg whites, 2 celery stalks, 1 green bell pepper, 3 garlic cloves, 1/2 onion, 3 tablespoons chopped parsley, 1/2 tablespoon cumin powder, 1 tablespoon Breckland thyme. a pinch of turmeric and salt.

Preparation:
1) Peel and finely chop the onion and garlic. Clean pepper and finely chop. Finely chop the celery. Finely chop the spinach, whisk egg whites until foamy.
2) Mix turket meat, egg whites, oatmeal and spices.
3) Add the onion and garlic, pepper, spinach and celery.
4) Form burgers. Put baking paper in a baking pan and place the burgers.

5) Bake in a preheated oven at 200C for 20 minutes, then reduce to 180C.

Paradajz sa biljem (Tomatoes with herbs)

Sastojci: 6kg paradajza, 4 glavice belog luka, 8 lista lovora, 4 kasike suve majcine dusice, 4 grancice ruzmarina, 800 ml maslinovog ulja, 5g konzevansa, 30 g soli. 

Priprema:
1) Paradajz oljustiti i sitno iseckati. Beli luk oljustiti I sitno iseckati. 
2) U dublju serpu na ulju proprziti paradajz, na umerenoj temperaturi uz povremeno mesanje. Dodati beli luk, list lovora, majcinu dusicu I ruzmarin I kuvati dok voda ne ispari a paradajz se zgusne. 
3) Tada dodati konzervans, sipati u oprane, ciste, zagrejane I suve tegle ili flase. Umotati u cebe I ostaviti do sutra da se sasvim ohlade. Povezati celofanom. 

Ingredients: 6kg of tomatoes, 4 heads of garlic, 8 bay leaves, 4 tablespoons of dried thyme, 4 sticks of rosemary, 800 ml of olive oil, 5g of preservative, 30 g of salt.

Preparation:
1) Peel tomatoes and chop finely. Peel garlic and chop finely.
2) Fry the tomatoes in a deeper pot in oil, at a medium temperature with occasional stirring. Add the garlic, bay leaf, thyme and rosemary and cook until the water evaporates and the tomatoes thicken.
3) Then add the preservative, pour into washed, clean, heated and dry jars or bottles. Wrap in a blanket and leave to cool down until tomorrow. Bind with cellophane.

Kuvana boranija bez mesa (Cooked green beans without meat)


Sastojci: 250-300g boranije (sveze ili smrznute), 2 sargarepe, 2 korena persuna, 1 komad korena celera, 2 kasike persunovog lista (sitno seckanog), 1/4 kasicice mirodjije, 1/4 kasicice majcine dusice, prstohvat djumbira (u prahu), so ili vegeta ili 1/2 kocke za supu, 600ml vruce vode.

Priprema:

1. Sveza boranija - oprati i ocistiti. Smrznuta boranija - odmrznuti ili ne. Sargarepu, koren persuna i koren celera oljustiti i sitno iseckati.
2. U serpu staviti boraniju, naliti vodom (da prekrije boraniju) i pustiti da prokljuca.
3. Smanjiti na srednju temperaturu, dodati sargarepu, koren persuna i celera i kuvati do 1 sata. Za vreme kuvanja ako je potrebno doliti vrucu vodu.
4. 10 minuta pred kraj kuvanja dodati so ili vegetu po ukusu. Ja sam dodala samo pola kocke za supu. Dodati mirodjiju, majcinu dusicu i djumbir. Promesati.
5. 5 minuta pred kraj kuvanja dodati persunov list.

Ingredients: 250-300g green beans (fresh or frozen), 2 carrots, 2 parsley root, 1 piece of celery root, 2 tablespoons parsley leaf (finely chopped), 1/4 tsp dill, 1/4 teaspoon Breckland thyme, a pinch of ginger (powder), salt or vegetable seasoning or 1/2 bouillon cube, 600ml of hot water.

Preparation:

1. Fresh green beans - wash and clean. Frozen green beans - thawed or not. Carrots, parsley root and celery root peel and finely chop.



