Pita sa zacinjenim krem sirom i sunkom (Puff pastry pie with seasoned cream cheese and ham)

Sastojci: 300 g lisnatog testa *, 100 g zacinjenog krem sira*, 150 g sunke (ili neki drugi delikates), 100 g rendanog kackavalja (cedar sir, Monterej dzek, kolbi, Ementaler), za premaz - 1 jaje, 1 kasika mleka, za posipanje - susam ili 50 g kackavalja (rendanog).

Priprema:

1. * Napraviti lisnato testo 1 ili lisnato testo 2.

2. Razvaljati lisnato testo na debljinju oko 0.3 cm u pravougaonik.

Pileca pita puzici (Chicken phyllo pastry pie snails)

Sastojci: 500 g tankih kora za pitu, za fil - 550 g pilećeg mesa, ½ kasicice vegete, 400 g belog sira ili svapskog sira, za preliv - 400 ml jogurta, 250 ml kisela voda, 4 veca jaja, 250 ml ulja.

Priprema:

0. Piletinu iseci na kocke.

1. Piletinu stavite u šerpu i prelijte sa većom količinom vode, tako da bude potopljena. Dodajte vegetu. Kuvajte oko 20 do 30 minuta, odnosno dok ne bude kuvana. 

2. Kuvanu piletinu ocedite. Ostaviti da se ohladi.

Pita od kiselog mleka i pomorandzi (Sour milk and orange pie)

Sastojci: 500g tankih kora za pitu, 4 jaja, 20g vanilin secera, 10g praska za pecivo, 180g secera, 300g kiselog mleka, 200ml ulja, za sirup: 3 pomorandze, 200g secera, 350ml vode, 1/2 kasicice cimeta.

Priprema:

1. Kore izvadite iz kese, rasiriti ih i ostaviti da se suse nekoliko sati. Iscepkati kore. Narendati koru pomorandze a sok iscediti.

2. Umutiti jaja sa secerom dok ne postane penasto. Dodati koru pomorandze, kiselo mleko, vanilin secer i prasak za pecivo. Sve dobro sjediniti.

Pita od spanaca sa zacinima i tahinijem (Spinach pie with spices and tahini)

Sastojci: 500g kora za pitu, 100g oraha mlevenih, 100g oraha seckanih, 1 kg spanaca - sitno seckanog, tahini, 2 praziluka, 5 struka vlasca, 1 veza lista persuna (svezeg), 1 veza mirodjije (sveze), 2 kasike griza.

Priprema:

1. Praziluk oljustiti i iseci na kocke. Vlasac sitno iseckati. Tahini razmutiti u mlakoj vodi.

2. Pomesati spanac, praziluk, persun i mirodjiju. Dodati ostatak griza i sjediniti.

Domace kore 2 (Homemade phyllo dough 2)

Sastojci: 750g mekog brasna, 140 g secera, 380 ml mleka (mlakog), 15g suvog kvasca, 150g margarina (otopljenog), 1 vece jaje ili 2 manja, prstohvat soli, par kockica margarina.

Priprema:

1. U ciniji, pomesati mleko, kvasac, secer i 1 kasiku brasna. Promesati i ostaviti da nadodje.

2. U vanglu staviti brasno, so, jaje (jaja) i margarin. Dodati nadosao kvasac i zamesiti testo.

Gibanica 2 (Phyllo dough cheese pie 2)

Sastojci: 500g kora za pitu, 5 jaja, 250g belog sira ili mladog sira ili starog punomasnog sira ili feta sira,  200ml kisele pavlake, 100ml kisele vode, 10g praska za pecivo, ulje+voda.

Priprema:

1) U ciniju staviti prasak za pecivo, preko staviti jaja i ostaviti 15-20 minuta.

2) Sir izgnjeciti viljuskom. Jaja umutiti, dodati sir i promesati. Dodati kiselu pavlaku i kiselu vodu. Promesati.

