Paradajz supa (Tomato soup)

Sastojci: 800 g paradajza (svežeg ili iz konzerve), 500 ml vode ili povrtnog bujona, 1 kašičica šećera (opciono, da ublaži kiselost),  1 kašika maslinovog ulja, 1 manji crni luk (sitno seckan), 2 čena belog luka (sitno seckana), prstohvat soli i bibera, bosiljak (6–8 svežih listova ili ½ kašičice suvog), origano (1 kašičica svežeg ili ¼–½ kašičice suvog), ili kombinacija: ¼ kašičice suvog bosiljka + ¼ kašičice suvog origana.

Priprema:

1. U loncu zagrej maslinovo ulje na srednjoj temperaturi (4).

2. Dodaj crni luk i prži 3–4 minuta dok ne postane staklast.

3. Dodaj beli luk i kratko proprži (1 minut).

4. Dodaj paradajz i suve začine (ako koristiš) i promešaj.

5. Dodaj vodu ili bujon, so, biber i po želji šećer.

6. Kuvaj 15–20 minuta.

7. Pred sam kraj kuvanja, 30-60 sekundi pre kraja dodaj sveže začine.

Paradajz supa se može poslužiti uz:

1. Domaći hleb ili tost

2. Krutone ili prepečen hleb sa maslinovim uljem

3. Grilovani sendvič sa sirom

4. Lisnato testo pecivo ili pogačice

5. Pirinač ili sitnu testeninu (slova, zvezdice)

6. Kašiku kisele pavlake (12 ili 20% m.m., dodati u tanjir) ili pavlaka za kuvanje 10-20%  (dodati u tanjir) ili grčkog jogurta

7. Rendani svez parmezan ili kačkavalj maloj količini (mladi kravlji kačkavalj, gauda, trapist, ementaler).

8. Svež bosiljak ili peršun za posipanje


Ingredients: 800 g of tomatoes (fresh or canned), 500 ml of water or vegetable broth, 1 teaspoon of sugar (optional, to soften the acidity), 1 tablespoon of olive oil, 1 small onion (finely chopped), 2 cloves of garlic (finely chopped), a pinch of salt and pepper, basil (6–8 fresh leaves or ½ teaspoon of dry), oregano (1 teaspoon of fresh or ¼–½ teaspoon dry), or a combination: ¼ teaspoon dry basil + ¼ teaspoon dry oregano.

Preparation:

1. Heat the olive oil in a pot at a medium temperature (4).

2. Add the onion and fry for 3-4 minutes until it becomes glassy.

3. Add garlic and fry briefly (1 minute).

4. Add tomatoes and dry spices (if using) and stir.

5. Add water or broth, salt, pepper and, if desired, sugar.

6. Cook for 15–20 minutes.

7. Near the end of cooking, 30-60 seconds before the end, add fresh spices.

Tomato soup can be served with:

1. Homemade bread or toast

2. Croutons or toasted bread with olive oil

3. Grilled sandwich with cheese

4. Puff pastry rolls or scones

5. Rice or small pasta (letters, stars)

6. A spoonful of sour cream (12 or 20% fat, add to the plate) or cooking cream 10-20% (add to the plate) or Greek yogurt

7. Grated fresh Parmesan or a small amount of cheese (young cow's cheese, Gouda, Trappist, Emmentaler).

8. Fresh basil or parsley for sprinkling
