Sastojci: 400ml kokosovog mleka, 60g secera, 20g vanilin secera, 1 kasicica vanila ekstrakta, 6 žumanaca, 30g gustina, 10g želatina + 5 kasika hladne vode, 300ml slatke pavlake
Priprema:
1. Penasto umutiti zumanca sa šećerom, vanilin secerom dok ne pobele.
2. Dodati vanila ekstrakt i promesati.
3. Postepeno dodavati gustin i mutiti da se sve sjedinii.
4. Staviti želatin u vodu da se otopi.
5. Kokosovo mleko staviti da se zagreva na umerenoj temperaturi (4). Kad se pojave mehurići izvaditi 5 kasika mleka i dodati ih žumacima. Promesati.
6. Ovu smesu dodati u preostalo mleko. Dodati želatin i na srednje niskoj temperaturi (3) i nastaviti sa mešanjem dok se ne zgusne.
7. Staviti sud u veći sud sa hladnom vodom i mešati da se ohladi.
8. Umutiti slatku pavlaku i pomalo dodavati ohlađenom kremu. Mutiti mikserom minut dva.
Ingredients: 400 ml of coconut milk, 60 g of sugar, 20 g of vanilla sugar, 1 teaspoon of vanilla extract, 6 egg yolks, 30 g of cornstarch, 10 g of gelatin + 5 tablespoons of cold water, 300 ml of heavy cream
Preparation:
1. Whip egg yolks with sugar, vanilla sugar until they turn white.
2. Add vanilla extract and stir.
3. Gradually add the cornstarch and stir until everything is combined.
4. Put gelatin in water to dissolve.
5. Heat the coconut milk at a moderate temperature (4). When bubbles appear, remove 5 tablespoons of milk and add them to the egg yolks. Stir.
6. Add this mixture to the remaining milk. Add gelatin and on medium-low temperature (3) and cook stirring until it thickens.
7. Place the bowl in a larger bowl with cold water and stir to cool.
8. Whip the heavy cream and add it little by little to the cooled cream. Beat with a mixer for minute or two.