Pita sa tikvicama i sirom (Phyllo dough pie with zucchini and cheese)

Sastojci: 3 jaja (sobne temperature), 350g sira (belog kravljeg ili fete, mladog sira ili starog sira), 500g kora za pitu, 3 manje tikvice, 10g praska za pecivo, 120ml ulja, 250ml jogurta, so.

Priprema:

1) Tikvice oprati, oljustiti i oprati. Izrendati na krupno. Posoliti i ostaviti pola sata da odstoji. Ocediti. Sir izgnjeciti viljuskom.
2) U ciniju sipati prasak za pecivo i preko njega razbiti jaja. Ostaviti 15 minuta.

Brza gibanica (Quick cheese pie)


Sastojci: 500g kora za pitu, 3 jaja (sobne temperature), 300g kiselog mleka ili kisele pavlake ili 300g belog sira, 10g praska za pecivo, 150ml jogurta, ulje i kisela voda, so, malo margarina.

Priprema:

1) U casu od 200ml, pomesati prst ulja (vodoravno) i prst kisele vode (vertikalno). Promesati.
2) U ciniju staviti prasak za pecivo i so. Odozgo razbiti jaja. Ostaviti pola sata.

Pita sa mesom (Meat pie)

Sastojci: kore za pitu, 2-3 glavice crnog luka, 800g mlevenog mesa, 3 jaja, 3 kasike svezeg persuna (sitno seckanog) ili 3 kasicice suvog persuna, ulje, so, biber.

Priprema:
1) Pripremiti kore za pitu, pa filovati sledecim nadevom.
2) Crni luk ocistiti i sitno iseckati. Odvojiti belanca od zumanaca. Umutiti belanca.
3) Na ulju proprziti crni luk, dok ne porumeni. Dodati mleveno meso i proprziti. Posoliti i pobiberiti po ukusu. Promesati i skloniti sa sporeta.
4) Dodati zumanca, persun i umucena belanca. Sve dobro izmesati.

Predlog: mozete napraviti Pijanu pitu.

Ingredients:
pie crust, 2-3 onions, 800g minced meat, 3 eggs, 3 tablespoons fresh parsley (finely chopped) or 3 teaspoons dried parsley, oil, salt, pepper.

Preparation:
1) Prepare crust pie, then fill with this filling.
2) Clean and finely chop onions. Separate the egg whites from egg yolks. Whisk the egg whites.
3) In oil, fry onions until golden. Add minced meat and fry. Add salt and pepper to taste. Stir and remove from stove.
4) Add egg yolks, parsley and egg whites. Combine all well.

Suggestion: you can make Drunk phyllo pastry pie.

Uskrsnja pita od pirinca (Easter rice pie)

Sastojci: 500g lisnatog testa 1, 300g pirinca, 600ml mleka, 200g secera, 100g suvog grozdja, 3 jaja, 20g cimeta, 20g vanilin secera.

Priprema:
1) Suvo grozdje potopiti u mlaku vodu i ostaviti da nabubri. Procediti.
2) Sipati secer u mleko, dodati pirinac i kuvati dok mleko ne ispari.
3) Dodati suvo grozdje, cimet, vanilin secer i dva umucena jajeta.
4) Lisnato testo podeliti na dva dela i razviti. Jednu polovinu staviti u pleh, staviti masu ravnomerno, staviti drugu polovinu testa. Premazati umucenim jajetom i peci na 200 C.

Ingredients: 500g puff pastr, 300g rice, 600ml milk, 200g sugar, 100g raisins, 3 eggs, 20g cinnamon, 20g vanilla sugar.

Preparation:
1) Soak raisins in warm water and leave to swell. Drain.
2) Put the sugar in the milk, add rice and cook until the milk evaporates.
3) Add raisins, cinnamon, vanilla sugar and two well beaten eggs.
4) Divide the puff pastry into two parts and develop. Put one half in baking pan, spread mass evenly, put the other half on top. Brush with well beaten egg and bake at 200 C.

