Sastojci: 6 jaja (lagano umućenih), 2 šake mladog spanaća (grubo iseckanog), 80 g šargarepe (sitno seckane), 4-5 maslina (bez koštica, sitno iseckanih), 140 g paradajza (bez semenki i soka, samo kora), 120 g svapskog-sitnog sira, 110 g bademovog brašna, ½ kašičice praška za pecivo, 130 g rendane mocarele + još za posipanje, 20 g rendanog parmezana, 2 kašičice maslinovog ulja, ½ malog crnog luka (iseckanog na kockice), 1 čenje belog luka (mlevenog).
Priprema:
1. Zagrejte maslinovo ulje u velikom tiganju na srednjoj vatri (4). Dodajte crni luk i dinstajte 2 minuta.
2. Dodajte spanać i beli luk i dinstajte dok ne omekšaju - 1 minut. Sklonite sa šporeta, prebacite na tanjir obložen papirnim ubrusom i ostavite sa strane.
3. U činiji pomešajte jaja, smesu od spanaća, šargarepu, masline, mladi sir i mešajte dok se ne sjedini.
4. Zatim dodajte bademovo brašno, kokosovo brašno, prašak za pecivo, mocarelu, parmezan i mešajte dok se ne sjedini.
5. Obložite veliki pleh papirom za pečenje.
5b. Koristite veliku kašiku i prebacite oko ¼ šolje (65 g) u pleh. Lagano pritisnite i pospite još malo mocarele. 6. Zagrejte rernu na 190°C (375°F) i pecite 22-25 minuta ili dok ne porumeni na vrhu.
7. Cuvajte u hermetički zatvorenoj posudi u frižideru.
Ingredients: 6 eggs (lightly beaten), 2 handfuls baby spinach (roughly chopped), 80 g carrots, 4-5 olives (pitted, finely chopped), 140 g tomato (without seeds and juices), 120 g cottage cheese, 110 g almond flour, ½ tsp baking powder, 130 g shredded mozzarella & more for topping, 20 g shredded parmesan, 2 tsp olive oil, ½ small onion (diced), 1 clove of garlic (minced).
Preparation:
1. Heat the olive oil in a large skillet over medium heat (4). Add in the onion and sauté for 2 minutes.
2. Add in the spinach and garlic and sauté until just wilted – 1 minute. Remove from the stove, transfer to a paper towel lined plate and set aside.
3. In a bowl, mix the eggs, spinach mixture, carrots, olives, cottage cheese and stir until incorporated.
4. Next add almond flour, coconut flour, baking powder, mozzarella, parmesan and mix until combined.
5. Line a large baking pan with baking paper.
5b. Use a large scooper and transfer about ¼ cup (65 g ) to the baking pan. Gently press down and top with a little more mozzarella.
6. Preheat the oven to 190 C (375 F) and bake for 22-25 minutes or until golden brown on top.
7. Store leftovers in an airtight container in the fridge.