2. In pot, put the green beans, pour water (to cover the green beans) and let it boil.



3. Reduce to medium temperature, add carrots, parsley and celery root and cook for up to 1 hour. During the cooking if necessary add hot water.



4. 10 minutes before end of cooking add salt or vegetable seasoning to taste. I've added only half a bouillon cube. Add dill, Breckland thyme and ginger. Stir.

5. 5 minutes before end of cooking add the parsley.

Bilje i zacini za povrce (Herbs and spices to vegetables)

Boranija - majoran, beli luk, sok od limuna, balzamiko sirce, bademi.

Brokoli - origano, kim, mirodjija, sok od limuna.

Bundeva - djumbir, med.

Karfiol kim, mirodjija.

Keleraba - bosiljak, kackavalj, korijander, mirodjija, persun, pimen, ruzmarin, senf, kurkuma. 

Krompir (kuvani) - persunov list, mirodjija, ruzmarin, praziluk, beli luk.

Kupus (crveni, zeleni, kineski) - kim, mirodjija.

Paradajz - origano, majcina dusica, zalfija, praziluk.

Sargarepa - persunov list, mirodjija, menta, muskatni orah.


Green beans - marjoram, garlic, lemon juice, balsamic vinegar, almonds.

Broccoli - oregano, cumin, dill, lemon juice.

Pumpkin - ginger, honey.

Cauliflower - cumin, dill.

Kohlrabi -basil, yellow cheese, coriander, dill, parsley, allspice, rosemary, mustard, turmeric. 

Potatoes (boiled) - parsley leaf, dill, rosemary, leeks, garlic.

Cabbage (red, green, Chinese) - cumin, dill.

Tomato - oregano, thyme, sage, leek.

Carrot - parsley leaf, dill, mint, nutmeg.

Bilje i zacini za meso (Herbs and spices for meat)

Za pilece meso - aleva paprika, persunov list, majcina dusica, zalfija, mirodjija, korijander, ruzmarin, limun.

Za svinjsko meso - beli luk, crveni luk, zalfija, senf.

Za jagnjece meso - menta, kari, ruzmarin, beli luk. 

Za govedje meso - majcina dusica, zalfija, ruzmarin, majoran, beli luk, crveni luk, ren, balzamiko sirce.

Za ribu - majoran, mirodjija, korijander, lovorov list, kari, senf, limun.

For chicken meat - cayenne pepper, parsley, thyme, sage, dill, coriander, rosemary, lemon.

For pork meat - garlic, red onion, sage, mustard.

For lamb meat - mint, curry, rosemary, garlic.

For beef meat - thyme, sage, rosemary, marjoram, garlic, red onion, horseradish, balsamic vinegar.

For fish - marjoram, dill, coriander, bay leaf, curry, mustard, lemon.

Marinirani sampinjoni (Marinated mushrooms)

Sastojci: 1.5kg sampinjona, 3 L vode, 120ml sirceta, 2 kasicice soli, 2 kasicice secera, 2 lista lovora, bosiljak, majcina dusica, ruzmarin, origano.

Priprema:
1) Sampinjone oprati, iseci na zeljeni oblik (ili ako su manje ostaviti cele).
2) U serpu sipati vodu, dodati sirce, so, secer, lovorov list, majcinu dusicu, bosiljak, ruzmarin i origano i pustiti da prokljuca.
3) Dodati pecurke i kuvati 5 minuta. Izvaditi lovorov list. Procediti pecurke.
4) U tegle staviti pecurke i preliti marinadom, toliko da prekrije pecurke. Pokriti celofanom i zatvoriti poklopcem.

Napomena: ako je prekiselo smanjiti kolicinu sirceta.

Ingredients: 1.5kg mushrooms, 3 L of water, 120ml of vinegar, 2 teaspoons salt, 2 teaspoons sugar, 2 bay leaves, basil, thyme, rosemary and oregano.