Pita od jabuka bez jaja (Phyllo dough apple pie without eggs)

Sastojci: 500g kora za pitu ,10 jabuka (vecih), 600ml vode, 8 kasika secera, 1 kasicica cimeta, 100g suvog grozdja, 200g mlevenog keksa, ulje+voda.

Priprema:
1) Jabuke oljustiti i izrendati. Suvo grozdje potopiti u mlaku vodu i ostaviti da nabubri. Procediti. Secer pomesati sa cimetom. Pomesati prst ulja (horizontalno) i prst vode (vertikalno).
2) U serpu staviti jabuke, dodati vodu i kuvati 20 minuta uz povremeno mesanje. Jabuke procediti a sok sacuvati.
3) Staviti jednu koru, premazati mesavinom ulja i vode i posuti mesavinom secera i cimeta (2 kasike). Staviti drugu koru, premazati mesavinom ulja i vode i posuti mlevenim keksom (2-3 kasike). Staviti trecu koru, premazati jabukama (3 kasike). Posle jabuka staviti suvo grozdje (nece biti za sve kore).
4) Tepsiju podmazati margarinom. Prvu saviti u obliku puza i staviti na sredinu tepsije, a zatim redjati u krug.
Napomena: ako su ivice suve, premazati mesavinom ulja i vode.
5) Ponoviti korak 3) dok se ne utrosi sav materijal.
6) Pitu premazati mesavinom ulja i vode. Peci u zagrejanoj rerni na 200C.

Predlog 1: od 200g piskota ili nekog drugog obicnog keksa, soka od jabuka, 40g pudinga u prahu od vanile, 4 kasike secera (ravne) i slaga mozete napraviti kolac. Pomesati puding sa 2 kasike secera i 100ml soka od jabuka. U 400 ml soka jabuka staviti 2 kasike secera i zagrejati, dodati puding i kuvati oko 5 minuta uz stalno mesanje. Keks potapati u sok od jabuka i redjati na tacnu, preliti sa prohladjenim pudingom, staviti red keksa. Kad se ohladi premazati slagom.

Predlog 2: mozete napraviti i Kolac od jabuka.

Ingredients:
500g of phyllo dough sheets, 10 apples (large), 600ml water, 8 tablespoons of sugar, 1 teaspoon cinnamon, 100g raisins, 200g ground biscuits, oil + water.

Preparation:
1) Peel and grate the apples. Soak raisins in warm water and leave to swell. Drain. Combine sugar with cinnamon. Mix finger of oil (horizontal) and a finger of water (vertically).
2) I sauce pan put apples, add water and cook for 20 minutes with occasional stirring. Drain apples and preserve juice.
3) Place one phyllo dough sheet, brush with oil and water mixture and sprinkle with the sugar and cinnamon mixture (2 tablespoons). Put another sheet, brush with oil and water mixture and sprinkle with ground biscuits (2-3 tablespoons). Put third sheet, spread with apples (3 tablespoons). After apples put raisins (will not be for all sheets).
4) Grease baking pan with margarine. First fold in the form of snail and put in the middle of the baking pan, then line up in a circle.
Note: If the edges are dry, brush with oil and water mixture.
5) Repeat step 3) until all ingredients are gone.
6) Coat pie with oil and water mixture. Bake in preheated oven at 200C.

Suggestion 1: 200g of biscotti or other plain biscuits, apple juice, 40g powder vanilla, 4 tablespoons of sugar (flat) and whipped cream you  can make a cake. Mix pudding with 2 tablespoons of sugar and 100ml of apple juice. In 400 ml apple juice put 2 tablespoons of sugar and bring to stove, add the pudding and cook for about 5 minutes with constant stirring. Soak biscuits in apple juice and arrange on a platter, pour the cooled pudding, put layer of biscuits. When cooled top with whipped cream.

Suggestion 1: you can make Apple cake.

Pita sa bademom (Pie with almonds)

Pripremite testo kao za Kore za pitu, pa nadevajte ovim nadevom.

Sastojci: 6 jaja, 250g secera, 20g vanilin secera, 250g samlevenog badema, 250g suvog grozdja.

Priprema:
1) Odvojiti belanca od zumanaca. Potopiti suvo grozdje u toplu vodu i ostaviti da nabubri. Ocediti. Penasto umutiti belanca.
2) Penasto umutiti zumanca sa secerom i vanilin secerom. Dodati bademe. suvo grozdje i belanca. Dobro izmesati.
3) Nastaviti sa korakom 3) iz recepta Kore za pitu.

Prepare the dough as for Pie crust and stuff with this filling.

Ingredients: 6 eggs, 250g sugar, 20g vanilla sugar, 250g grinded almonds,  250g raisins.

Preparation:
1) Separate the egg whites from the egg yolka. Soak the raisins in warm water and leave to swell. Drain well. Whisk egg whites until fluffy and creamy.
2) Whisk egg yolks with sugar and vanilla sugar until foamy. Add almonds. raisins and egg whites. Mix well.
3) Continue with step 3) from the Pie crust recipe.

Savijaca sa sirom (Strudel with cheese)

Testo pripremiti kao za svaku Savijacu i nadevajte ovim nadevom.

Sastojci: 750g kravljeg sira, 3 jaja, 3 kasike kajmaka ili kisele pavlake, secera po ukusu, 20g vanilin secera, 100g suvog grozdja.

Priprema:
1) Odvojiti belanca od zumanaca. Potopiti suvo grozdje u toplu vodu i ostaviti da nabubri. Ocediti. Penasto umutiti belanca.
2) Pomesati sir i zumanca. Dodati kajmak (kiselu pavlaku), secera po ukusu, vanilin secer, suvo grozdje i belanca. Dobro promesati.
3) Savijace premazati margarinom i peci u zagrejanoj rerni na 200 stepeni oko 35-45 minuta.

Prepare the dough as for each Homemade phyllo dough and stuff with this filling.

Ingredients: 750g white cheese, 3 eggs, 3 tablespoons kaymak or sour cream, sugar to taste, 20g vanilla sugar, 100g raisins.

Preparation:
1) Separate the egg whites from the egg yolks. Soak the raisins in warm water and leave to swell. Drain. Whisk egg whites until fluffy and creamy.
2) Combine cheese and egg yolks. Add quick cheese spread (sour cream), sugar to taste, vanilla sugar, raisins and egg whites. Mix well.
3) Brush strudels with margarine and bake in preheated oven at 200 degrees about 35-45 minutes.

Pita od bundeve (Pumpkin Pie)




Sastojci: 1 kg kora za pitu, 1 kg bundeve, 400g secera, 350g mlevenih oraha, 20g vanilin secera, 150g prezli, 2 kasicice cimeta (opciono), 50ml ulja + jos za premazivanje kora.

Priprema:
1) Bundevu oljustiti i izrendati.
2) U serpu staviti malo ulja dodati bundevu i 250g secera i kratko proprziti, uz stalno mesanje. Na kraju dodati cimet.
3) Pomesati 150g secera, vanilin secer i prezle.
4) Odvojiti tri kore. Prvu koru premazati uljem, posuti mesavinom secera i prezli, staviti drugu koru, premazati uljem, posuti mlevenim orasima, staviti trecu koru, rasporediti bundevu. Uviti u rolnu. Postupak ponovite dok ne utrosite sav materijal.
5) Pleh podmazati uljem, poredjati rolne od bundeve, premazati uljem i peci na 200 stepeni oko 30 minuta.

Ingredients: 1 kg phyllo dough sheets, 1 kg pumpkin, 400g sugar, 350g ground walnuts, 20g vanilla sugar, 150g of bread crumbs, 2 teaspoon cinnamon (optional), 50ml oil + for brusing phyllo dough sheets.