Preparation:
1) Wash mushrooms and cut into desired shapes (or leave whole if they are small).
2) In pot pour water, add vinegar, salt, sugar, bay leaf, thyme, basil, rosemary and oregano and let it boil.
3) Add mushrooms and cook for 5 minutes. Remove the bay leaves. Drain mushrooms.
4) Put the mushrooms in a jar and pour the marinade, enough to cover the mushrooms. Cover with cellophane and close the lid.

Note: if it is too acidic, reduce the amount of vinegar.

Omlet sa aromaticnim biljem (Omelette with aromatic herbs)

Sastojci: 3 jaja, 125ml kisele pavlake, so po ukusu, 1 kasika majorana (sitno seckanog) ili 1 kasicica suvog, 1 kasika bosiljka (sitno seckanog) ili 1 kasicica suvog, 1 kasika majcine dusice (sitno seckanog) ili 1 kasicica suvog, 2 kasike persuna (sitno seckanog) ili 2 kasicice suvog, 20g margarina (putera), 40g parmezana.

Priprema:
1) Umutiti jaja sa kiselom pavlakom, posoliti po ukusu. Dodati majoran, bosiljak, timijan, persun i 30g parmezana. Dobro promesati.
2) Otopiti margarin na umerenoj temperaturi, sipati jaja i prziti nekoliko minuta sa obe strane.
3) Pre serviranja posuti sa preostalim parmezanom.

Ingredients: 3 eggs, 125ml sour cream, salt to taste, 1 tablespoon marjoram (finely chopped) or 1 teaspoon dried, 1 tablespoon basil (finely chopped) or 1 teaspoon dried, 1 tablespoon thyme (finely chopped) or 1 teaspoon dried, 2 tablespoon of parsley (finely chopped) or 2 teaspoons dried, 20g margarine (butter), 40g Parmesan.

Preparation:
1) Whisk eggs with sour cream, add salt to taste. Add marjoram, basil, thyme, parsley and 20g Parmesan cheese. Stir well.
2) Melt butter on medium heat, pour the eggs and fry a few minutes on both sides.
3) Before serving sprinkle with the remaining Parmesan.

Raznjici od povrca (Vegetable skewers)


Sastojci: 300g tofua, 2 crvene paprike, 2 zelene paprike, 2 tikvice, 2 patlidzana, 2 sargarepe, 2 paradajza, pecurke, 2 cesnja belog luka, 1 glavica crnog luka, 1/2 kasicice majcine dusice (suve), 1/2 kasicice origana, ulje, so.

Priprema:
1) Sitno iseckati crni i beli luk. Isprziti na ulju na laganoj vatri. Skloniti sa sporeta i dodati timijan, majcinu dusicu i origano. Ostaviti sa strane 25 minuta.
2) Tofu, crvenu i zelenu papriku, tikvice, patlidzan, sargarepu, paradajz iseckati na kockice, a pecurke na polovine.
3) Poredjati povrce redom koji zelite, premazati mesavinom luka i zacina, posoliti po ukusu i peci na grilu ili u tiganju.

Savet: uz raznjice od povrca mozete posluziti Sos od jogurta.

Ingredients: 300g of tofu, 2 red peppers, 2 green peppers, 2 zucchini, 2 eggplants, 2 carrots, 2 tomatoes, mushrooms, 2 cloves of garlic, 1 onion, 1/2 teaspoon of thyme (dried), 1/2 teaspoon of oregano, oil, salt.

Preparation:
1) Finely chop onion, garlic. Fry in oil over low heat. Remove from stove and add the thyme and oregano. Leave aside for 25 minutes.
2) Tofu, red and green peppers, zucchini, eggplants, carrots, tomatoes, cut into cubes, and mushrooms in half.
3) Put vegetables in the order you want, brush with mixture of onions and spices, salt to taste, and bake on the grill or in a pan.

Tip: you can serve veggie skewers with Buttermilk sauce.

Kuglice od jagnjetine (Lamb meatballs)


Sastojci: 2 zemicke, 1 cen belog luka, 500g jagnjeceg mlevenog mesa, 1 jaje, so, biber, 1 kasicica majcine dusice, 2 kasike istopljenog butera, cackalice, za sos - 350ml jogurta, 2 veze mladog luka, 300ml kecapa.