Preparation:
1) Peel and grate the pumpkin.
2) In saucepan, put oil and add the pumpkin, 250g of sugar and fry shortly, with constant stirring. At the and add the cinnamon.
3) Combine 150g sugar, vanilla sugar and breadcrumbs.
4) Take three phyllo dough sheets. First sheets, coat with oil, sprinkle with a mixture of sugar and bread crumbs, put another sheet, brush with oil, sprinkle with minced walnuts, place third sheet, spread the pumpkin. Wrap in a roll. Repeat until all the material is spent.
5) Baking pan grease with oil, put pumpkin rolls, brush with oil and bake at 200 degrees for about 30 minutes.

Pica pita (Pizza pie)

Sastojci: 300g kackavalja, 300g sunke, 300ml kisele pavlake, 2 jaja, kecap, kore za pitu (8 listova), kisela voda, ulje.

Priprema:
1) U podmazan pleh staviti dve kore, namazati kecap, kora, poredjati sunku, kora, namazati pavlaku, kora, poredjati kackavalj, kora, premazati umucenim jajima, staviti dve kore.
2) Iseci na kocke i preliti mesavinom kisele vode i ulja (u solji, prst ulja i resto voda). Ostaviti da odstoji pola sata pa peci na umerenoj temperaturi.

Ingredients: 300g of yellow cheese, 300g ham, 300ml sour cream, 2 eggs, ketchup, phyllo dough sheets (8 sheets), sparkling water, oil.

Preparation:
1) In a greased baking pan put two sheets, spread ketchup, sheet, arrange the ham, sheet, spread sour cream, sheet, arrange the cheese, sheet, brush with beaten eggs, put the two sheets on top.
2) Cut into cubes and pour with mixture of sparkling water and oil (in a cup, finger of oil and remaining water). Allow to stand for half an hour and bake at medium heat.

Domace kore (Homemade phyllo dough)


Na ovaj nacin dobiju se cetiri tepsije kruzne pite (savijace). Svaka moze biti filovana razlicitim nadevima.

Sastojci: 1,5 kg brasna, 10g suvog kvasca, 700ml mlake vode, 500g margarina, 50ml ulja, na vrh noza so.

Priprema:
1) Pomesati brasno i kvasac, dodati so, pa sa vodom zamesiti testo.
2) Testo podeliti na 4 lopte. Svaku loptu podeliti na 8 delova.
3) Margarin umutiti sa uljem. Podeliti na 4 dela.
4) Svaki deo razviti oklagijom, pa ih poslagati jednu na drugu - svaku premazati mesavinom margarina i ulja. Poslednju koru ne mazati odozgo. Ostaviti na sto - da odstoji, dok se priprema druga kora.
5) Za drugu ponoviti isti postupak.
6) Zatim prvu koru razvuci preko celog stola, na nju staviti nadev, pa je urolati u dugacki rolat (duzine kuhinjskog stola).
7) Staviti je u podmazan pleh - ali tako da bude uvijena u krug. Isto uraditi i sa preostale 3 kore.
8) Peci na temperaturi od 200C, oko 35-45 minuta.

Predlog: mozete napraviti Domace kore 2.

Ingredients: 1.5 kg flour, 10 g of dry yeast, 700ml lukewarm water, 500g margarine, 50ml oil, salt on the top of knife.

Preparation:
1) Mix flour and yeast, add salt, and knead the dough with water.
2) Divide the dough into 4 balls. Divide each ball into 8 parts.
3) Whisk the oil and margarine. Divide into 4 parts.
4) Each part develop with a rolling pin, and put them one onto another - each coated with mixture of margarine and oil. Don't coat last crust from top. Leave on the table - to stand while preparing second crust.
5) For the second crust repeat the same procedure.
6) After that, develop with a rolling pin first crust, stretch across the entire table, put the filling on it and roll it into a long roll (length of the kitchen table).
7) Put in greased baking pan - twisted into a circle. Do same thing with the remaining 3 crusts.
8) Bake at a temperature of 200C, about 35-45 minutes.