Priprema:
1) Pokvasiti zemicke da omeknu i dobro iscediti, beli i crni luk sitno iseckajte, pomesati sa zemickama, mlevenim mesom i jajetom. Zaciniti sa biberom, majcinom dusicom i soli po ukusu. Oblikovati loptice rukama i ispecite ih ulju. U svaku kuglicu staviti cackalicu.
2) Za sos - jogurt zacinite sa solju i biberom i podelite na 2 dela. U jedan deo staviti kecap, a drugi sitno iseckan mladi luk.

Ingredients: 2 bread rolls, 1 clove of garlic, 500g of minced lamb meat, 1 egg, salt, pepper, 1 teaspoon thyme, 2 tablespoons melted butter, toothpick, for the sauce - 350ml buttermilk, 2 green onions, 300ml ketchup.

Preparation:
1) Soak bread rolls to soften and drain well, finely chop garlic and onion, mix with bread rolls, minced meat and egg. Season with pepper, thyme and salt to taste. Shape balls by hands and bake in oil. In every ball put toothpick.
2) For the sauce - season buttermilk with salt and pepper and divide into 2 parts. In one part put ketchup, and in other finely chopped green onions.

Hlepcici sa slaninom (Mini breads with bacon)


Sastojci: 180g suncokret semenki, 3 glavice crnog luka, 60g slanine, 2 kasike susene majcine dusice, 10g kvasca, 350g psenicnog brasna sa dodacima krupno samlevenog i celog zrna, 2 kasicice soli, 2 kasicice kima (u prahu), 5 kasika ulja, 150g razanog brasna sa krupno samlevenim zrnom razi, 1 zumance.

Priprema: 
1) Isprziti 150g suncokret semenki u tiganju (bez dodavanja ulja). Luk oljustiti i sitno iseckati. Istopiti slaninu i na toj masti isprziti luk da dobije zlatno zutu boju. Dodati jednu kasicicu majcine dusice.
2) U 300ml vode rastopite kvasac, dodati psenicno brasno, so, kim i mesati oko 10 minuta. dodati ulje, brasno od razi, mutiti drvenom varjacom sve dok testo ne pocne da se odvaja ivica posude.
3) Suncokretove semenke, slaninu i luk dodajte testu i ostavite da nadodje oko 40 minuta. Zatim testo ponovo dobro premesite. Zagrejte rernu na 200 stepeni.
4) Formirati pljosnate oblike peciva, premazati zumancem i posuti ostatkom suncokret semenki i majcine dusice. Ostaviti da nadodje oko 20 minuta, a zatim peci u rerni 30 minuta.

Ingredients: 180g sunflower seeds, 3 onions, 60g bacon, 2 tablespoons dried thyme, 10g yeast, 350g wheat flour with coarse grind whole beans, 2 teaspoons salt, 2 teaspoons cumin (powder), 5 tablespoons of oil, 150g ray flour with coarse grain, 1 egg yolk.

Preparation:
1) Fry 150g of sunflower seeds in a pan (no oil). Peels onions and finely chop. Melt the bacon and fry the onion in that fat to get a golden yellow color. Add one teaspoon of thyme.
2) Dissolve yeast in 300 ml of water, add flour, salt, cumin and stir for about 10 minutes. Add oil, rye flour, stir with a wooden spoon until the dough starts to pull away from edges of the bowl.
3) Add sunflower seeds, bacon and onion to dough and let rise about 40 minutes. Then knead again well. Heat oven to 200 degrees.
4) Develop forms of flat bread, spread with egg yolk and sprinkle with sunflower seeds and thyme. Let it rise for about 20 minutes, then bake in oven for 30 minutes.

Pasulj s krompir pireom (Kidney beans with mashed potatoes)


Sastojci: 200g pasulja (moze iz konzerve), 3 kasike ulja, 1 koren celera, 3 sargarepe, 500g paradajza, 1 lovorov list, 1 kasicica majcine dusice, 2 kasike persunovog list (sitno seckan), so, biber, 400g propasiranog krompira.

Priprema: 
1) Pasulj preko noci potopiti u hladnu vodu. Sutra dan ga, u drugoj vodi, kuvati  oko 40 minuta - dok ne omeksa. Ocediti, a vodu sacuvati.
2) Sargarepu i celerov koren ocistiti i iseci na kocke; paradajz oljustiti i malo izgnjeciti viljuskom.
3) Zagrejati 1 kasiku ulja, dodati koren celera, sargarepu i skuvan pasulj. Promesati i dinstati 5 minuta. Zatim dodati paradajz, lovorov list, majcinu dusicu i persunov list. Naliti sa malo vode od pasulja, pa dinstati oko 20 minuta. Posoliti i pobiberiti po ukusu.
4) Staviti pasulj u uljem podmazani vatrostalni sud. Krompir pomesati sa 2 kasike ulja, posoliti ako je potrebno, i staviti preko pasulja. Zagrejati rernu na 180C i peci 15 do 20 minuta.

Ingredients: 200g kidney beans (can be canned), 3 tablespoons oil, 1 root of celery, 3 carrots, 500g tomatoes, 1 bay leaf, 1 teaspoon thyme, 2 tablespoons parsley leaf (finely chopped), salt, pepper, 400g mashed potatoes..

Preparation:
1) Soak beans in cold water overnight. Tomorrow put beans, in the second water, and cook about 40 minutes - until tender. Drain and save the water.
2) Clean and peel carrots and celery root  and cut into cubes, peel tomato and squeeze a little with fork.
3) Heat 1 tablespoon oil, add celery root, carrots and cooked beans. Stir and cook 5 minutes. Then add tomatoes, bay leaf, thyme and parsley. Pour a little water (from the beans) and cook about 20 minutes. Add salt and pepper to taste.
4) Put beans in oil greased suitable dish. Mix mashed potatoes with 2 tablespoons oil, add salt if needed, and put over beans. Preheat oven to 180C and bake 15 to 20 minutes.

Hleb od oraha sa zacinima (Walnut bread with spices)


Sastojci: 200g mlevenih oraha, 2 vece kriske crnog hleba (izmrvljenog), 1 glavica crnog luka, 3 cena belog luka (zgnjecenog), 2 kasike gustina, 2 kasike integralnog brasna, 1 vezica persunovog lista (sitno seckan), 1 kasicica majorana, 1 kasicica mlevenog kima, 1 kasicica bosiljka, 1 kasicica majcine dusice, ulje, so.

Priprema:
1) Crni luk ocistiti, iseckati i prodinstati na ulju. Dodati beli luk, majoran, kim, bosiljak, majcinu dusicu, pa dinstati minut-dva.
2) Orahe zamesiti sa gustinom, brasnom i hlebom, pa dodati dinstani luk i persun. Posoliti po ukusu.
3) Duguljasti pleh premazati uljem, dodati kasiku-dve vode, staviti u pleh i oblikovati, a zatim u zagrejanu rernu i peci na umerenoj temperaturi oko 50 minuta.

Ingredients: 200g ground walnuts, 2 larger slices of black bread (crumbled), 1 onion, 3 cloves of garlic (crushed), 2 tablespoons of corn starch, 2 tablespoons flour, 1 bunch parsley leaf (finely chopped), 1 teaspoon marjoram, 1 teaspoon ground cumin, 1 teaspoon basil 1 teaspoon thyme, oil, salt.

Preparation:
1) Clean and finely chop onion and saute in oil over medium heat. Add garlic, marjoram, cumin, basil, thyme, and saute a minute or two.
2) Knead wanuts, flour and bread, then add the stewed onions and parsley. Add salt to taste.
3) Long and narrow baking pan coat with oil, add one-two spoons of water, put shaped mass in pan, then bake in the preheated oven, on medium temperature about 50 minutes.