Suggestion: you can make Phyllo dough 2.

Pita sa zelenim nadevom (Pie with green filling)


Sastojci: 1/2kg kora, 1kg spanaca (ili blitve), 2 vezice praziluka, so, ulje.

Priprema:
1) Praziluk ocistiti i sitno iseckati, pa dinstati na ulju.
2) Spanac (ili blitvu) ocistiti, iseckati na rezance, pa umesati u luk. Ne prziti dugo - tek toliko da spanac omeksa.
3) Posoliti. ako pusti mnogo vode (posebno ako se sprema sa blitvom), ocediti.
4) Filovati kore i uviti pitu.
5) Peci oko 30 minuta na 200°C.

Ingredients: 1/2kg phyllo dough, 1kg spinach (or swiss chard), 2 bunches leeks, salt and oil.

Preparation:
1) Clean and finely chop leeks, and saute in oil.
2) Clean spinach (or swiss chard), cut into strips, then stir in leeks. Do not fry long - just enough to soften spinach.
3) Add salt. If spinach drop a lot of water (especially if you're making with swiss chard) - drain.
4) Spread filling on phyllo dough sheets and roll in
5) Bake for about 30 minutes at 200°C.

Pita s nadevom od ribe (Pie filled with fish)


Sastojci: 1/2kg kora, 1kg bele ribe bez kostiju, 2 vezice praziluka, 1 sargarepa, so, biber, ulje.

Priprema:
1) Praziluk ocistiti i sitno iseckati. Sargarepu izrendati (na sitnije rende), pa zajedno dinstati na ulju.
2)Ribu ocistiti i samleti (na masini za meso), dodati sargarepi i praziluku i prziti. Zaciniti po ukusu i filovati kore.
3) Peci oko 30 minuta na 200°C.

Ingredients: 1/2kg phyllo dough, 1kg boneless white fish, 2 bunches leeks, 1 carrot, salt, pepper, oil.

Preparation:
1) Clean and finely chop leeks. Grate the carrot (the finer grater), and fry together in oil.
2) Clean the fish and ground it on machine for the meat, add to the carrots and leeks and fry. Season with salt and pepper to taste. Spread filling on phyllo dough sheets and roll in.
3) Bake for about 30 minutes at 200°C.

Pita od praziluka (Leek pie rolls)


Sastojci: 1/2 kg kora za pitu, 1kg praziluka, 1 solja pirinca, ulje, kisela voda, so, biber.

Priprema:
1) Pirinac oprati i skuvati, a zatim ocediti.
2) Praziluk ocistiti i iseci na kolutove. Izdinstati na ulju, pa dodati pirinac. Zaciniti po ukusu. Prohladiti.
3) Filovati kore i urolati na vec opisan nacin.
4) Peci oko 30 minuta na 200C.

Ingredients: 1/2 kg of phyllo dough, 1 kg of leeks, 1 cup rice, oil, mineral water, salt, pepper.

Preparation:
1) Wash rice and cook, then drain.
2) Clean leek and cut into rings. Stew in the oil, then add rice. Season to taste. Chill.
3) Spread filling on phyllo dough sheets and roll in the way already described.
4) Bake for about 30 minutes at 200C.

Kako zaviti pitu (How to wrap pie)

Za pravljenje pita mogu se koristiti kupovne tanke kore, a mogu se i pripremati kod kuce. Ako pravite savijace, najbolje je da za jednu rolnu (savijacu) koristite 3 kore:
- staviti prvu koru, poprskati je smesom ulja i kisele vode, staviti drugu koru, preko nje rasporediti fil, a preko fila staviti trecu koru, prethodno iscepkanu, i ravnomerno postaviti po celoj povrsini.
- zatim savijacu saviti u rolnu, staviti u pleh podmazam uljem i poprskati smesom ulja i kisele vode.
Napomena: na casu od 200ml staviti prst (vodoravno :) ) ulja a ostalo staviti kiselu vodu.
